RASPBERRY BASIL LIMONCELLO COCKTAIL

Number Of Ingredients 8

1 pint fresh raspberries, plus more for garnish
12 fresh basil leaves, roughly torn, plus sprigs for garnish
1 lemon, cut into sixths, plus wheels for garnish
1/4 cup simple syrup, chilled (more if you prefer the cocktail a little sweeter)
2 ounces Limoncello
4 ounces citron vodka
Crushed ice
Sparkling rose wine, chilled

Steps:

  • Combine the raspberries, basil, lemons and simple syrup in a small pitcher and muddle until the raspberries are mashed. Add the Limoncello and vodka. Let chill in the refrigerator for 30 minutes to allow the flavors to meld.
  • Put crushed ice into rocks glasses and add some of the raspberry mixture. Fill to the top with sparkling wine. Garnish with lemon and raspberries and basil sprigs if desired.

2 fluid ounces limoncello liqueur

1 splash lemon-lime flavored carbonated beverage
lemon slices or lemon twist for garnish

Steps:

  • Muddle lemon, fresh basil, and lemonade in a cocktail shaker.
  • Add limoncello and ice. Cover and shake well.
  • Strain basil-limoncello mixture into 2 champagne glasses. Top with Prosecco. Once the bubbles settle, add a splash of lemon sparkling water. Garnish with lemon slice or zest.

1/3 cup good bottled lemon curd
1 tablespoon honey
1/4 teaspoon pure vanilla extract
2 cups sliced strawberries (1 pint)
1 cup raspberries (1/2 pint)
1 cup blueberries (1/2 pint)
2 tablespoons sugar
3 tablespoons limoncello liqueur
1 banana, sliced
Fresh mint springs

Steps:

  • For the lemon yogurt topping, whisk together the yogurt, lemon curd, honey, and vanilla and set aside at room temperature.
  • For the fruit salad, carefully toss together the strawberries, raspberries, blueberries, sugar, and limoncello. Allow them to stand at room temperature for about 5 minutes to let the berries macerate with the sugar and liqueur. Gently fold the banana into the mixture.
  • Serve bowls of fruit with a dollop of lemon yogurt on top. Top each with a sprig of fresh mint.
