2 large eggs, slightly beaten
1/3 cup oil (use vegetable or olive oil)
4 tablespoons melted butter
1 (10 ounce) can corn kernels, well drained

Steps:

  • Set oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Butter an 8 x 8-inch square baking dish.
  • In a large bowl mix together flour with sugar, cornmeal, baking powder and salt.
  • In another bowl whisk together half and half cream or milk, eggs, oil and melted butter; add to the flour mixture and stir with a wooden spoon until just combined.
  • Mix in canned corn niblets.
  • Transfer to baking dish.
  • Bake for 35 minutes or until the the cake tests done.

Turkey giblets
CORNBREAD:
1-1/4 cups all-purpose flour
3/4 cup yellow cornmeal
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1 cup milk
1/4 cup vegetable oil
DRESSING:
2 celery ribs, finely chopped
1 large onion, finely chopped
1 cup chopped pecans
1 cup butter, cubed
6 cups cubed soft bread (1/2-inch cubes)
2 large eggs, beaten
1-1/2 teaspoons poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large saucepan, bring water and giblets to a boil. Reduce heat; cover and simmer for 2 hours., Meanwhile, in a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. Combine the egg, milk and oil; stir into dry ingredients just until moistened. Transfer to a greased 9-in. square baking pan. , Bake at 400° for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut cornbread into 1/2-in. cubes; set aside. , Strain broth, discarding giblets. Set broth aside; cool slightly. In a large skillet, saute the celery, onion and pecans in butter until vegetables are tender. Transfer to a large bowl. Stir in the cornbread, cubed bread, eggs, seasonings and enough reserved broth to reach desired moistness (about 1-1/2 cups). Save remaining broth for another use., Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 35 minutes. Uncover; bake 8-10 minutes longer or until a thermometer reads 160° and top is lightly browned.

1 (8.5 ounce) package corn bread mix
10 slices firm white bread
1 pound bulk spicy pork sausage
2 cups sliced celery
1 large onion, chopped
2 teaspoons dried sage
¼ cup melted butter
1 (14 ounce) can chicken broth
2 eggs

Steps:

  • The day before you want to make the stuffing, bake the corn bread mix according to package directions, remove it from the pan, cover lightly with a cloth, and leave it to dry overnight. Tear the bread into pieces and leave it out overnight to dry.
  • About 1/2 hour before serving, preheat an oven to 350 degrees F (175 degrees C), and grease a 1 1/2-quart baking dish.
  • Place the sausage into a skillet over medium heat, and cook and stir the sausage, breaking it up as it cooks, until the meat is browned, 8 to 10 minutes. Stir in the celery and onion, and cook until the onion is translucent, stirring occasionally, about 8 minutes. Stir in the sage.
  • Tear up and crumble the corn bread into a large bowl. Break the bread apart into 1/2-inch pieces, and lightly mix it with the corn bread. Pour in the melted butter, stir to combine, and lightly mix in the sausage mixture.
  • Whisk the chicken broth with the eggs, and stir into the corn bread mixture. Place the stuffing into the prepared baking dish, cover with foil, and bake in the preheated oven until the stuffing is cooked through and hot, about 30 minutes. Uncover the dish and return to the oven to bake until the top is lightly browned, about 10 more minutes.

This recipe was my Grandmothers which I got from my mother. I added to it and made what I think is the best tasting cornbread that has ever been (just my opinion). I have made this for my family for years and also have used this same recipe to make 500 little 1 oz muffins that we use in Chili cookoffs as well as in Brunswick Stew cookoffs. This recipe is for a batch that will make a large 10" cast Iron skillet of cornbread or will make about 5 dozen of the 1oz muffins. Hope you enjoy. Mr. "T"

2 cups self-rising buttermilk cornmeal mix (I use Martha White )
1 egg, beaten
1 1/2 cups buttermilk
1 cup chopped onion
1 cup chopped jalapeno
1 cup extra-sharp cheddar cheese
1 cup pork cracklings or 1 cup pork rind
1 cup whole kernel corn, drained with liquid reserved
lard, to grease frying pan or Pam cooking spray, to spray on muffin pans

