This gin-berry fizz is from Juli's Any Seltzer Cocktail Formula, featured in our magazine. Garnish each glass with a strawberry.

4 large hulled strawberries
1 teaspoon white sugar
3 ounces gin
1 (12 fluid ounce) can raspberry-flavored seltzer

Steps:

  • Muddle strawberries and sugar in a mixing glass until crushed. Add gin and stir to dissolve sugar. Strain into 2 ice-filled Collins or rocks glasses. Top with seltzer.

1 (10-ounce) bag frozen sliced strawberries, defrosted
2 tablespoons honey
1 (8-ounce) bag frozen blueberries
1 bottle Prosecco

Steps:

  • In a food processor, puree the sliced strawberries, with their juice, and honey until smooth. To assemble the drink: Pour a generous spoonful of the fruit puree into a champagne flute. Add a few frozen blueberries and top with Prosecco. Repeat with the remaining ingredients.

A scrumptious picnic pudding that can be assembled when you arrive

Number Of Ingredients 9

half a 375g pack sweet dessert pastry
1 egg white , beaten
3 tbsp flaked almonds
3 tbsp golden caster sugar
227g punnet of strawberries , preferably small ones
150g punnet of raspberries
splash of champagne
handful of mint leaves
113g tub Cornish clotted cream

Steps:

  • Preheat oven to fan 160C/conventional 180C/gas 4. Roll the pastry out on a floured surface to the thickness of a £2 coin. Cut out 12 circles of pastry to fit a bun tin, re-rolling trimmings as needed. Line the tin with the pastry rounds, then brush with egg white. Crumble over the almonds and sprinkle over 2 tbsp of the sugar. Bake for 20-25 minutes until golden and starting to go sticky. Leave to cool.
