½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground cumin, or to taste

½ pound ground beef
½ cup chopped sweet onion, or more to taste
1 clove garlic, minced
6 corn tortillas
2 tablespoons vegetable oil
2 cups refried beans
2 cups shredded lettuce, or as desired
1 ½ cups shredded Cheddar cheese
1 tomato, diced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix garlic salt, onion powder, garlic powder, cumin, and black pepper together in a small bowl.
  • Heat a large skillet over medium-high heat. Cook and stir beef, onion, and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Keep warm while preparing tostada shells.
  • Brush oil over both sides of tortillas and arrange on a baking sheet.
  • Bake tortillas in preheated oven until crisped on top, about 5 minutes. Flip tortillas and continue baking until other side crisps, 2 to 3 minutes more.
  • Heat refried beans in a saucepan over medium-low, stirring regularly until hot, about 5 minutes (see Cook's Note).
  • Divide refried beans between tostadas and spread over one side of each; spoon ground beef mixture over the beans. Top each tostada with lettuce, Cheddar cheese, and diced tomato.

2 tablespoons vegetable oil
1/2 small red onion, chopped
2 cloves garlic, minced
3/4 pound ground beef
Kosher salt
2 tablespoons tomato paste
1 tablespoon chili powder
1 15-ounce can refried beans
1/3 cup sour cream
8 corn tostadas (flat, hard taco shells)
1 1/2 cups shredded monterey jack cheese
Shredded lettuce, hot sauce and/or cilantro, for topping

Steps:

  • Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook, stirring, 1 minute. Add the beef and 1/2 teaspoon salt and cook, breaking up the meat, until browned, about 3 minutes. Add the tomato paste and chili powder and cook, stirring, about 2 more minutes.
  • Meanwhile, heat the refried beans in a small saucepan. Thin the sour cream with about 2 tablespoons water in a small bowl.
  • Spread the beans on the tostadas, then top with the beef and cheese. Drizzle with the sour cream. Top with lettuce, hot sauce and/or cilantro.

1 teaspoon smoked paprika
1 teaspoon dried Mexican oregano
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground coriander
½ teaspoon ground cumin
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 (2 pound) boneless beef chuck roast
1 tablespoon extra-virgin olive oil
½ cup chopped onion
1 ½ teaspoons minced fresh garlic
1 cup beef stock
1 ½ cups chopped tomatoes, divided
1 medium orange, juiced
½ medium lime, juiced
6 each crispy tostada shells
2 cups refried beans, warmed
2 cups shredded lettuce
1 ½ cups shredded Cheddar cheese
3 tablespoons salsa, or to taste
3 tablespoons sour cream, or to taste

Steps:

  • Prepare spice rub: Combine chili powder, paprika, oregano, garlic powder, onion powder, coriander, cumin, salt, and pepper in a bowl.
  • Rub 1 tablespoon of the spice rub on each side of the chuck roast. Set remaining spice rub aside for later.
  • Heat oil in a skillet over medium heat. Place seasoned roast in the hot oil and brown for 2 to 3 minutes per side. Remove to a plate and keep warm.
  • Cook onions in the same skillet, stirring frequently, until they begin to turn clear, 2 to 3 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in beef stock, 1/2 cup chopped tomato, orange juice, lime juice, and remaining spice rub.

  • Remove the visible fat from the meat and discard. Shred the meat with two forks. Place shredded beef back into the skillet with about 3/4 cup of the pureed tomato sauce. Add more, if desired, to adjust the consistency. Refrigerate any unused tomato sauce in a sealed container for another use, if desired.
  • To assemble tostadas, spread about 1/3 cup refried beans on each tostada shell. Top with layers of shredded beef mixture, lettuce, Cheddar cheese, and reserved chopped tomatoes. Drizzle with salsa and add a dollop of sour cream and guacamole. Garnish with cilantro and serve with lime wedges.

