My Yam Bake has become a holiday tradition in our family. The blend of cranberries and sweet potatoes in this recipe results in a very pretty appearance-and a unique taste. I grew up on a small Arkansas farm in the foothills of the Ozarks. Both my mother and father are excellent cooks, and I've been cooking since I was a little girl. In fact, my husband teases me that I read cookbooks like some other people read novels!

Number Of Ingredients 9

1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup old-fashioned oats
1/2 teaspoon ground cinnamon
1/3 cup butter
2 cups fresh or frozen cranberries
2 tablespoons sugar
1 can (15-3/4 ounces) sweet potatoes, drained and liquid reserved
Miniature marshmallows, optional

Steps:

  • In a small bowl, combine the flour, brown sugar, oats and cinnamon. Cut in butter until coarse crumbs form. Set aside. Sprinkle cranberries with sugar. , In a 2-qt. baking dish, layer half the yams, half of cranberry mixture and half of crumb mixture. Repeat layers. Pour reserved yam liquid over all. , Bake at 350° for 35 minutes or until heated through. If desired, place several rings of marshmallows around the outer edge of baking dish. Bake just until marshmallows are puffed and lightly browned.

Our family always make this dish during the holidays. My sister-in-law brought it into the family! If you want, sprinkle 1 1/2 cups miniature marshmallows and bake until lightly browned.

2 (15 ounce) cans yams, drained and cut into chunks
2 cups fresh cranberries
½ cup all-purpose flour
½ cup brown sugar
½ cup oatmeal
⅓ cup margarine, softened
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss yams and cranberries together in a bowl. Mix flour, brown sugar, oatmeal, margarine, and cinnamon together in a separate bowl. Add about half the oat mixture to the yam mixture; toss to combine and spread into a 1 1/2-quart casserole dish. Sprinkle remaining oat mixture over the casserole.
  • Bake in preheated oven until lightly browned, about 35 minutes.

This is a wonderful update to a Thanksgiving tradition, and a family favorite. We like it so well I have to double it, and everyone fights over the leftovers :D It's quick and easy, colorful and delicious, and a life-saver when there are vegetarians at the table!

1/2 c flour*
1/2 c brown sugar
1/2 c oats*
1 tsp cinnamon
5 Tbsp butter
2-17 oz. can(s) yams, drained
2 c cranberries
1 1/2 c mini marshmallows

Steps:

  • 1. In a medium mixing bowl, combine flour, brown sugar, oats, and cinnamon. Cut in butter with a fork or pastry blender, until coarse crumbs form.
  • 2. In a large mixing bowl, gently stir together the yams and cranberries.
  • 3. Lightly toss 1 cup of the crumb mixture with the yams-cranberries. Spread evenly in a 1 1/2 to 2 qt. baking dish, that has been prepared with food release spray.
  • 4. Cover with remaining crumb mixture.
  • 5. Bake at 350* for 35 minutes. Remove from oven, sprinkle with marshmallows, and return to oven until marshmallows are lightly browned.
  • 6. NOTES: I like to spread the love, so I cut the cranberries in half before mixing them with the yams. This takes a few extra minutes, but it's well worth it. If fresh cranberries are too tangy for you, you can easily substitute a can of whole berry cranberry sauce. Just scramble it up in the can a bit, then dollop around on top the yams, before adding the crumb topping. I have also made this recipe with fresh yams or sweet potatoes, peeled and sliced, about 3-4 cups. It will need more baking time if you use fresh; plan 50-60 minutes. If you're in a hurry, you can put the pan under the broiler to toast the marshmallows. Reheats very well. My family even eats it for breakfast! *This recipe is easily made gluten free, by using GF oats and GF all purpose flour.

1 teaspoon cinnamon
1/3 cup butter
2 (28 ounce) cans yams, drained
1 (16 ounce) can whole berry cranberry sauce
15 large marshmallows

Steps:

  • Preheat oven to 350*.
  • Mix together flour, brown sugar, oats, and cinnamon; cut in butter.
  • In large bowl, toss half of the crumb mixture with the yams and cranberry sauce and arrange in casserole dish.
  • Sprinkle remaining crumb mixture on top.
  • Bake for 35 minutes.
  • Place marshmallows on top and put under broiler until marshmallows are golden brown and toasty.