Steps:

  • Preheat oven to 450 degrees F.,.
  • Grease frying pan or spray muffin tins with pam.
  • Chop the onion into 1/8" - 1/4" cubes or pieces.
  • Seed the jalapenos and chop into 1/8" pieces.
  • Cut the cheese into 1/8" - 1/4" cubes or pieces.
  • In large mixing bowl add 2 cups cornmeal.
  • In small mixing bowl add 1 egg and beat, add buttermilk and mix well.
  • Add egg & buttermilk mixture to cornmeal and mix well.
  • Add the onions, jalapenos, cheese to the cornmeal and mix well.
  • Add the cracklins to the cornmeal mixture and mix well.
  • If the mixture is to thick add the reserved corn liquid and mix well.
  • Fill the frying pan or the corn muffin tins and bake in the preheated oven for 12 to 15 minute or untill golden brown. Enjoy.

2 cups stone-ground yellow cornmeal
2 cups all-purpose flour (see Cook's Note)
1/4 cup granulated sugar
4 teaspoons baking powder
1 teaspoon baking soda
3 teaspoons kosher salt
14 tablespoons (1 3/4 sticks) unsalted butter
2 cups buttermilk
1/2 cup whole milk
4 large eggs, lightly beaten
12 tablespoons (1 1/2 sticks) unsalted butter, plus more for the pan
1 large onion, medium dice
4 stalks celery, medium dice
Kosher salt and freshly ground black pepper
4 cloves garlic, minced
2 tablespoons chopped fresh sage leaves
1 tablespoon chopped fresh thyme leaves
1/2 teaspoon poultry seasoning
4 cups low-sodium chicken broth
2 large eggs, lightly beaten
Chopped flat-leaf parsley leaves, for serving

Steps:

  • For the cornbread: preheat the oven to 375 degrees F. Coat a 9-by-13-inch baking dish generously with nonstick cooking spray.
  • Whisk the cornmeal, flour, sugar, baking powder, baking soda and salt together in a large bowl until combined.
  • Put the butter in a 4-cup liquid measuring cup or a medium microwave-safe bowl and microwave in 30 second intervals until completely melted, about 1 minute. Set aside to cool slightly, then whisk in the buttermilk, whole milk and eggs until smooth.
  • Add the wet mixture to the dry mixture and stir until just combined with no lumps remaining. Transfer the batter to the prepared baking dish. Bake until the top is golden and a toothpick inserted into the center comes out clean, 45 to 50 minutes. Transfer to a wire rack to cool completely. (The cornbread can be made one day in advance. After cooling completely, wrap the pan tightly with plastic wrap and store at room temperature.)
  • Lower the oven temperature to 325 degrees F.
  • Once the cornbread is completely cool, run a small offset spatula around the edges of the pan, then invert it onto a cutting board and cut into 1-inch cubes. Transfer to 2 rimmed baking sheets and spread into an even layer. Bake, rotating the trays halfway through, until the cornbread cubes are crisp at the edges and almost completely dried out, about 40 minutes. Remove to a wire rack and let cool completely. (This step can be done up to 24 hours in advance. Store the cooled cornbread cubes in an airtight container or resealable plastic bag until ready to use.)
  • Meanwhile, preheat the oven to 375 degrees F and coat a 9-by-13-inch baking dish generously with butter.
  • For the dressing: melt the butter in a large skillet over medium heat. Add the onion, celery, 1/2 teaspoon salt and a few grinds of black pepper and cook, stirring occasionally, until tender, 6 to 8 minutes. Add the garlic, sage, thyme and poultry seasoning and cook until fragrant, 2 minutes more. Transfer to a large bowl.
  • Add the cornbread cubes, chicken broth and eggs to the bowl and toss gently until the vegetables are evenly dispersed and the bread is very moist (do not overwork or the cornbread will fall apart). Transfer to the prepared baking dish and cover tightly with aluminum foil.
  • Bake until warmed through, about 30 minutes. Uncover, then return to the oven and bake until lightly browned and crisp at the edges, about 20 minutes more. Let sit for 10 minutes, then top with chopped parsley and serve.

