My sisters and I used to make this for our family for dinner when we were young. Not only is this a very easy recipe to make but it is quite tasty as well.

1 9 inch pie shell
3/4 cup swiss cheese, grated
3/4 cup mozzarella cheese, grated
1/2 cup pepperoni, diced
1 tablespoon onion, finely chopped
1 cup milk
3 eggs
1/2 teaspoon salt
1/4 teaspoon oregano
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees.
  • Layer the swiss cheese, mozzerella cheese, pepperoni, and onion in the pie crust.
  • In a small bowl, mix together the milk, eggs, salt, oregano, and garlic powder.
  • Pour this mixture over the cheese in the pie crust.
  • Bake for 45 minutes.

This is the best quiche I have ever made. It is so versaitile. I have done spinach, ham, mushroom! You name it, it works. Great for an easy brunch. You can cut your pie crust with a biscuit cutter and bake mini quiches in a muffin tin for tea parties!

1 pkg frozen chopped spinach thawed and drained
5 eggs beaten
3/4 c milk
1 1/4 c shredded cheddar cheese
salt and pepper to taste
1 pie crust shell unbaked
1 dash(es) nutmeg

Steps:

  • 1. preheat oven to 375
  • 2. drain spinach well and spread in bottom of unbaked pie shell. Cover with cheese.
  • 3. In a large bowl, beat eggs and add seasonings to taste.
  • 4. add milk to egg mixture.
  • 5. Pour egg mixture onto spinach and cheese. Sprinkle with nutmeg.
  • 6. Bake at 375 until set. approx 35-40 minutes. This recipe is easy to change up the flavors- onion and mushroom, or add 3/4 cups diced ham instead of the spinach.

3 eggs, beaten
2/3 cup chicken broth
1/2 cup heavy cream or 1/2 cup evaporated milk
1/2 teaspoon salt
1/4 teaspoon Tabasco sauce
1/4 cup parmesan cheese
2 cups fresh broccoli, chopped
1 cup swiss cheese, grated
1/4 cup scallion
9 inches unbaked pie shells

Steps:

  • In a bowl, beat eggs with broth, cream, salt, and Tabasco. Set aside.
  • Pinch bottom and sides of pastry shell and bake at 450 degrees for 5 minutes.
  • Remove from oven.
  • Sprinkle pastry shell with 1/2 of Parmesan cheese.
  • Scatter 1/2 broccoli, 1/2 of Swiss cheese, and 1/2 of scallions into shell.
  • Repeat broccoli, Swiss cheese, and scallion layers.
  • Pour egg mixture over these ingredients and sprinkle with remaining Parmesan cheese.
  • Bake at 450 for 10 minutes.
  • Reduce oven temperature to 325 and bake 25 minutes longer or until knife inserted in center comes out clean.

1 1/4 c all purpose flour
2 Tbsp sugar
1/4 tsp salt
1 stick butter, unsalted
2 oz softened cream cheese

Steps:

  • 1. Grease a 9inch pie plate. Whisk the flour, sugar & salt together in medium bowl. In a large bowl beat the butter & cream cheese together with electric mixer med-high until combined (2min.) Reduce mixer med-low and beat in the flour mix until it resembles coarse crumbs (20sec.) Increase speed back to med-high until dough forms large clumps (30sec.)
  • 2. Reserve 3 tablespoons dough. Turn the remaining dough out onto a lightly floured table, gather into a ball and flatten into 6inch disc. Transfer into greaded pie plate. Press the dough evenly with your fingertips and evenly over bottom and up sides. Roll the reserved dough into a long rope and go around the top of the pie plate, attaching it to the bottom dough. Make a design with your finger on an angle then freeze for 45min.
  • 3. Before filling, bake at 350 for approx 35min. I place parchment paper and weigh down with dry beans, so crust dont bubble and crack. Beans are reusable for next crust. Now You are ready to fill Your crust with Your favorite quiche recipe. ENJOY!!

DIZ'S BEST SPINACH QUICHE EVER! (VEGAN)

Okay, so I know the ingredient list and the directions seem really long, but let me assure you, it is not as difficult as it seems and it is oh so worth it! I served this quiche with a side of steamed cauliflower with a touch of vegan margarine.

