This comes from Yoshiaki Kirsana, a chef at a Houston Benihana restaurant. Yoshiaki was kind enough to submit this for publication in a local Methodist church's cookbook, published about 20 years agp.

Steps:
- Combine all ingredients in an electric blender.
- Mix at medium speed for about 5-8 seconds or until celery, ginger and onion are finely grated.
- Add dressing to the greens of your choice and toss.

Benihana Superb Salad Dressing; While eating at Benihanas I asked for the dressing recipe & they brought out a copy of it for me. I went home made it then adjusted a few things & I found it spot on. Decide for your self.

- Combine all ingredients in a blender. Mix at medium speed for 1-2 min or until finely grated. Enjoy with iceberg lettuce, tomato wedges & grated carrot.
- (I found that it will last in the fridge for about 2-3 days then it starts to change flavor. It does freeze well).
