MEATLOAF TEXAS STYLE!

A flavorful meatloaf that combines Rotel and cheese all rolled into a zesty combination! (You may divide this recipe in half for smaller serving size.) Baking time will be less also, but we feed our family of four, then have meatloaf sandwiches for lunch the next day.

2 -3 lbs hamburger meat
2 eggs
1 packet Lipton Onion Soup Mix
1 can Rotel Tomatoes, drained
1 1/4 cups Italian breadcrumbs
2 tablespoons Worcestershire sauce
8 slices American cheese

Steps:

  • Preheat oven to 350 degrees.
  • Combine meat with all ingredients except cheese.
  • On a sheet of wax paper, flatten the meat mixture to 1/4 inch thick.
  • Shape into a flat rectangle.
  • Place cheese slices on top of meat, leaving about 1/2inch space on outside edges.
  • Lift up one end of wax paper and begin rolling the meat mixture like a jellyroll onto cheese.
  • When all cheese is rolled into meat mixture, pinch sides to keep cheese from melting out.
  • Spray a loaf pan with cooking spray.
  • Use wax paper to help lift meat loaf into pan.
  • Bake for 1 hour 15 minutes. Let rest for 20 minutes after removing from oven.

Not your average blue-plate special, this meatloaf recipe brings three ground meats together with a sweet-and-sour glaze to form a tender and moist mealtime favorite.

3 thick slices white bread, torn into large pieces
2 garlic cloves, chopped
1 medium onion, chopped
1 celery stalk, chopped
1 medium carrot, chopped
1/2 cup flat-leaf parsley
12 ounces ground beef chuck (90 percent lean), preferably pasture-raised
12 ounces ground pork, preferably pasture-raised
12 ounces ground veal, preferably milk-fed
1 large egg
3/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar

Steps:

  • Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. (You should have about 2 1/2 cups breadcrumbs.) Transfer to a medium bowl.
  • Pulse garlic, onion, celery, carrot, and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, 1 tablespoon salt, and 1/2 teaspoon pepper; mix together using your hands. Transfer mixture to a 5-by-9-inch loaf pan.
  • Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1 cup whole milk
6 slices white bread
2 lbs ground beef
1 cup parmesan cheese, freshly grated
1/4 teaspoon seasoning salt
3/4 teaspoon salt
fresh ground black pepper
1/3 cup flat leaf parsley, minced
4 whole eggs, beaten
10 slices bacon, thin
1 1/2 cups ketchup
1/3 cup brown sugar
1 teaspoon dry mustard
Tabasco sauce

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Pour milk over the bread slices. Allow it to soak in for several minutes.
  • Place the ground beef, milk-soaked bread, Parmesan cheese, seasoned salt, salt, black pepper, and parsley in a large mixing bowl.
  • Pour in beaten eggs.
  • With clean hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!).
  • Lay bacon slices over the top, tucking them underneath the meatloaf.
  • Make the sauce. Add ketchup, brown sugar, dry mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
  • Bake for 45 minutes.
  • Pour another 1/3 of the sauce over the top.
  • Bake for another 15 minutes.
  • Slice and serve with remaining sauce.
  • Serve with mashed potatoes. Yummy!

This meatloaf is really tasty. Use the leanest beef, at least 93/7. Dried parsley can be used but only use 2 tsp if you are going with dried over fresh..

1 large onion, chopped
1 large bell pepper, chopped
3 tablespoons parsley, fresh (optional)
2 lbs ground chuck, lean
1/2 cup Italian seasoned breadcrumbs
2 eggs
1 (15 ounce) can tomato sauce
3/4 cup ketchup
1 teaspoon salt, sea salt is what I recommend
1/2 teaspoon black pepper
1/2 teaspoon celery seed
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 350*.
  • In a large bowl combine 3/4 of the chopped onions and bell peppers (reserving the rest) with the parsley, ground chuck, bread crumbs, and eggs.
  • Add 1/4 cup tomato sauce, 1/4 cup of the ketchup, 1/2 tsp salt, 1/4 tsp pepper to meat mixture. With clean hands mix well.
  • Put into baking dish and form into a loaf. Set aside.
  • In medium sauce pan mix the remaining ingredients; tomato sauce, ketchup, onion, bell pepper, 1/2 tsp salt, 1/4 tsp black pepper, celery seed and garlic powder. Bring to a boil on medium heat.
  • Cook for 5 minutes, stirring.
  • Pour hot sauce over loaf. Bake at 350* for 1 1/2 hours or until done.
  • Remove from oven and loosely cover with foil until ready to serve.

This is the original version my mom handed down to me and has been one of my family staples since the 70s. I occasionally add other ingredients such as bell pepper or fresh onions, or top with bacon or cheese slice triangles. Sometimes I substitute saltine cracker crumbs to give it a different texture. My favorite part is meatloaf sandwiches from the leftovers.

A weekly meal around here. Use your favorite brand of salsa or picante sauce in this recipe. It can be as mild or spicy as you like it. A nice change from the normal meatloaf.

1 1/2 cups tortilla chips, finely crushed
1 1/2 lbs lean ground beef
1 cup milk
2 cups salsa
2 eggs, beaten

Steps:

  • Preheat oven to 350.
  • Soak the crushed tortilla chips in milk until soft.
  • Combine chips with beef, 1 cup of salsa, and eggs. Mix thoroughly; I usually dig in with my hands at this point because it seems to work the best when mixing.
  • Pack into a greased loaf pan, or form into desired shape in shallow baking dish.
  • Spread remaining salsa over top of the loaf.
  • Bake for 1 hour.
