Blueberries, cream cheese,and bread bake in a creamy custard to create the best breakfast ever!

cooking spray
1 loaf French bread, cubed
1 ½ cups blueberries
2 (8 ounce) packages cream cheese, cut into 1/2-inch cubes
12 eggs
⅓ cup maple syrup
2 cups milk
1 ½ cups white sugar
3 tablespoons cornstarch
1 ½ cups water
1 ½ cups fresh blueberries
1 ½ tablespoons butter

Steps:

  • Coat a 9x13 inch baking dish with cooking spray. Place 1/2 of the bread cubes in dish; top with 1 1/2 cups blueberries. Scatter cream cheese over berries. Cover with remaining bread cubes. In a mixing bowl, whisk together eggs, maple syrup, and milk. Pour egg mixture over bread in pan. Cover, and chill overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake strata, covered, for 30 minutes. Remove cover, and bake for an additional 30 minutes.
  • While the strata is baking, prepare the blueberry syrup. Combine sugar, cornstarch, and water in a saucepan. Bring mixture to a boil over high heat; cook for 5 minutes. Pour in remaining 1 1/2 cups blueberries; continue cooking for 10 minutes. Remove from heat, and stir in butter. Serve warm over slices of the strata.

Egg mixture over bread slices topped with berries gives you delicious strata - a perfect breakfast recipe.

3 cups assorted fresh berries, such as blueberries, raspberries or cut-up strawberries
1 tablespoon granulated sugar
4 cups cubes (3/4 inch) whole wheat bread (about 5 slices)
1 1/2 cups fat-free egg product or 6 eggs
1/2 cup fat-free (skim) milk
1/2 cup fat-free half-and-half
2 tablespoons honey
1 1/2 teaspoons vanilla
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon powdered sugar, if desired

Steps:

  • In medium bowl, mix fruit and granulated sugar; set aside.
  • Heat oven to 350°F. Spray 12 regular-size muffin cups generously with cooking spray. Divide bread cubes evenly among muffin cups.
  • In large bowl, beat remaining ingredients, except powdered sugar, with fork or wire whisk until well mixed. Pour egg mixture over bread cubes, pushing down lightly with spoon to soak bread cubes. (If all egg mixture doesn't fit into cups, let cups stand up to 10 minutes, gradually adding remaining egg mixture as bread cubes soak it up.)
  • Bake 20 to 25 minutes or until centers are set. Cool 5 minutes. Remove from muffin cups, placing 2 stratas on each of 6 plates. Divide fruit mixture evenly over stratas; sprinkle with powdered sugar.

1/2 pound sliced fresh mushrooms
3 small zucchini, chopped
2 medium onions, chopped (about 1-1/2 cups)
1 medium green pepper, chopped
2 cups cubed fully cooked ham
2 garlic cloves, minced
2 packages (8 ounces each) cream cheese, softened
1/2 cup half-and-half cream
12 large eggs, lightly beaten
4 cups cubed day-old bread
3 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add the vegetables and ham; cook and stir until vegetables are tender. Add garlic; cook 1 minute longer. Drain and pat dry. , In a large bowl, beat cream cheese and cream until smooth. Gradually beat in eggs. Stir in the remaining ingredients and vegetable mixture., Transfer to two greased 11x7-in. baking dishes. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

8 slices whole wheat bread, cubed
3 cups sliced fresh mushrooms
1 medium red onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
8 eggs
8 egg whites
2 cups fat-free milk
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2/3 cup shredded Swiss cheese
1/2 cup shredded sharp cheddar cheese
1 tablespoon Dijon mustard
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon pepper

Steps:

  • Place bread cubes in a 13x9-in. baking dish coated with cooking spray; set aside., In a large skillet, saute mushrooms and onion in oil until tender. Add garlic; cook 1 minute longer. In a large bowl, combine the eggs, egg whites, milk, spinach, cheeses, mustard, salt, nutmeg, pepper and mushroom mixture; pour over top. 2 tablespoons butter
3 tablespoons honey
4 large eggs
1/2 cup whole milk ricotta cheese
3 tablespoons sugar
1 cup whole milk
1/4 cup florida orange juice
4 slices bread, torn into 1-inch pieces (about 4 cups)
275 g frozen mixed berries, thawed and drained

Steps:

  • Combine butter and honey and melt in microwave.
  • In a large bowl, using a whisk, beat the egg, ricotta and sugar.
  • Add milk, Orange Juice, butter and honey mixture. Stir to combine. Gently fold in bread and berries.
  • Place mixture into an 8×8-inch baking dish. Cover with plastic wrap and place in the refrigerator for at least 2 hours and up to 12 hours.
  • Preheat oven to 350°.
  • Bake the strata until golden on top and baked through; about 40 minutes.
  • Let stand for 5 minutes before serving. Spoon into dishes to serve.