2 hot Italian sausages
2 tablespoons extra-virgin olive oil
1 cup chopped carrot
1 cup chopped celery
1 cup chopped onion
Kosher salt
Freshly ground black pepper
1/2 bunch fresh sage, leaves chopped
4 large corn muffins
3 large eggs
1/2 cup, chicken stock, plus more if needed
Nonstick cooking spray

Steps:

  • Heat the oven to 350 degrees F.
  • Remove the casings from the sausages. Heat 1 tablespoon of the olive oil in a skillet over medium-high heat and add the sausage meat. Cook, breaking up the meat into small pieces, until browned and cooked through, about 5 minutes. Drain on a paper towel lined plate and set aside to cool while you cook the vegetables. Wipe out any excess fat from the pan with paper towels.
  • Heat 1 tablespoon of oil in the same skillet over medium-high heat. Add the carrots, celery, and onion. Season with salt and pepper and add the sage. Cook until the vegetables are soft, about 10 minutes. Set aside to cool a bit.
  • Crumble the corn muffins into a large bowl. Put in the cooled sausage and vegetables. Add the eggs and 1/4 cup chicken stock. Using your hands, mix well adding more stock if the stuffing is too dry. Spray a 2-quart oven-proof baking dish with cooking spray. Put the stuffing into the dish and bake for 45 minutes to 1 hour, or until the top is browned and crispy.

This is a recipe I got from the Alber's brand cornmeal box a number of years ago. It's my favorite cornbread recipe. It's sweet, but not too sweet. They've since changed the recipe on their box and I'm grateful I kept the old one...while the new isn't bad, it's really sweet...it tastes like corn-flavored cake. This is a happy medium. Best served hot with lots of butter (imo), but good cold, also. I'm posting this here for safe-keeping. Note: You can measure out and mix the dry ingredients together and keep in in a tightly closed container for those times when you need to whip up a quick batch of cornbread. For a killer crust on the cornbread, use a cast-iron skillet.

2 onions, diced
16 ounces cornbread mix (Marie Callanders works best)
2 dozen small corn tortillas, ripped into small pieces
1 (10 ounce) box seasoned stuffing mix or 1 (10 ounce) box croutons
6 eggs, beaten
2 (4 ounce) cans diced jalapeno peppers
2 (7 ounce) cans diced green chilies
chicken broth

Steps:

  • Preheat oven to 350.
  • Boil celery until done.
  • In a skillet melt butter and sweat onions.
  • Add celery to onions and simmer.
  • In a giant mixing bowl mix corn bread mix, tortillas, stuffing mix, eggs, jalapenos and chilis.
  • Add celery and onion mixture.
  • Mix in 4 cans of broth, should be a soupy consistancy. Add more broth if needed.
  • Place mixture in a 11x13 glass baking dish and place in oven.

This recipe comes from my favorite cooking magazine -- Cook's Illustrated. It's the best of the Northern and Southern cornbread recipes. It will produce a tender, fluffy crumb and a thick, crunchy crust with a sweet corn taste. Before preparing the baking dish or any of the other ingredients, measure out the frozen kernels and let them stand at room temperature until needed. When corn is in season, fresh cooked kernels can be substituted for the frozen corn. This recipe was developed with Quaker yellow cornmeal; a stone-ground whole-grain cornmeal will work but will yield a drier and less tender cornbread. A Pyrex glass baking dish is preferred because it yields a nice golden-brown crust, but a metal baking dish (nonstick or traditional) will also work. The cornbread is best served warm; leftovers can be wrapped in foil and reheated in a 350-degree oven for 10 to 15 minutes

  • Bake until deep golden brown and toothpick inserted in center comes out clean, 25 to 35 minutes.
  • Cool on wire rack 10 minutes; invert cornbread onto wire rack, then turn right side up and continue to cool for about 10 minutes longer.

I've eaten quite a bit of good southern cornbread dressing in my time, but have to give credit to an Italian friend of mine who shared this recipe with me, My Yankee husband and in-laws love it. : ) I like it because it is very moist.