1 (17 ounce) package firm tofu, drained and pressed for at least 30 minutes
1 (16 ounce) package frozen chopped spinach
1 medium sweet onion, finely diced
1 small zucchini, thin sliced
5 medium cremini mushrooms, thin sliced
1 tablespoon sherry wine (optional)
3 garlic cloves, sliced thin
6 -8 fresh basil leaves, chopped
2 tablespoons fresh squeezed lemon juice
1 tablespoon rice vinegar
1/4 tablespoon dried thyme
5 tablespoons olive oil
1 -1 1/2 tablespoon sea salt, depending on personal preference
1 pinch red pepper flakes
1 deep dish pie shell (Marie Callender's is vegan)
butter-flavored cooking spray (make sure it's vegan!) (optional)

Steps:

  • First, drain the tofu, place in a flat bottom colander or a plate and put another plate on top with something heavy enough to gently press the tofu without smashing it--walk away and go about your business for at least a half hour. Now is also a good time to prep your veggies. Preheat oven to 350 degrees.
  • In a skillet on medium heat, add 1 tablespoon of the olive oil and add the onions, mushrooms, and zucchini. Caramelize for about 10 minutes or so.
  • When nice and brown, add 1/2 tablespoon of salt and the sherry to deglaze and cook for another minute until dry.
  • Remove and place in a medium sized mixing bowl. In the same pan on medium heat, add the rest of the oil and sauté the garlic, basil, thyme, and red pepper flakes for about 3 minutes until the garlic is slightly golden but do not brown!
  • Pour garlic concoction into a food processor and crumble the drained tofu on top. Add the vinegar, lemon juice, and the rest of the salt. Puree until really smooth.
  • Add to the onion/shroom mixture in bowl.
  • Using the same pan once again, sauté the spinach until heated through. Once finished, squeeze all excess water out and add to the tofu mixture, stirring all ingredients together well.
  • Smooth down into the "butter" misted pie shell, dust with paprika, and bake for 35-45 minutes until crust is golden brown and tofu is somewhat firm.

1 Pie Shell
2 cups Diced Ham
3 cups Emmental Cheese Shredded, divided
3 Shallots Diced
8 Eggs
1/2 cup Cream
1/2 teaspoon Sea Salt, fresh ground
3/4 teaspoon Black Pepper, fresh ground
3/4 cup Broccoli Florets, steamed

Steps:

  • Make pastry using Nana's Pastry recipe, roll out, and make a 9" pie shell
  • Sprinkle a couple of handfuls of shredded Emmental cheese in bottom of pie shell
  • Add half of the diced ham
  • Saute chopped shallots
  • Sprinkle broccoli over ham and shallots
  • Add remainder of diced ham
  • Add remainder of shallots
  • Sprinkle some more shredded Emmental on top
  • Beat together eggs, cream, salt and pepper, and remainder of Emmental
  • Pour over contents of pie shell
  • Bake at 425 F, on middle shelf of oven, for 15 minutes
  • Lower heat to 375F and continue to cook for 25 min, or until centre is dry when a knife is inserted.

5 eggs
1 1/4 cups half-and-half cream
1/2 cup ricotta cheese
1 (10 ounce) box frozen spinach, drain very well
1 (8 ounce) package fresh sliced mushrooms
3/4 cup shredded swiss cheese
3/4 cup shredded cheddar cheese
1/2 teaspoon fresh thyme
1/8 tsp.salt and pepper
1 dash hot sauce

Steps:

  • parbake pie crust in 9 inch pie pan. while baking, combine, eggs,1/2&1/2,ricotta, herbs and seasonings. wisk very well. Once crust is done, add a layer of cheese,then spinach, then mushrooms, then remainder of cheese. pour egg mixture over,and sprinkle with parm. cheese. Place pie pan on a cookie sheet and place on middle rack of preheated 350 oven. While on rack, pour hot water on to cookie sheet, around pie plate.Almost to top of cookie sheet. Carefully close oven and bake till set, about 35-40 minutes. do not over bake! A little jiggle is ok, as it will set while cooling. mungia tutti!
  • pour egg mixture over spinach, mushroom and cheese layers and bake till set. So not overbake. Enjoy!
