I really like a crisp coating for my fried squash. I have had others and have been disapointed. Here are a few tricks I have learned to have a good outcome! It is so simple.

2 (8 inch) yellow squash
1/2 cup cornstarch
1/2 cup flour
1/2 teaspoon onion powder
beer
canola oil

Steps:

  • Wash and dry squash. Slice squash in 1/4 inch or less slices and spread on a platter. Lightly sprinkle salt over slices.
  • In a large cast iron skillet add enough oil to make it about 1" from the bottom and use medium high heat. If you don't have a cast iron skillet -- however you fry will be fine. In a medium bowl add cornstarch, flour, onion powder. and stir with a fork. Slowly add beer and keep stirring. Stop pouring beer when you have the consistancy of cream.
  • Pat squash dry (salting squash causes squash to sweat) Dip squash into batter and fry in oil. Put enough slices without touching, and turn after about 1-2 minute or until very light brown. Drain on paper towels and serve. I have soy sauce for dipping.

10 oz delicata squash
1 cup panko breadcrumbs, or whole wheat bread crumbs
½ cup parmesan cheese, grated
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon kosher salt
½ teaspoon black pepper
3 large eggs
1 cup all-purpose flour
¼ cup dijon mustard
1 tablespoon whole grain mustard
1 tablespoon honey

Steps:

  • Preheat oven to 425˚F (220˚C).
  • Cut 1 inch (2.5 cm) off the top and bottom of each squash, so you reach the seeds. Discard the top and bottom pieces. Slice the remaining squash into ¼-inch (½ cm) thick rounds.
  • Use a metal teaspoon to scoop out the seeds from the rings.
  • In a medium bowl, whisk together the bread crumbs, Parmesan, garlic powder, paprika, basil, oregano, salt, and pepper.
  • In another bowl, beat the eggs. Add the flour to another bowl.
  • Coat each squash ring in the flour, tapping off any excess. Next, coat in the eggs. Finally, coat in the bread crumb mixture, making sure to press the breadcrumbs into the squash to adhere. Place the coated rings on a baking sheet.
  • Bake the squash rings for 15-20 minutes, or until golden brown, flipping once halfway through cooking.
  • Make the honey mustard dipping sauce: In a small bowl, mix together the Dijon, whole-grain mustard, and honey. Use immediately or refrigerate in an airtight container until ready to serve, up to 3 days.
  • Serve the squash rings with the dipping sauce.

¾ cup flour

1 ½ cups hot sauce, I used Siete Traditional Hot Sauce and used the whole bottle

Steps:

  • Preheat your oven to 450°F. Chop up your cauliflower into bite sized pieces.
  • In a small bowl, combine the flour, spices, salt, pepper, and milk. In a separate bowl, pour in the panko bread crumbs.
  • Dip your cauliflower pieces into the wet mixture, then into the breadcrumbs. Set the pieces on a baking sheet lined with parchment paper. Bake for 20 minutes flipping halfway through.
  • In a separate bowl, combine the hot sauce with cream. Once the cauliflower is done, dip the pieces into the sauce and let it sit for a minute.
  • If desired, put the cauliflower back into the oven for 5-10 minutes at 400°F.
  • Serve hot with ranch, if desired.

6 cups Doritos Nacho Cheese-Flavored Tortilla Chips
1 cup all purpose flour
2 eggs, whisked
1 cup mayonnaise
½ cup sour cream
1 teaspoon garlic powder

½ teaspoon black pepper
¼ teaspoon salt
¼ cup blue cheese
½ cup hot sauce
½ cup butter, melted
¼ fresh chive, finely sliced

Steps:

  • Preheat your oven to 400 degrees. Place the doritos in a food processor (or use a large resealable bag and rolling pin to finely crush the chips) and blitz until the chips become a fine crumb. Transfer the pulsed chips to a bowl. Add the flour and eggs to their own respective bowls, then begin breading the chicken. Dip each piece of chicken in the flour, then the egg, then the chip crumbs and toss around to coat evenly. Repeat for each piece of chicken, then transfer to a parchment lined baking tray. Bake for 14 - 16 minutes, or until the internal temperature of the chicken reaches 165 degrees.
  • While the chicken bakes, start to make the 1UP sauce. In a food processor combine the mayo, sour cream, garlic powder, onion powder, pepper, salt, and blue cheese. Pulse well to combine evenly, then transfer to your serving bowl and set aside.

