I can still remember the smell in the house when my mom would make these before her and my dad had a card party back in the late 70's and 80's or when she'd make them to take to work potlucks. They are out of this world good. They go amazingly when served with some kind of cheese ball. The recipe can be made stove top or semi stove top then finished in a crock pot. I promise, you and your guests won't be disappointed. Recipe is from my mom.

1 pound(s) lean ground beef
1 cup(s) ketchup
1 cup(s) beer
4 tablespoon(s) sugar
4 tablespoon(s) apple cider vinegar
4 tablespoon(s) worcestershire sauce
1 small minced onion (optional)
- salt and pepper to taste

Steps:

  • ****I should note right off the bat that I always double or triple this recipe. There is no way to go to a party or potluck with just 1 pound of these because they are loved way too much. If you are making them just to munch on at home then maybe, but even then you'll wish you had made more for leftovers****
  • Season ground beef with salt and pepper and make meatballs the size you want them. I tend to make them somewhat smaller, sort of bite size so you can pick them up with a toothpick easily.
  • Brown them in a skillet or in the oven but do not cook them all the way through. I do mine in a skillet and you have to do them in batches. Do not over crowd the skillet. Drain them onto a paper towel as you pull them out of the skillet. If you're using the optional minced onion you can add them to the last batch of meatballs or throw them in with the sauce. I've done both.
  • Mix the remaining ingredients in a pot and bring to a boil. Add meatballs and simmer for 3 hours. If using the Crock Pot method, at this point you will transfer the already boiled mixture and meatballs to a Crock Pot and put them on high until they are cooking at a boil again, about 20-30 min, then turn them to low and cook for 3-4 hours more. Enjoy!
  • **Don't forget, these are WONDERFUL served along with your favorite cheese ball. I don't know what it is but the two flavors just marry so nicely** Can also be used for cocktail wienies!

I came across a recipe for "beer dip" a few years ago that I tweaked to turn into this wonderful cheese ball. It has since become my standard cheese ball, requested at family functions. It's rolled in cheddar cheese, because that's my family's preference-- I'm sure it could be rolled in chipped beef or nuts if you prefer. Cooking time includes time to chill and form the cheese ball.

Number Of Ingredients 6

1 bunch green onion, chopped (4-6 stalks)
2 (8 ounce) packages cream cheese, softened
1 (1 ounce) envelope ranch dressing mix
3 cups shredded sharp cheddar cheese, to taste
1/3 cup beer
hearty cracker (to serve with cheese ball)

Steps:

  • Reserve one cup of cheese.
  • In a medium bowl, combine remaining ingredients (I use a hand mixer to make sure it's combined well).
  • Push mixture together in the center of the bowl, making a ball shape, cover bowl, and refrigerate 2 hours or longer.
  • Place a large strip of plastic wrap on the counter top.
  • Sprinkle remaining cup of cheese over the center of the plastic wrap.
  • Place cream cheese mixture in the center of the shredded cheese, and use plastic wrap to mold into a ball.
  • Roll the ball to completely cover in shredded cheese.
  • (I often use more than one cup of cheese to completely cover the cheese ball).
  • Wrap the formed cheese ball in plastic wrap and refrigerate one hour or until serving.
  • Serve with hearty crackers such as Wheat Thins or Triscuits.

MUSSELS IN MEXICAN BEER

Simple, de-lish and ready in less than 10 minutes, this recipe should be made first in any menu so you and yours can enjoy mouthfuls of mussels while you cook.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 cloves garlic, cracked away from skin and crushed
1 small onion, chopped
1 jalapeno, seeded and chopped
A couple pinches salt
2 1/2 dozen mussels, scrubbed and beards removed
1/2 bottle dark Mexican beer, such as Modelo Negro or Dos Equis
1 (15-ounces) diced tomatoes
2 tablespoons chopped flat-leaf parsley or cilantro, your preference

Steps:

  • In a deep skillet with a cover preheated over medium high heat, add oil, garlic, onion and jalapeno. Season with salt. Saute 2 minutes. Arrange mussels in the pan. Pour in beer and tomatoes and shake the pan to combine. Cover pan and cook 3 minutes or until mussels open. Remove from heat and spoon sauce down into shells. Garnish with parsley or cilantro. Serve immediately from the pan.

4 strips bacon
1 medium red onion, diced
2 (28-ounce) cans baked beans
1/4 cup ketchup
1/4 cup spicy brown mustard
3 tablespoons molasses
1 (12-ounce) bottle lager beer

Steps:

  • Preheat oven to 400 degrees F.
  • Slice each slice of bacon into 4 pieces. Cook in a large pot over medium heat, until fat is rendered, but bacon is not yet crispy.
  • In pan with bacon fat, cook chopped onion until soft, about 5 minutes. Add remaining ingredients, stir to combine. Bring to boil, then reduce heat and simmer for 10 minutes.
  • Carefully transfer with a ladle to a 2-quart casserole dish. Place on foil-lined baking sheet and bake 45 minutes to 1 hour, or until beans are desired thickness.

1 cup grape juice
1 cup apple jelly
1 cup ketchup
1 can (8 ounces) tomato sauce
1 package (64 ounces) frozen fully cooked Italian meatballs
Minced fresh parsley, optional

Steps:

  • In a small saucepan, combine juice, jelly, ketchup and tomato sauce. Cook and stir over medium heat until jelly is melted., Place meatballs in a 5-qt. slow cooker. Pour sauce over the top and gently stir to coat. Cover and cook on low for 4-5 hours or until heated through. If desired, sprinkle with parsley.

I had to take a crash course in "Know Your Beer 101" (thanks to Aaar friends in the Q & A section) before being able to post this recipe. This one came from another website, I just can't remember the name of it. It was posted on that site by Betty Copeland (her name is at the bottom of my print out). But the recipe is so simple to prepare and sounds delicious. I'll let you know because it's now the weekend, and there's no time like the present to try out a new recipe! Ok, I'm finally editing this recipe because I made it, and all I can say is YUMMY! Since I scorched my rice (I know, I know...first time I've ever done that..but yes, it happened) I served it over toast and it was so good! The only thing I did differently was to use a whole bottle of beer add approx 1 cup of water because I had a little over 3 lbs of steak.

1 (12 ounce) can beer
1 (1 1/4 ounce) envelope onion soup mix
1 (7/8 ounce) envelope brown gravy mix
1/3 cup flour
2 1/2-3 lbs round steaks

Steps:

  • In slow cooker mix well, beer, onion soup mix and brown gravy mix.
  • In plastic bag shake flour with round steak, cut into 1 1/2 inch cubes.
  • Empty bag contents into slow cooker.
  • Gently stir to coat meat with liquid.
  • Cover and cook on low (180 degrees to 200 degrees) for about 8 hours.
  • Serve over bed of rice or noodles and with hard rolls.