One 2-pound boneless beef brisket
1 large white onion, quartered
Kosher salt
3/4 cup olive oil
6 tablespoons distilled white vinegar
1/4 cup fresh lime juice
1/4 cup minced red onion
2 tablespoons dried crumbled Mexican oregano
Freshly ground black pepper
1 cup seeded chopped cucumber (from 1/2 English or hothouse cucumber)
1 cup seeded chopped tomatoes (from 2 tomatoes)
1/2 cup capers, drained
1/4 cup chopped fresh cilantro
4 radishes, finely chopped
12 corn tortillas
2 avocados, halved, pitted, peeled and sliced, for serving

Steps:

  • Put the brisket in a large pot and fill with enough water to cover the meat by an inch. Add the onion quarters and 1/4 cup salt. Bring to a boil. Reduce the heat to medium and simmer partially covered until the brisket is very tender, 2 1/2 hours. Add more water if needed to keep the meat covered. Turn off the heat and let the brisket cool in the cooking liquid to room temperature. Drain the brisket, discard the water and cool completely.
  • Meanwhile, prepare the vinaigrette by whisking the olive oil and vinegar in a medium bowl until well combined. Add the lime juice, red onion and oregano and whisk again. Season the vinaigrette with salt and pepper.
  • Shred the brisket into a large bowl. Add the cucumbers, tomatoes, capers, cilantro and radishes and toss to combine. Add the vinaigrette and toss to coat. Season with additional salt and pepper if needed.
  • To make the grilled tostadas: Heat a grill pan on the stovetop over medium-high heat. Place a corn tortilla onto the hot pan until the tortilla is crisp with a slight char. Cook for about 5 minutes each side. Scoop the shredded beef salad onto the grilled tostada and garnish with some avocado slices.

Steps:

  • Cook the beef:
  • Fill a large pot with 12 cups water; stir in 6 Tbsp. salt. Add beef, onion, garlic, peppercorns, cumin, and cloves. Bring to a simmer and cook, partially covered, until beef shreds easily with a fork, 1 1/2-2 hours. Drain, then transfer to a large bowl and let cool. Using 2 forks or your fingers, coarsely shred beef. Season with salt.
  • Finish the beef salad:
  • Add onion, lime juice, pineapple juice, and oregano to beef mixture and mix well. Season with salt. Let sit at least 1 hour at room temperature or chill up to 1 day. Stir in radishes, chiles, cilantro, and chives just before using.
  • Assemble the tostadas:
  • If frying tortillas, fit a large skillet with candy or deep-fry thermometer; pour in oil to measure 1". Heat over medium-high until thermometer registers 375°F. Steps:

  • Combine the mango, red onion, cilantro, lime juice, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl; set aside.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until it starts browning, about 2 minutes. Stir in the tomatoes, chile powder and 3/4 teaspoon salt. Continue to cook until the beef is cooked through and the sauce is slightly reduced, about 2 minutes.

1 teaspoon Wagyu Beef Mixture: Kosher Salt

3 Salsa: Roma Tomatoes (small diced)
1/2 Red Onion (minced)

Steps:

  • PREPARING THE BRAISED FULLBLOOD WAGYU BEEF:Heat 2 tablespoons grapeseed oil in a large Dutch oven (or pan) over medium-high heat. Season the Fullblood Wagyu bottom round steak with kosher salt and freshly ground black pepper. Once the oil is hot and slightly smoking, add in the steak. Sear the steak on each side for 3-4 minutes to get a nice brown crust on both sides.Add in the quartered sweet onion, beef stock, and bring to a simmer. Reduce the heat to low, and cover the Dutch oven with a lid. Cook on low (braising the beef) for 3 hours. Remove the Wagyu beef from the Dutch oven and place it in a bowl.Shred the beef with two forks.
  • PREPARING THE WAGYU BEEF MIXTURE:In a medium size bowl, mix together the shredded Wagyu beef, chopped fresh oregano, lime juice, kosher salt, ground cumin, and minced garlic. Let the Wagyu beef mixture marinate for 15 minutes.
  • PREPARING THE SALSA:Mix together the diced Roma tomatoes, minced garlic, minced cilantro, seeded and minced jalapeno, kosher salt, lime juice, and minced red onion. Mix together, and reserve.
  • PREPARING THE ONIONS AND CRISPY WAGYU BEEF:Discard the braising liquid and onions from the Dutch oven. Return the Dutch oven to medium-high heat. Add in the julienned onions, butter, and 2 teaspoon of kosher salt. Cook the onions for about 10 minutes until caramelized. Remove the onions from the Dutch oven, and place them in a bowl. Reserve.Add in 3 tablespoons of grapeseed oil to the Dutch oven. Once the oil is hot add, in the shredded Wagyu beef mixture (drain off the lime juice if there is any standing in the bowl). Let the beef fry in the oil for 2-3 minutes until crispy. Use a slotted spoon to remove the beef from the Dutch oven, and mix it with the caramelized onions.Fry each tortilla until golden brown on both sides. Transfer the fried tortillas to a plate with paper towels, and allow them to drain.Repeat the process until all of the tortillas are fried.
  • PREPARING THE TOSTADAS:Heat a large saute pan over medium-high heat. Add in the grapeseed oil.Once the oil is hot, add in one corn tortilla in at a time.
  • FINAL STEPS:Lay down the fried corn tortillas, and divide the onions and crispy Wagyu beef between the tortillas.Top with shredded lettuce, salsa, crumbled Cotija cheese, and crema. Put a few slices of avocado on each tortilla. Serve immediately, and enjoy!

