I tested 8 different butter cookie recipes, looking for the "perfect" butter cookie. It had to be buttery, a little crumbly (like shortbread), and not too sweet. This is the winner. I think these are the Worlds Best Butter Cookie, courtesy of Chef Alice Medrich.

8 ounces unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
1 1/2 teaspoons pure vanilla extract
1 large egg yolk
2 cups all-purpose flour

Steps:

  • Beat the butter, sugar, salt and vanilla together until smooth and creamy.
  • Mix in the egg yolk until well incorporated, scraping down the sides of the bowl at least once.
  • Add the flour and mix just until incorporated.
  • Scrape onto a lightly floured board and knead a few times, just until the dough smooths out.
  • Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for several hours or freeze.
  • Before baking, preheat the oven to 325°F.
  • Line your baking sheets with parchment.
  • Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart (they won't be spreading very much, but they need air room around each cookie).
  • Bake until JUST beginning to turn golden around the edges, about 16-18 minutes.
  • Note: you can do many things with these cookies.
  • You could roll the dough out and cut shapes.
  • You could slice them even thinner and sandwich them with chocolate or jam or lemon curd.
  • You could make them and then dip them half into chocolate.
  • You could just make them and eat them, which is my favorite.
  • Whatever you do, they will be delicious.

1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2 sticks (16 tablespoons) good-quality unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg yolk
1 teaspoon pure vanilla extract
1/4 cup turbinado sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl. Add the butter and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. Beat on high speed for a full 2 minutes, scraping down the bowl halfway through the mixing; the butter should be very light and fluffy. Add the egg and vanilla and beat on medium speed until well combined. Add half the dry ingredients and beat on low speed to combine. Scrape down the mixing bowl before adding the remaining dry ingredients and beat to combine. Refrigerate for 1 hour in the bowl for drop cookies, or form into a 1-inch log for slice-and-bake cookies.
  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Place the turbinado sugar in a small bowl. For drop cookies, scoop the cookie dough with a 1 tablespoon-size cookie scoop and then dip the tops of the cookie dough balls into the sugar. Place onto the prepared baking sheet.
  • For slice-and-bake cookies, cut the log into 1/2-inch-thick rounds. Press the tops into the sugar and place on the prepared baking sheet.
  • Bake the cookies until slightly puffed and lightly golden on the bottom, about 15 minutes.

I got this recipe from a wife of a co-worker. The recipe is called "Peanut Butter Cookies" but they are honestly the best peanut butter cookies that I have ever tasted in my life. I have not made these myself before because my boyfriend isn't crazy about peanut butter cookies so I do not know how much the recipe will make so I am going to give it my best estimated guess. 1/2 cup unsalted butter (1 stick)
1 cup packed light brown sugar
3/4 cup jiffy creamy peanut butter (must be Jiff only)
1 egg
1/2 teaspoon vanilla
1 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
granulated sugar, to roll dough in

Steps:

  • In larger bowl, beat butter, brown sugar, and peanut butter until well blended.
  • Add egg and vanilla, beat well.
  • Stir together flour, baking powder, baking soda, and salt.
  • Gradually add to peanut butter mixture, beat until well blended.
  • Heat oven to 350 F.
  • Shape dough into 1-1/4 inch balls, roll balls in granulated sugar.

  • With the tines of a fork, flatten ball.
  • Flatten again in opposite direction, forming crisscross marks.

2 1/2 cups all-purpose flour
2 tablespoons orange juice
1 tablespoon vanilla

  • Combine butter, sugar, and egg in large mixer bowl. Beat at medium speed until creamy. Reduce speed to low; add flour, orange juice, vanilla, and baking powder. Beat until well mixed. Divide dough into thirds. Wrap in plastic wrap and shape into disks. Refrigerate until firm (about 2-3 hours).

3/4 cup salted dry-roasted peanuts
1 1/2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking soda

The name of the recipe says it all. While it is my description of these cookies, it is also the actual name of the recipe that was printed in a small booklet of recipes that came out of a bag of Gold Medal Flour at least 40 years ago. Tried and true, this is the only peanut butter cookie recipe my mother ever made, and it is the only recipe I will use. Prepared as described below, the cookies are soft, yet crispy.

