1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can consomme
1 (10 1/2 ounce) can French onion soup
2 cups rice

Steps:

  • Put all ingredients into a saucepan.
  • Bring to a boil and simmer until rice is cooked and liquid is gone.

For my honeymoon, I went to Belize. As a vegetarian, I appreciated that every restaurant offered this dish. Besides being a complete protein, it tastes amazing and is simple to make! This version of the dish is credited to Elvi's Kitchen in Ambergris Caye.

1 cup dried kidney beans
5 cups water
2 tablespoons onions, finely chopped
1 garlic clove, minced
salt and pepper
1 pinch thyme
2 cups white rice
1 cup coconut milk
1 teaspoon olive oil (to saute onion and garlic)

Steps:

  • Soak the beans overnight. Cook them in a pressure cooker (or stovetop if you have patience and time), with 5 cups of water. Make sure the beans are clean, because you will need to use the cooking water when you are done.
  • In a large pot or dutch oven, saute the onion and garlic. Add the cooked beans and bean water, salt and pepper, and a pinch of thyme. Add the rice and coconut milk. Cover and cook over a low flame until rice is done. Make sure to stir it occasionally.

This is a traditional recipe for Belizean rice and beans. It is a staple in my country of Belize. Super delicious. The coconut milk gives it a very original flavor. It goes great with stew chicken and potato salad or cole slaw.

1 pound dry kidney beans
3 cloves garlic, minced
½ onion, chopped
½ red bell pepper, chopped
1 teaspoon vegetable oil
½ teaspoon salt
¼ teaspoon ground black pepper
1 cup white rice
¾ cup coconut milk
¾ cup water

Steps:

  • Place kidney beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain.
  • Transfer beans to a stockpot and add enough water to cover; bring to a boil. Add garlic to beans, reduce heat to low, and simmer until beans are tender, about 1 hour. Mix onion, red bell pepper, vegetable oil, salt, and black pepper into beans.
  • Cook and stir rice in a saucepan over low heat until toasted and fragrant, about 3 minutes. Add coconut milk, water, and kidney beans; bring to a boil. Reduce heat to low, cover, and cook until rice is tender, 30 to 40 minutes.

This is from Just Food. I haven't tried it yet. In Belize they use a small piece of salt pork in it and omit the salt. I think that could be very good. I have no idea how long it takes to make.

8 ounces dried red kidney beans
2 cups rice
1 cup thick coconut milk
1 medium onion, sliced
1/2 cup chopped green pepper
1 garlic clove (optional)
1/2 teaspoon salt (or a piece of salt pork)
1/2 teaspoon ground black pepper
1/4 teaspoon dried thyme

Steps:

  • Cover beans in water, and soak overnight.
  • Put beans in pot; add onions, bell pepper, garlic, and enough water to boil until beans are tender and whole. Add coconut milk, and seasonings.
  • Add rice to beans, and cook over gentle heat until liquid is absorbed. Stir gently with a fork, and add a little water as necessary, until rice is cooked.
