PINEAPPLE BEETS

Number Of Ingredients 7

2 tablespoons brown sugar
1 tablespoon cornstarch
1/4 teaspoon salt
3/4 cup pineapple tidbits with juice
1 can (16 ounces) sliced beets, drained
1 tablespoon butter
1 tablespoon lemon juice

Steps:

  • In a saucepan, combine the brown sugar, cornstarch and salt; add pineapple and bring to a boil, stirring constantly until thick, about 2 minutes. , Add the beets, butter and lemon juice; cook over medium heat for 5 minutes, stirring occasionally.

My neighbor gave me this recipe and I think it is the best jello recipe I've ever eaten.

Number Of Ingredients 5

8 oz pkg rasberry gelatin
12 0z can(s) crushed pineapples
15 oz can(s) pickled beets
1 c chopped nuts
1 c chelery, chopped

Steps:

  • 1. Dissolve gelatin in 2 cups boiling water. Drain beets and pineapple. Use the juices and enough water to make up the other 2 cups of liquid. I tablespoon lemon juice can be included.
  • 2. Cut beets in Julienne strips. When gelatin is parly set, add pineapple, beets, celery and nuts. Chill until set.

Number Of Ingredients 6

2 packages lemon Jell-O gelatin
1 can shoestring beets or 1 can diced beet, reserve juice
1 can crushed pineapple, reserve juice
2 teaspoons vinegar
3 cups water, use juice from beets and pineapple (all together)
1 cup boiling water, to dissolve the jello

Steps:

  • Mix as you would any jello salad.
  • Serves 10.
  • From the Family Recipe Box, in Grandpa's typewriting.
  • As with many old recipes, it lacks a bit of detail in the instructions (Use sugar-free jello for diabetic or lowcarb menus).

1 pkg strawberry jello, small box
1 pkg cherry jello, small box
1 pkg raspberry jello, small box
4 c boiling water
1 can(s) 151/2 oz crushed pineapple with juice
2 c diced pickled beets (drained-veggie section in jar at market)
1/2 c sweet pickle juice
DRESSING
1 c sour cream
1 c mayonnaise
2 Tbsp chopped fine onion
2 Tbsp chopped fine celery
1 Tbsp chopped fine bell pepper

Steps:

  • 1. In a large bowl, mix all 3 boxes jello with 4 cups boiling water. (Mix well) Add crushed pineapple, sweet pickle juice, and pickled beets. Mix well and pour into a 9 by 13 casserole dish. Place in refrigerator to set for a few hours.
  • 2. In a medium bowl, mix together sour cream, mayonnaise, onion, celery and bell pepper. Mix well and let set for several hours or overnight in the refrigerator. Top salad with this dressing.
