BEEFY MAC AND CHEESE

Kosher salt
8 ounces medium pasta shells
3 tablespoons unsalted butter
1 small onion, chopped
1 tablespoon tomato paste
1 tablespoon chili powder
8 ounces ground beef
2 tablespoons all-purpose flour
1 cup low-fat (1 percent) milk
2 1/2 cups shredded Mexican cheese blend (about 8 ounces)
2 tablespoons breadcrumbs (preferably panko)
2 scallions, thinly sliced

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until soft, about 5 minutes. Add the tomato paste and chili powder and stir until brick red, about 2 minutes. Add the beef and cook, stirring, until browned, 4 minutes. Stir in 1/2 teaspoon salt. Spread the mixture in a 3-quart flameproof baking dish. Preheat the broiler. Melt the remaining 2 tablespoons butter in a pot over medium heat. Add the flour and cook, stirring, 1 minute. Add the milk and reserved cooking water, bring to a simmer and cook, whisking, until thick, 2 minutes. Add 2 cups cheese, the cooked pasta and 3/4 teaspoon salt and stir until the cheese melts. Spread over the beef mixture. Mix the remaining 1/2 cup cheese and the breadcrumbs; sprinkle over the pasta mixture and broil until golden. Top with the scallions.

Steps:

  • In 4-quart saucepan, brown ground beef until almost done; drain off excess fat. Add onion and garlic and cook until onion is tender but not brown.

  • Add elbow macaroni and return to a boil.

This is a favorite recipe that is similiar in taste to lasagna. I like to use fresh basil and fresh garden onions and peppers. It's very easy to make and it makes a large 9x13 pan which is great to take to a potluck or feed several family members.

1 box elbow macaroni (i use whole wheat)
1 - 1 1/2 lbs. ground beef or ground turkey
1 lg. or 2 smaller cans crushed tomatoes (3 cups)
1/2 cup fresh chopped basil
1-2 tsp. oregano
1 tsp. cumin
garlic powder
chopped garlic
1 1/2 - 2 cups shredded monterrey jack or cheddar cheese, your choice
1 1/2 - 2 cups shredded mozzarella cheese
1 chopped onion (i like to use green onions with tops when i have them, so i'll use 3 or 4 of them, depending on size)
1 chopped bell pepper
olive oil, extra virgin
salt and pepper, to taste

Steps:

  • 1. Preheat oven to 350 degrees. Brown meat in a bit of extra virgin olive oil, along with chopped onions, pepper and garlic; add tomatoes. Meanwhile, cook pasta according to package directions. Spray 9x13 baking dish with cooking spray. Drain pasta, add to baking dish, pour meat mixture over while hot, add mozzarella cheese and some of the other cheese, about 1/2 of it. Mix well. Top with remainder of cheese. Bake until bubbly, about 10-15 minutes. When serving, top with more cheese, if desired. Serve with a salad and some garlic bread, if you like. It's really good left over, too.

I wanted something a little different from the regular Macaroni and Cheese or "Hamburger Helper" type dish, so I visited my pantry and refrigerator and came up with this dish. This, along with a small salad and rolls made a great meal. My lady friends enjoy it....

1/2 lb lean ground beef
1 large vidalia (or other sweet) onion, chopped
1 can(s) diced tomatoes (14.5 ounces)
1 can(s) ro-tel tomatoes and green chilies (10 ounces);i use chunky, but you can use original, mild or hot
1 box macaroni & cheese dinner (7.25 ounces)
1 Tbsp ketchup
1-2 dash(es) hot sauce (optional)
TOPPING (OPTIONAL): SLICED TOMATOES AND 1/2 CUP GRATED CHEESE

Steps:

  • 1. Gather all ingredients for the recipe.
  • 2. In a medium large saucepan, bring 6 cups salted water to a boil. Empty the macaroni into the boiling water (Set cheese packet aside.). Cook for 5-7 minutes (til "Al dente". Drain and set aside.
  • 3. Meanwhile, spray a large frying pan with Pam and add the beef and chopped onion. Cook over medium-high heat until the beef is brown. Remove any greese from the pan.
  • 4. Add the can of diced tomatoes and can of Ro-Tel tomatoes and green chilies to the beef and onions. Stir well and add the Ketchup and hot sauce (if desired). Turn heat down to medium and cook for 20 minutes.
  • 5. Add cheese packet and stir until blended well. Stir in the cooked macaroni and mix well. Heat through about 3-4 minutes.
  • 6. Spoon the glorified Tomato Beefy Mac'N Cheese into a serving dish. Before serving, top with grated cheese and fresh tomato slices, if desired. Enjoy!
  • 7. ** I make a couple of hamburger patties or a small meatlof with the other half-pound of ground beef.