These are delicious and so easy to make! They remind me of Navajo Tacos that my mom made when I was growing up. The texture of the tostada is so thick and delicous- very filling. We love all the recommended toppings listed. We usually don't have all on hand. I've also substituted leftover shredded beef for the ground beef and they were delicious too! 5 teaspoons baking powder
1 1/4 cups milk
1 lb ground beef
2 garlic cloves, minced
1 (4 ounce) can diced green chilies
2 tablespoons taco seasoning

1 (16 ounce) can refried beans
chopped tomato
shredded lettuce
sliced olive
shredded cheddar cheese

Steps:

  • In a large bowl, combine flour and baking powder; add milk and form a soft dough. Knead until mixed thoroughly. Cover and let rest 30 minutes.
  • Meanwhile, brown beef and garlic in large skillet until meat is no longer pink; drain well.

Steps:

  • 1. Warm about 2 tablespoons of olive oil in a small skillet. Once the oil is hot and shimmering, slide in a tortilla. After half a minute, carefully flip the tortilla over and cook another half minute. When golden, remove from the skillet to a paper towel-lined plate to drain. Repeat with remaining tortillas. 2.   • 1. Cook up your meat & add seasoning while cooking. Drain grease off and then add your tomatoes and jalapeno's.
  • 2. Heat up your beans in a pan till they are nice and hot. Get your tostadas and smear on a tablespoon or more of beans then top with meat mixture.
  • 3. Now, layer all the other goodies....I go with cheese first because I want it to melt into the meat. Then, lettuce, sour cream, tomatoes, olives, a little more cheese and then some hot sauce.
  • 4. Don't let these fool you. They are very filling and will serve as a meal. At least they do in our house. Now my husband has a couple of them but I am good with just one. Splurge and get some Mexican Sangria (non-alcoholic) or Mexican pop from your local Mexican restaurant...always fun to serve with it.

I found this recipe on the parents.com website and decided to try it for my family. Although I couldn't find tostada shells, I substituted taco shells. With 2 kids, probably made for easier eating anyway. My family loved this and have requested I make this again! We also added Sour Cream and although I didn't have any guacamole, I think it would be a great addition to this recipe. Fix them up which ever way suits your taste. The meat is delicious!

1 1/2 lbs boneless beef round steak
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup lime juice
3 garlic cloves, seeded and finely chopped

1/8 teaspoon cayenne pepper
12 taco shells
3/4 cup fat-free refried beans
1 1/2 cups lettuce
1 cup reduced-fat Mexican cheese blend, shredded
1 cup salsa

Steps:

  • Sprinkle steak with salt and pepper. Place 3 tablespoons of the lime juice, garlic, jalapeno, onion, chili powder, cumin and cayenne pepper in a slow cooker. Place beef on top and cook on high for 6 hours or low for 8 hours.
  • Remove beef to a cutting board and when cool enough to handle, shred and place in a large bowl.
  • Strain remaining liquid and add the strained liquid and remaining 1 tablespoon of lime juice to beef and stir to combine.
  • Warm shells in oven according to directions. While Tostadas are baking, heat refried beans in microwave for 1 1/2 minutes on high or until warm.
  • Top shells with beans, meat, lettuce, cheese, and salsa and enjoy.