4 cups buttermilk
½ cup lard
1 cup flour
½ cup cayenne powder

2 tablespoons salt
2 tablespoons black pepper

Steps:

  • Combine all master spice mix ingredients and separate into three equal portions.
  • In a large bowl combine chicken wings, ⅓ master spice mix, the buttermilk. Cover and chill for as long as possible (4 hours to overnight).
  • Rinse the brined wing pieces and pat dry.
  • Mix the flour with another ⅓ of the master spice mix.
  • Dredge the chicken wing pieces in the flour/spice mixture. Shake off any excess. Set aside.
  • Heat your oil to 325˚F (170˚C).
  • Fry the wings for 8-10 minutes, until the internal temperature reaches 165˚F (74˚C). The wings will splatter so its a good idea to have a lid nearby!
  • Take the wings out and drain on a paper bag or paper towels.
  • Place the lard in a saucepan and sprinkle over the last ⅓ of your master spice mix. Once the lard is melted and warm, stir the mixture, and take it off the heat. Immediately baste your fried wings with the lard/spice mix and serve right away!

cloves from one head roasted garlic, mashed
1 tablespoon olive oil
8 ounces goat cheese (Chevre)
1 tablespoon fresh thyme leave, chopped
salt and pepper, to taste
1 1/3 cups bottled dark beer (341 ml bottle)
1 large egg, lightly beaten
1 cup all-purpose flour, plus extra
2 tablespoons melted butter
salt and pepper
16 zucchini or 16 other squash blossoms, pistils removed if desired
vegetable oil, for deep-frying

Steps:

  • To make the filling:
  • Combine garlic, olive oil, goat cheese and thyme in a small bowl. Mix until smooth, and season with salt and pepper.
  • For the blossoms:
  • In a bowl, whisk together beer and egg. Whisk in 1 cup of the flour and continue adding extra flour, 1 tablesppon at a time, until mixture has the consistency of thin pancake batter, Whisk in butter and season to taste with salt, pepper. Let rest 10 minutes.
  • Meanwhile, in a deep heavy pot fitted with with a deep-frying thermometer, heat 1 inch of oil to 375°. Stuff each blossom with a few tablespoons of the goat cheese mixture, and press petals closed.
  • Working quickly, in small batches, dip filled blossoms into batter, coating each completely; and fry, turning once, for 1 1/2 to 2 minutes, or until golden and crisp. Use slotted spoon to transfer blossoms onto paper towels to drain. Make sure the oil returns to 375° before adding each new batch of blossoms.
  • Sprinkle fried blossoms with salt and serve immediately.

1 acorn squash
1 butternut squash
2 cups ketchup chips
1 teaspoon salt
¼ cup maple syrup
¼ teaspoon chili flakes
2 tablespoons fresh chives
vegetable oil
1 cup cake flour
1 teaspoon salt
1 teaspoon baking powder
1 cup beer, chilled
1 egg

Steps:

  • Slice the acorn squash in half horizontally, then scoop out all of the seeds. Slice into ⅛-inch pieces and set aside. For the butternut squash, peel away the outer skin well and slice into similar sized slices.
  • For the ketchup chip salt, transfer the chips to a resealable plastic bag then crush them into fine pieces (use your hands, a rolling pin, or a kitchen mallet). Place the chips in a bowl, then mix in the salt. In a separate bowl, mix the maple syrup and chili flakes. Set both the chip salt and spiced maple aside.
  • In a large pot or Dutch oven bring your oil up to 350⁰F. While the oil heats, make your beer batter. In a large mixing bowl, add the cake flour, salt, and baking powder. Then pour in the cold beer, followed by the egg. Whisk well to incorporate.
  • When the oil has reached its temperature, begin coating the slices of squash in the batter, making sure to shake off any excess, before carefully placing in the oil. Deep-fry the squash for 2 to 3 minutes, being mindful not to overcrowd the pot (this will drop the temperature), then transfer to a paper towel lined sheet tray to absorb any extra oil. Season immediately with a liberal sprinkling of the ketchup chip salt. Continue frying in batches until all of the squash is cooked.
  • To serve, place the fried squash in a paper-towel lined serving basket. Sprinkle on some extra chip salt if desired, and garnish with finely sliced chives. Serve with the spiced maple syrup for dipping and enjoy!