Everyone in the family seems to like this casserole. I like that I can make it 2 to 3 days ahead of time and leave it in the frig until cooking in the oven. I have diced up pepperoni and put it in here with mushrooms for a change and the kids call it pizzaroni. lol

1 lb elbow macaroni
1/2 to 1 lb lean hamburger
1 medium spanish onion, chopped medium (optional)
2 to 3 clove crushed garlic
1 can(s) 1 (28 ounce) can stewed tomatoes with juice
1 can(s) 1 (10 3/4 ounce) can campbell's cheddar cheese soup
2 to 4 c grated cheddar cheese, or slices to cover top of casserole
salt and pepper to taste

Steps:

  • 1. This recipe can be made vegetarian, leave out the hamburger and add 2 cups of fresh mixed vegetables,i.e. broccoli, mushrooms,spinach, carrots, etc.
  • 2. Cook elbow macaroni "Al dente",according to instructions on box,drain, add to large casserole.
  • 3. Fry hamburger with onion and garlic until no longer pink, drain any fat through colander, add drained mixture to casserole.
  • 4. Add cheese soup, no water, and tomatoes with juice to casserole.
  • 5. Add salt and pepper to taste. Mix thoroughly to evenly distribute ingredients through out casserole.
  • 6. Spread grated or sliced cheddar evenly over top of casserole.
  • 7. Preheat oven to 400 degrees, bake, uncovered for 30 minutes or util bubbling around edges of casserole and cheese topping is melted and slightly browned.
  • 8. If making ahead of time, add 5 to 10 minutes to cooking time to heat refrigerated casserole completely through. Watch that cheese does not over brown. I leave foil on for the first 20 minutes of cooking time if I have made this a day or two before cooking. Then I remove foil for the last 20 minutes.

  • Cook pasta to al dente. Preheat oven to 300°. While pasta is cooking, cook the onions and garlic in olive oil until the onions are soft, translucent, and beginning to brown (about 5 minutes). Add celery and cook another 2-3 minutes. Add ground beef with chili and cayenne and cook until meat is fully browned.Add corn and mix completely. Turn off heat and stir in pasta. Once everything is thoroughly mixed, add all but 2oz of the cheese and stir to combine. Top with the remaining cheese and place in the oven for 12-15 minutes to melt the cheese.

This recipe came about because I had left over macaroni & cheese, and wanted to remix it to create a new dinner idea. I decided to sort of make my own HAMBURGER HELPER type meal idea. I knew I needed something to beef up the flavor of plain Mac & Cheese, so I decided to use dry chili seasoning mix, it was the right choice, then adding in the chopped veggies and spices was a perfect combination. You could just eat it from the skillet if you so desired, or be creative and stuff it in a veggie cup like tomatoes, or peppers or even squash. We loved it, & had enough to share with my neighbor.

4 medium tomatoes, halved if large or tops removed if medium size
4 medium poblano peppers, tops removed & seeded,split in half

  • PREHEAT OVEN TO 375 DEGREES F. These are some of the main ingredients used in this recipe
  • Chop vegetables by hand or in food processor. Process tomatoes and peppers, by scooping out center of tomatoes with a spoon, then seeding and removing membrane from peppers. Spray a 9 X15 size dish with cooking spray and set aside till needed. Reserve some of the green onion tops to garnish vegetable cups when cooked.
  • Add both ground chuck and chopped veggies to a large bowl. NOTE: I did not add salt to this recipe because of the spices I used. So use your own judgement.
  • Now add in both packs of the dry chili mix packages. Mix together until throughly combined.
  • Now add to a large skillet and cook over medium high heat,until no pink remains. Drain any excess accumulated liquids. Then add in spices & stir to mix. continue to cook.
  • Now add in the cooked macaroni and cheese and stir to mix together and continue to cook to allow flavors to blend.
  • When mixture looks like this you can serve and eat if desired, but I chose to stuff the mixture into the tomatoes and poblano peppers.
  • Fill the peppers and tomatoes with meat mixture then top with shredded cheese. Pour in the both cans of diced tomatoes. Cover with a lid or foil and place in preheated oven to cook for 50 minutes. Then remove cover and continue to cook an additional 10 minutes or so.
  • Serve and enjoy. With this recipe you can use the idea of what I did, you may not have as much as I used, but it is the idea of REPURPOSEING A LEFTOVER TO CREATE SOMETHING TOTALLY DIFFERENT. Hope you like this recipe, we sure did. Add a Salad and Dinner Rolls or some Garlic Bread for a complete meal.
