ROASTED BEETS

Ina Garten's Roasted Beets from Food Network are sweet, aromatic and slightly sharp from the raspberry vinegar and orange juice tossed in at the end.

12 beets
3 tablespoons good olive oil
1 1/2 teaspoons fresh thyme leaves, minced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons raspberry vinegar
Juice of 1 large orange

Steps:

  • Preheat the oven to 400 degrees.
  • Remove the tops and the roots of the beets and peel each one with a vegetable peeler. Cut the beets in 1 1/2-inch chunks. (Small beets can be halved, medium ones cut in quarters, and large beets cut in eighths.)
  • Place the cut beets on a baking sheet and toss with the olive oil, thyme leaves, salt, and pepper. Roast for 35 to 40 minutes, turning once or twice with a spatula, until the beets are tender. Remove from the oven and immediately toss with the vinegar and orange juice. Sprinkle with salt and pepper and serve warm.

My DH loves beets.........plain and simple. There are a numerous amount of ways to serve them. When cooked, grate some orange rind over the beets. Dress them with a vinaigrette. Add some sweet onion, parsley, and hard-boiled egg chunks for a hearty salad. Mix with vegetables.

Steps:

  • Wash the beets and trim off the tips and tops.
  • Place beets in a large pot of water.
  • Bring to a boil and cook till tender, approximately 20-45 minutes (time will differ depending on the size of the beets).
  • Remove from water when cooled and remove skin which will come off easily just by rubbing.
  • Slice and serve warm or at room temperature.

SIMPLE ROASTED BEETS

6 to 8 medium red or golden beets (about 2 pounds)
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 fresh herb sprig, such as thyme, rosemary, sage or parsley, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut off the leafy tops of the beets, leaving about 1/2 inch of stem, and reserve them for another use. Wash the beets well to remove all of the sand.
  • Toss the beets with the oil, 1 tablespoon water, 1 teaspoon salt and a few grinds of pepper in a large bowl. Transfer the beets to a large piece of foil, add the herb sprig if using and wrap the foil up into a packet. Put the packet on a baking sheet and roast until fork-tender, 40 to 50 minutes depending on the size of the beets. Carefully open the packet, watching out for steam. Let the beets cool for 5 minutes, then peel while still warm by rubbing off the skins with paper towels.
  • Slice and dress the beets as desired and serve.

SIMPLE, EASY PICKLED BEETS

During the winter when fresh beets are not available, this is what I make. You can use beets out of the garden, just cook them, peel and slice them and reserve some of the juice that you cook them in. I love the way these taste. And they will keep in an airtight container in the 'fridge for quite a while.

2 (15 ounce) cans of sliced beets
1 1/2 cups beet juice
1 large vidalia onion
1 cup sugar
1 cup apple cider vinegar

Steps:

  • Drain beets, saving the juice. Add water if necessary to make 1-1/2 cups of juice. Set aside.
  • Slice onion and combine with the beets in a glass or non-reactive bowl.
  • In a sauce pan, heat the beet juice and the vinegar until steaming (not boiling) then add the sugar.
  • Stir to dissolve the sugar and heat just to a boil.
  • Pour the hot juice over the beets and onions, stir and let cool.
  • When cool, cover and refrigerate. They taste best when they have sat for 24 hours.

EASY SWEET & SOUR BEETS

1/2 cup sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1/2 cup cider vinegar
2 tablespoons orange marmalade
1 tablespoon butter

Steps:

  • Place beets in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 25-30 minutes or until tender. Drain and cool slightly. Peel and quarter beets; keep warm. , Meanwhile, in another large saucepan, combine the sugar, cornstarch and salt; stir in vinegar. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Stir in marmalade and butter until melted. Reduce heat to low. Add beets; heat through.

PICKLED BEETS

This recipe was given to me many years ago by an elderly farmers wife and has been one of my 'must do' yearly canning recipes. If you have a large amount of beets, just keep repeating brine until your beets are all gone! Enjoy!

10 pounds fresh small beets, stems removed
2 cups white sugar
1 tablespoon pickling salt
1 quart white vinegar
¼ cup whole cloves

Steps:

  • Place beets in a large stockpot with water to cover. Bring to a boil, and cook until tender, about 15 minutes depending on the size of the beets. If beets are large, cut them into quarters. Drain, reserving 2 cups of the beet water, cool and peel.
  • Sterilize jars and lids by immersing in boiling water for at least 10 minutes. Fill each jar with beets and add several whole cloves to each jar.
  • In a large saucepan, combine the sugar, beet water, vinegar, and pickling salt. Bring to a rapid boil. Pour the hot brine over the beets in the jars, and seal lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

Roasting beets intensifies their flavor, but can take a long time. Here they're peeled, cut into small wedges, drizzled with oil, and seasoned with orange, garlic, ginger, and coriander before being wrapped in foil. They pick up flavor from the seasonings and bake in only 30 minutes.

2 pounds fresh beets (without greens), peeled and cut into 1/2-inch-thick wedges
2 cloves garlic, thinly sliced
1 (1 inch) piece fresh ginger root, peeled and thinly sliced
1 ½ teaspoons ground coriander
1 teaspoon salt
1 tablespoon olive oil
¾ teaspoon finely grated orange zest
3 tablespoons orange juice
1 tablespoon apple cider vinegar
2 tablespoons butter, cut into bits

Steps:

  • Preheat oven to 425 degrees F.
  • Place a large sheet of aluminum foil on a rimmed baking sheet. Scatter beets on the baking sheet along with garlic and ginger. Sprinkle with coriander and salt, and drizzle with oil. Cover with another sheet of aluminum foil and seal edges to form a packet.
  • Bake until beets are tender enough to be pierced with a knife, about 30 minutes,. Remove from oven and let beets steam in foil packet for 10 minutes. Unwrap packet and transfer beets, garlic, ginger, and any juices into a food processor. Puree with zest, juice, and vinegar until almost smooth with only small lumps. Add butter and puree until incorporated.
