1 package (0.3 ounce) sugar-free strawberry gelatin
1/3 cup reduced-calorie reduced-sugar cranberry juice
3/4 cup raspberry yogurt
3 cups chopped fresh strawberries
1 reduced-fat graham cracker crust (9 inches)
Fat-free whipped topping, optional

Steps:

  • In a small microwave-safe bowl, sprinkle gelatin over cranberry juice; let stand for 1 minute. Microwave on high for 40 seconds; stir. Let stand for 1 minute or until gelatin is completely dissolved. , In a blender, combine the gelatin mixture, yogurt and strawberries; cover and process until blended. Pour into crust. Refrigerate for 4 hours or until set. Serve with whipped topping if desired.

Tastes like it is called... smoothie in pie form :)

Number Of Ingredients 9

1 package(s) berry blue jello gelatin
1/4 cup(s) cranberry juice
1/4 cup(s) grape juice
1 - carton raspberry yogurt (6 oz)
1 1/2 cup(s) strawberries, diced
1 1/2 cup(s) fresh blueberries
1 teaspoon(s) grated lemon zest
- whipped topping (optional)
- ready-made graham cracker crust

Steps:

  • Combine gelatin, cranberry and grape juice in microwavable bowl. Set aside for 1 minute, then microwave for 30 seconds. Take out, stir, and set aside.
  • Gelatin should be dissolved. If not, microwave for another 10 or 15 seconds, stir, and set aside.
  • Wash fruit; slice half of the strawberries into a size you want to top the pie with. Dice the other half.
  • Combine diced strawberries, gelatin, half the blueberries and yogurt in a blender. Blend until smooth and creamy and all is incorporated.
  • Pour into crust and chill for about 5 hours until set. Top with grated lemon zest, then the whipped topping (optional, but so yummy) and decorate the top with the rest of the strawberries and blueberries. :0)
