1 lb of cubed chicken or 1 lb beef
1 tablespoon chili powder
2 tablespoons curry powder
1/2 teaspoon ginger
1/2 tablespoon paprika
3 garlic cloves, minced
1/2 onion, chopped
1 tomatoes, chopped
1/2 cup cilantro, chopped
2 tablespoons oil
3 bay leaves
1 -2 big potato
1 big carrot, cut into pieces
1 (13 1/2 ounce) can coconut milk
2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon pepper
3 ounces water

Steps:

  • Place chopped onions into a pan. Add in the 2 tbls of oil and cook on medium high heat until onions are transparent.
  • Once onions are transparent put in either diced chicken or beef and cook for 6 minutes.
  • Mix in the coconut milk and water with the onions and chicken.
  • Add the spices and veggies to the milk mixture.
  • Simmer for at least 20-30 minutes. Stirring occasionally.
  • Server over steamed Basmati rice.

thai chicken curry
1 onion, quartered
2 tablespoons grated ginger
1/2 tablespoon chopped chili
6 garlic cloves, crushed
2 teaspoons oil
2 teaspoons ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
4 chicken breast fillets
1 cup chicken stock
2 tablespoons tomato paste
1 (150 ml) can coconut cream
1/4 cup chopped fresh coriander

Steps:

  • Process onion, ginger, chilli, garlic and oil in a food processor until smooth.
  • Cook in pan with coriander, cumin and turmeric for 2-3mins.
  • Add chicken and little more oil if needed and cook 2-3mins.
  • Add chicken stock and tomato paste and stir well to combine. Bring to boil then reduce heat and simmer covered for 20 minutes.
  • Stir in coconut cream and heat through then stir in coriander.

This is a delightfully different flavour to other countries in Asia and all cooks that love spicy Asian meals will notice the different amounts of the spices that we all use so often, and how its put together make it unique in its own way - it works and how! its really a lovely recipe and one that I intend to use again - I found it tucked in between one of my many cookbooks - scrawled on a sheet of paper.

8 -9 chicken thighs, with skin removed
2 onions, finely diced
4 -5 garlic cloves
2 tomatoes, medium chopped
1 tablespoon ginger, grated fine
1/2 teaspoon turmeric
1 tablespoon cumin powder
1 tablespoon coriander powder
1/2 teaspoon chili powder (to taste)
3 cloves
1 cinnamon stick, very small
3 cardamom pods, green
1 bay leaf
1/2 teaspoon cumin seed
2 -3 tablespoons oil
salt
1/4 cup coriander, chopped to garnish

Steps:

  • Heat oil in a large saucepan and add the cumin seeds stirring for just 15 seconds or there about. Add onions and fry until they are soft.
  • Add the chicken and salt to taste and cook/fry until they become well sealed or slightly brown. add the garlic, ginger, cloves, cardamom, cinnamon and the bay leaf and stir for a few minutes on medium heat.
  • Add Turmeric, chilli, cumin and coriander powders and mix well with the chicken and cook for a further 3-5 minutes stirring.
  • Add the tomatoes and stir, lower the heat and simmer with lid just slightly tilted for about 20 minutes - do not be tempted to add water as it will make its own juice.

100 g butter
3 onions (chopped)
4 garlic cloves (crushed)
3 bay leaves
1 teaspoon cinnamon
4 cloves
2 kg chicken pieces
2 tomatoes
1 tablespoon salt (to taste)
3 tablespoons curry powder
1 tablespoon paprika
500 ml coconut milk
100 g yoghurt
2 teaspoons poppy seeds
2 teaspoons ginger (grated)
350 ml heavy cream
1/4 teaspoon saffron
3 tablespoons lemon juice

Steps:

  • Fry onions and garlic in butter till golden brown.
  • add bay leaves,cinnamon,cloves and simmer for 5 minutes.
  • add chicken pieces and cook for 10 minutes.
  • in a bowl mix together the cut tomatoes,salt,curry powder,paprika,coconut milk,yoghurt,ginger,poppy seeds and then add the mix to the chicken and cook till tender (on a medium to low heat).
  • stir in the cream and saffron and heat thoroughly.
  • last of all try to add lemon juice just before serving and stir.
  • serve with rice (basmati).

A Pakistani friend gave me this recipe and it is one of our favorites. She turned me onto the friend onions already packaged, which makes it so much easier to make. Also, the marsala seasoning is boxed.

4 boneless chicken breasts (you can use chicken tenders if easier)
1 tablespoon oil (olive, canola, grapeseed)
1 cup fried onions (I purchase them already made up, the brand is Chirag)
1 1/2 teaspoons turmeric
1 teaspoon chicken marsala seasoning (may add more if you like it spicy)
1 tomatoes (diced) (optional)
3 cups water

Steps:

  • Take the fried onions and 1 tablespoon of oil and fry them on medium heat for about 30 seconds. Add the turmeric and Chicken marsala seasoning. Stir for another minute. Add tomato to taste and stir for another minute. Add 1 cup of water and cook until onions are tender, about 3 to 5 minutes. Add chicken, stir on medium for several minutes. Add another 2 cups of water and let simmer (lowest heat) for 30 minutes.
  • This will serve 4 people. I always double this recipe so that the kids have extra for lunch the next day.
  • Also, I make my Lebanese rice to go with this. The kids LOVE it!
