BANANA WALNUT BREAD WITH OLIVE OIL



Banana Walnut Bread with Olive Oil image

Delicious, super moist Banana Walnut Bread made with olive oil and naturally sweetened with honey and dates! Be sure to read through the tips and watch the video tutorial just above this recipe.

1/3 cup Private Reserve Greek extra virgin olive oil
1/2 cup quality honey, organic if possible
2 eggs
3 extra ripe bananas, mashed
2 tbsp fat free plain yogurt
1/4 cup fat free or low-fat milk
1 tsp baking soda
1 tsp vanilla extract
1/2 to 3/4 tsp ground cardamom (if you're not sure you'll like it, start with the smaller amount)
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 1/3 cup all-purpose flour (wheat flour if you prefer)
6 dates, pitted and chopped (about 1/2 cup chopped dates)
1/3 cup chopped walnut hearts

Steps:

  • Preheat the oven to 325 degrees F.
  • In a large mixing bowl, whisk the olive oil and honey. Now add the eggs and whisk again to combine.
  • Now add the bananas yogurt, milk, baking soda, vanilla extract, cardamom, cinnamon, and nutmeg. Whisk again.
  • Using a spatula, stir in the flour; then add the dates and walnuts and stir the batter again until everything is well combined.
  • Lightly oil a non-stick a 9 x 5 loaf pan like this one. Pour the batter into the loaf pan and shake very gently so it evens out.
  • Bake in the 325 degrees F heated-oven. After 50 minutes or so, test by inserting a toothpick in a few places. If only a couple moist crumbs cling to it, remove it from the oven. If it needs a little more time, give it 5 more minutes or so.
  • Remove from the oven and let the bread cool for 10 minutes, then transfer to cool on a wire rack for another 20 minutes or so. Slice and enjoy!

1 egg
¾ cup mashed bananas
½ cup Mazola® Corn Oil
½ teaspoon Spice Islands® Pure Vanilla Extract
½ cup chopped walnuts
1 As needed Mazola® Pure No-Stick Canola or Butter Flavored Cooking Spray

Steps:

  • Preheat oven to 350 degrees F. Combine flour, sugar, baking powder and salt in a medium mixing bowl. Whisk together egg, bananas, oil and vanilla. Add to flour mixture and stir until flour is moistened. Fold in walnuts. Spray 8-1/2 x 4-1/2 loaf pan with cooking spray. Pour batter into prepared loaf pan.
  • Bake for 35 to 40 minutes or until puffed and golden brown. A wooden pick inserted in the center should come out clean. Transfer loaf pan to a rack to cool for 10 minutes before turning out of pan. Serve warm or store in an air-tight container.

1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces

Steps:

  • Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
  • With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.

1 cup sugar
2 large eggs
1 cup mashed ripe bananas (2 to 3 medium)
1 tablespoon 2% milk
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and milk. Combine the flour, baking soda and salt; gradually add to creamed mixture just until moistened. Fold in nuts., Pour into a greased 9x5-in. loaf pan. 1-1/2 cups sugar
1 teaspoon baking soda

1/4 cup plus 1 tablespoon buttermilk
1 teaspoon vanilla extract

I clipped this from a magazine several years ago. It was from an article featuring award-winning recipes. This bread was a Kansas State Fair winner twice.

Number Of Ingredients 10

2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups sugar
1/2 cup firmly packed vegetable shortening
1 teaspoon vanilla
2 eggs, slighly beaten
2 large very ripe bananas, peeled and mashed (about 3/4 pounds)
1/4 cup buttermilk
1/2 cup chopped walnuts or 1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 9"x5"x3" loaf pan with cooking spray.
  • Sift together flour, baking soda and salt onto waxed paper.
  • Beat together sugar, shortening and vanilla at moderate mixer speed for about 5 minuts until light and fluffy.
  • With mixer running, beat in eggs, then bananas.
  • By hand, stir in flour mixture alternately with buttermilk, mixing after each addition only enough to moisten dry ingredients. (Add ry ingrredients in thirds, buttermilk in two additions).
  • Stir in walnuts or pecans.
  • Spoon batter into prepared pan, spreading well to corners.
  • Bake for 60 to 65 minutes or until loaf is richly browned, begins to pull away from sides of pan and is springy to the touch.
  • Cool bread in pan on wire rack 10 minutes. Loosen loaf around edge with small thin metal spatula. Invert; turn right side up.
  • Cool completely.
