This fluffy salad is a welcome treat on warm Texas afternoons. Because there's a blueberry orchard near our home, we often pick up berries to use in this recipe and others. When blueberries and strawberries aren't in season, you can substitute frozen berries with equally good results. -Karen Wenzel, Conroe, Texas

1 package (8 ounces) cream cheese, softened
1-1/2 cups confectioners' sugar
2 cups heavy whipping cream
8 cups fresh strawberries (about 2 pounds), sliced
2 cups fresh blueberries
Optional: Additional fresh strawberries and blueberries

Steps:

  • In a large bowl, beat cream cheese and confectioners' sugar until smooth. Slowly add cream, beating until thick and fluffy., Fold in 8 cups strawberries and 2 cups blueberries. If desired, top with additional berries.

This heavenly fruit salad tossed with homemade whipped cream came about when bananas, mangoes, and blueberries were on sale for Mother's Day, and I was already whipping cream for another dish. The entire bowl was demolished by 6 people! This combination would also work well with a variety of fruits added or substituted in, but I particularly like the unique flavor the mangoes add.

1 cup heavy whipping cream
1 teaspoon vanilla extract
2 ripe mangoes, peeled and chopped
3 bananas, thickly sliced
2 (6 ounce) containers fresh blueberries

  • Beat cream and vanilla extract in a bowl using an electric mixer until fluffy and stiff peaks form. Lift your beater or whisk straight up: the whipped cream will form sharp peaks. Fold mangoes, bananas, and blueberries into whipped cream.

2 cans (21 ounces each) raspberry or strawberry pie filling
1 can (14 ounces) sweetened condensed milk
1 can (8 ounces) crushed pineapple, undrained, optional
1 carton (12 ounces) frozen whipped topping, thawed
Fresh berries and mint, optional

Steps:

  • In a bowl, combine pie filling, milk and pineapple if desired. Fold in whipped topping. Spread into an ungreased 13-in. x 9-in. pan. Cover and freeze for 8 hours or overnight. , Remove from the freezer 10-15 minutes before serving. Cut into squares. Garnish each with berries and mint if desired.

3/4 cup butter, melted
2 packages (8 ounces each ) cream cheese, softened
1 cup whole-milk ricotta cheese

1 teaspoon vanilla extract
1/2 teaspoon grated lemon zest
1 cup heavy whipping cream
3 cups quartered fresh strawberries
1-1/2 cups fresh blueberries
3 tablespoons apricot preserves, optional
Additional whipped cream and miniature pretzels, optional

Steps:

  • In a large bowl, toss pretzels with sugar and melted butter. Press into an ungreased 13x9-in. dish. Refrigerate 30 minutes., In a large bowl, beat cream cheese, ricotta, confectioners' sugar, vanilla and grated lemon zest until smooth. 1/4 cup boiling water
1 package sugar-free cranberry flavor gelatin
1/2 cup cold water
ice cube
1 (8 ounce) container low-fat vanilla yogurt
1/2 teaspoon vanilla
fat-free whipped topping or light whipped topping
kiwi fruit, peeled and sliced

Steps:

  • Stir boiling water into gelatin until completely dissolved.
  • Mix cold water and ice to make 1 cup.
  • Add to gelatin and stir until slightly thickened.
  • Remove any remaining ice, and stir in yogurt and vanilla.
  • Pour into individual dessert dish and refrigerate 1- 1 1/2 hours.
  • Before serving, decorate with whipped topping and fruit.