1/2 cup butter
1/2 cup peanut butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 3/4 cups self-rising flour
sugar, for coating

Steps:

  • Preheat oven to 375 degrees.
  • Cream together butter, peanut butter, brown sugar and sugar until nice and smooth.
  • Add egg and vanilla and beat in well with a spoon.
  • Gradually add the self-rising flour. Dough will be stiff.
  • Form one inch balls and roll in sugar (I like to toss a dozen of the dough balls into a bag with sugar, shake gently to coat and then leave them in the bag for a couple minutes so a thicker coat of sugar adheres to the dough, then give another light shake before removing them from the bag. But just giving them a quick roll is fine).
  • Place sugared dough balls onto an UNGREASED baking sheet about 2 inches apart. Flatten balls with the back of a fork (or if you want flat tops you can flatten them with the bottom of a drinking glass. I usually flatten them with the textured side of my meat cleaver giving the cookies a nice waffle pattern).
  • Optional step: You can sprinkle a little extra sugar onto the tops after they are flattened if you like. It adds a little "crunch" to this soft cookie.
  • Bake in preheated oven for 8 to 10 minutes or until the edges just start to turn brown. Remove from the oven and cool cookies on baking sheet for a few minutes before transferring to cooling racks.
  • Note: While baking one batch of cookies, cover the remaining dough with plastic wrap so it doesn't dry out. I generally form the dough balls for the next batch while the previous batch is cooling on the baking sheet.
  • Variation: To give a Christmas touch. Dip the bottom half of the dough balls in regular sugar, then dip the top half of the balls in colored sugar crystals. Then flatten and bake as directed.
  • Enjoy!

The trick is twice as much peanut butter as your average-joe cookie recipe, and some leavening changes to help turn out a thick, chewy cookie. And the peanut butter matters... I use Adams brand natural organic peanut butter (you can pour out some of the oil if you want), or you can make your own at a health food store like Wild Oats or Whole Foods.

1 cup butter, softened (not melted)
2/3 cup smooth peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups flour
2 cups oatmeal (blended in blender until the consistency of flour)
1/2 tsp salt
1/2 tsp baking soda
* Frosting amounts are approximate since frosting is made per taste *
1 bag chocolate chips
1 cup milk
2 cups powdered sugar

Steps:

  • Cream butter and peanut butter. Mix in sugars, eggs and vanilla until well blended. Mix together dry ingredients and add to peanut butter mixture.
  • Form into 1" round balls, press crossways with fork. Bake at 350°F for 10 minutes. Cool for 15 minutes.
  • While cooling, prepare the frosting. Melt the chocolate chips in the microwave with milk to keep them from burning. Stir until smooth and then add powdered sugar until frosting is the desired consistency.
  • After about 5 minutes of cooling, spread a THIN layer of smooth peanut butter over the top of the cookie. Next, spread the chocolate frosting on top of the peanut butter topped cookies. Sprinkle with powdered sugar. Refrigerate for the best taste.

2 cups unsalted butter, softened (Kerry Irish Gold)
1 1/2 cups sugar
4 egg yolks
2 teaspoons vanilla
4 1/2 cups unbleached flour
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350°.
  • With an electric mixer (even the hand-held kind), cream together the butter and the sugar.
  • Add egg yolks and vanilla and mix well.
  • Sift flour and salt together, shaking back and forth in a fine sieve.
  • Beat into the butter mixture until well-mixed.
  • When ready to bake, use an ungreased cookie sheet and place the cookies 1 inch apart.
  • Bake for about 10 minutes and DO NOT BROWN THEM.
  • Remove the cookies from the cookie sheet while still warm and cool on sheets of waxed paper.
  • Decorate if you like:.
  • Shape dough into a roll the width of a cookie.
  • Wrap in waved paper and chill.
  • Before baking, roll in chocolate shots.
  • Slice 1/2 inch thick and bake on ungreased cookie sheet at 350° for 10 minutes. Do Not Brown.

