1 cup chopped onion
1 (28-ounce) can pork and beans

1 (15-ounce) can kidney beans, rinsed and drained

2 tablespoons mustard
2 tablespoons molasses
1 teaspoon salt

Steps:

  • Preheat oven to 350°. In a skillet over medium-high heat, cook bacon, beef, and onion until meat is brown and onion is tender. Remove from heat and drain. Place in a greased casserole dish. Add beans and mix well. In a separate bowl, combine barbecue sauce, ketchup, sugars, mustard, molasses, salt, and chili powder and stir into beef mixture. Cover and bake for 45 minutes. Uncover and bake for 15 minutes longer, or until browned and bubbly. Note: If serving this savory baked casserole as a main course, offer hot cornbread and a green salad to make a full meal. Fun Fact: The Colorado River has wound its way through the various layers of the Grand Canyon walls for millions of years, carving a gorge of epic proportions. The nearly forty major sedimentary rock layers exposed in its walls and in the Grand Canyon National Park area range in age from about two hundred million to nearly two billion years old.