1 large pan of cornbread (large cast iron skillet size, or make 2 pans of cornbread) i use martha whites recip[e on bag.
4 pieces of toasted bread (crumbled)
1 large onion (diced)
4-6 stalks of celery (diced)
4 raw eggs (hand whipped)
3 can(s) cream of chicken soup
2 can(s) swanson's 10 1/2 oz chicken broth
1 stick butter (melted)
2 Tbsp pepper (or season to taste for you)
1 1/2 Tbsp sage (again season to taste for you)

Steps:

  • 1. Make cornbread the day before you make the dressing. I use Martha White's recipe on the bag of her cornmeal.Allow to cool then crumble well. Place in a large bowl.
  • 2. Add all the ingredients EXCEPT one can of chicken broth. Mix well with hands. IMPORTANT any chicken broth will do, just make SURE you use the correct amount of broth. Swanson's cans are larger. Cover with tinfoil and refridgerate overnight. Important step!
  • 3. The next day add the other can of chicken broth. Mix well. It should be the consisteny of cake batter. Cover with foil. Place in re-heated 350 degree oven. Bake for 1 1/2 to 2 hours. The center of the cornbread should not be wet.

This is a recipe for corn bread that had come from Byron's Dutch Oven Recipes. Since the site went down a while ago I thought about posting the recipe here.

1 cup butter, melted
4 eggs, beaten
3 cups milk
2 cups sugar
4 teaspoons baking powder
1 teaspoon salt
3 cups all-purpose flour
2 cups cornmeal

Steps:

  • Dry Bowl: Whisk 2 cups cornmeal, 3 cups all-purpose flour, 4 teaspoons baking powder, and 1 teaspoon salt together, blending thoroughly.
  • Wet Bowl: Beat 4 eggs together, add 1 cup of melted butter, 3 cups of milk, and 2 cups of sugar, blending throughly.
  • Slowly add 1 cup of the dry bowl contents to the wet bowl, whisking until completely mixed before adding another cup. Continue until all of the dry bowl is mixed in with the wet bowl.
  • Pour into a buttered 10″ to 12″ Dutch Oven and bake for 1 hour and 17 minutes at 350 degrees. You might have to adjust your baking time and temperature for your oven.
  • Serve warm with honey butter.

Got this recipe out of a book I was reading that the main character was a chef and in the back of the book were the recipes that were used in the story. Crazy me decided to try this one and I have to say, it's seriously the best cornbread EVER!! Try it!

2 eggs
1 can(s) creamed corn
1 can(s) whole kernal corn, drained
1 stick butter, softened
1/2 c sour cream

  • 1. Mix everything together, pour into 9x13 greased baking dish (glass works better). Bake uncovered at 375* for about 30 minutes or so until browned on top and not soupy looking :o)

This is more like corn cake. Not that there were any complaints. Its sweet and light, perfect paired with butter and more honey! I also made a raspberry butter to go with this, also delicious! Freeze, or enjoy right away both work out great. I also pair the cornbread with tacos or enchiladas as a sweet corn cake. Enjoy!

1 c whole milk
2 Tbsp white vinegar
2 eggs
1/2 tsp baking soda
1 tsp seasoning salt
1 c cornmeal

I learned a long time ago that it is good no matter what kind of pan you cook it in, but it's best when you use an iron skillet! And don't let the mayo scare you, after all it is mainly egg and oil...

2 1/2 c white cornmeal mix-not cornbread mix
1 Tbsp mayonasse
1 qt buttermilk (this is approximate)

Steps:

  • 1. preheat oven to 450 degrees.
  • 2. put cornmeal mix in large mixing bowl. add mayo and buttermilk. mix well.
  • 3. I usually just eyeball my ingredients so you may need more or less buttermilk depending on consistency. It does need to be a little soupy but not watery
  • 4. pour into greased iron skillet or baking pan and bake for aprox 45min. or until a golden brown.
  • 5. if using an iron skillet, turn it upside down over a plate and lift the skillet off. You may have to use a knife after it has cooled to loosen the bread if your skillet is not well seasoned.
