Steps:
- In a saucepan, combine the brown sugar, cornstarch and salt; add pineapple and bring to a boil, stirring constantly until thick, about 2 minutes. , Add the beets, butter and lemon juice; cook over medium heat for 5 minutes, stirring occasionally.

BEET PINEAPPLE SALAD
My neighbor gave me this recipe and I think it is the best jello recipe I've ever eaten.

Steps:
- 1. Dissolve gelatin in 2 cups boiling water. Drain beets and pineapple. Use the juices and enough water to make up the other 2 cups of liquid. I tablespoon lemon juice can be included.
- 2. Cut beets in Julienne strips. When gelatin is parly set, add pineapple, beets, celery and nuts. Chill until set.

BEET SALAD
My Mom used to make this. I loved the sour cream topping :-)

- 1. In a large bowl, mix all 3 boxes jello with 4 cups boiling water. (Mix well) Add crushed pineapple, sweet pickle juice, and pickled beets. Mix well and pour into a 9 by 13 casserole dish. Place in refrigerator to set for a few hours.
- 2. In a medium bowl, mix together sour cream, mayonnaise, onion, celery and bell pepper. Mix well and let set for several hours or overnight in the refrigerator. Top salad with this dressing.