These are the best peanut butter cookies I have ever eaten. They are soft and chewy. They are great when you add the nuts and chocolate chips. Whenever I take these cookies to a potluck or family get together, people always request that I bring these cookies. I got this recipe out a cook book a number of years ago. I have changed the recipe slightly from the original.

Number Of Ingredients 7

1 (14 ounce) can sweetened condensed milk (not evaporated)
3 tablespoons water
3/4 cup peanut butter (creamy or chunky)
2 cups baking mix
1 teaspoon vanilla
1/2 cup chocolate chips (optional)
1/2 cup walnuts (optional)

Steps:

  • Preheat oven to 375°F.
  • In large bowl, beat sweetened condensed milk and peanut butter until smooth.
  • Add biscuit mix and vanilla; mix well.
  • Shape into 1-inch balls.
  • Roll in sugar.
  • Place 2 inches apart on ungreased cookie sheets.
  • Flatten with fork.
  • Bake 8 to 10 minutes or until golden brown.
  • Cool.
  • Store tightly covered at room temperature or freeze for future use.
  • For chocolate peanut butter cookies, add 1/4 cup cocoa and a dusting of cinnamon to the batter.

I like this recipe because you make the dough one day and bake the next. After you frig it over night the dough is easier to work with. I got this recipe from my sister, she's the one that told me to frig the dough overnight.

1/2 cup butter or 1/2 cup margarine, softened
8 ounces cream cheese (soften)
1/4 teaspoon vanilla
1 egg
1 (18 1/2 ounce) box butter recipe cake mix
8 ounces powdered sugar

Steps:

  • Mix the butter ( I melt it in the microwave) and cream cheese ( I mix by hand with a wooden spoon, but any spoon would work).
  • Add vanilla and the egg mix together.
  • Add the Butter flavor cake mix.
  • Put in the frig overnight.
  • The next day.
  • Preheat oven to 350.
  • Spray cookie sheet very lightly ( if you use parchment paper don't spray cookie sheet, I prefer the parchment paper).
  • Roll dough into balls (about the size of a walnut), roll into powdered sugar.
  • Put onto cookie sheet ( I put them 3 in a roll and space out, and only have 4 rolls).
  • Bake 10 to 12 minutes.
  • Remove from oven, sprinkle with powdered sugar.
  • Let stand on cookie sheet for a few minutes.
  • Then remove and let cool.

1 c brown sugar, firmly packed
1 c white sugar
1 c butter flavor crisco ( i used real butter)
1 c creamy peanut butter (skippy)
1/2 tsp salt
2 large eggs
1 tsp vanilla
2 tsp baking soda
2 c flour (1/4 cup more if needed)

Steps:

  • 1. Cream together the sugars, Crisco, peanut butter. Add the eggs and vanilla Sift the dry ingredients together and add gradually until blended well Roll into tablespoon size balls. Roll cookie dough balls into sugar.
  • 2. Place on cookie sheets- do not mash with fork in normal "peanut butter cookie" fashion! Bake at 350° oven for 11-13 minutes.

These have remained a family favorite for years and I still make them, you may omit the chocolate chips but I like to add them in, also you may use 1/2 cup each butter and shortening if desired :)

1 cup butter, softened
1 cup crunchy peanut butter or 1 cup smooth peanut butter
1 cup white sugar
1 cup brown sugar, packed
2 eggs
1 1/2 teaspoons maple extract (or use 2 teaspoons vanilla)
2 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup mini chocolate chip (can use regular size chocolate chips)
1/2 cup peanuts, finely chopped

Steps:

  • Set oven to 350 degrees F.
  • Grease a cookie sheet.
  • In a bowl, cream the butter, peanut butter and sugars together until light and fluffy.
  • Add in eggs and vanilla; beat well until thoroughly combined.
  • In another bowl combine flour, baking powder, baking soda and salt.
  • Stir the dry mixture into the creamed until combined.
  • Add/mix in mini chocolate chips.
  • Chill dough for about 4 hours or overnight.
  • Drop by tablespoonfuls onto cookie sheet.
  • Bake for about 10 minutes, or until cookies begin to brown around the edges (try not to overbake!).
