1 1/2 lbs ground beef
1 onion, chopped
1 green bell pepper, seeded and diced
1 -2 tablespoon fresh minced garlic
1 large jalapeno pepper, seeded and finely chopped (optional)
2 -4 teaspoons cumin (or to taste)
salt and black pepper
2 (10 ounce) cans red enchilada sauce
1 (15 ounce) can black beans (rinsed and well drained)
2 cups frozen corn
9 corn tortillas
2 cups shredded Mexican blend cheese, divided (can use more or less)
2 plum tomatoes, finely chopped
sour cream
green onion
coarsley crushed tortilla chips

Steps:

  • Set oven to 350 degrees.
  • Grease an 11 x 7-inch baking dish.
  • In a large skillet brown the ground beef with onion, garlic, green bell pepper and jalapeno (if using) until the beef is no longer pink; drain any fat then return to skillet and add in one can of enchilada sauce, black beans, corn and cumin.
  • Bring the ground beef mixture to a boil; reduce heat to medium-low and simmer for 20-25 minutes stirring occasionally, then season with salt and lots of black pepper.
  • Arrange 3 corn tortillas in the bottom of the baking dish, cutting as needed to cover bottom of the dish.
  • Spread 1/4 cup canned enchilada sauce over the tortillas in the baking dish.
  • Cover the sauce with 1/3 of the cooked ground beef mixture, then about 1/3 of the shredded cheese.
  • Repeat the layers twice but omitting the final cheese layer on top.
  • Drizzle any remaining canned enchilada sauce (from the second can) on top.
  • Cover with foil and bake in a 350 degree F oven for 25 minutes.
  • Remove foil and sprinkle with more cheese (any amount desired) then return to oven and bake for another 5 minutes or until the cheese has melted.
  • Let stand 10-15 minutes before slicing.
  • Top with sour cream and/or tomatoes, green onions and crushed tortilla chips if desired.

1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup frozen whole kernel corn, thawed
1 package (1 oz) Old El Paso™ 25% Less Sodium Taco Seasoning Mix
10 corn tortillas (6 inch)
2 cups shredded reduced-fat four-cheese Mexican cheese blend (8 oz)
1/4 cup chopped fresh cilantro
Light sour cream

Steps:

  • Spray 5-quart oval slow cooker with cooking spray. Spoon 1/2 cup enchilada sauce into bottom of slow cooker; spread evenly. In small bowl, reserve 1/2 cup enchilada sauce; set aside.

1 1/2 teaspoons dried oregano, crumbled
1/2 teaspoon freshly ground black pepper
One 14-ounce can beef broth
1 3/4 cups canned crushed tomatoes with added puree
1 cup lager beer
3 canned chipotle chiles in adobo sauce, finely chopped
1 tablespoon adobo sauce, from canned chipotle chiles
One 1-pound package frozen corn kernels, thawed
1 1/4 pounds shredded sharp Cheddar cheese
1 pound shredded Monterey Jack cheese
24 6-inch corn tortillas
One 29-ounce can refried beans

1 can (4.5 oz) Old El Paso™ chopped green chiles
1 cup sour cream
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook beef and onion, stirring occasionally, until beef is thoroughly cooked; drain. Stir in both pouches enchilada sauce (from dinner kit), the seasoning mix (from dinner kit), water and chiles; heat until hot.

This hot and hearty party dish comes from somewhere deep in Texas, not far from the Rio Grande. There, authentic flavors from South of the border get employed North of the border in easy, crowd-pleasing American-style main dishes called - in fractured Spanish - "casserolas". Chipotle chiles - smoked red jalapenos canned in a tangy sauce called adobo - generate a sultry heat that enlivens the lasagna-like layers of meat, beans and tortillas. Garnish each portion with crisp shredded lettuce and a cooling dollop of sour cream and set out a tub of good beers on ice. 1 1/2 lbs lean ground beef or 1 1/2 lbs ground turkey
1 large onion, chopped
2 -3 teaspoons chili powder
1/2 teaspoon ground cumin

2 1/2 cups salsa (I like mild Pace Picante)
6 -8 fajita-size flour tortillas
15 ounces red kidney beans, drained and rinsed
2 cups shredded Mexican blend cheese

Steps:

  • Preheat oven to 375.
  • Spray 13x9 pan with nonstick spray, set aside.
  • Brown beef or turkey in large skillet with onion until cooked through, drain if needed.
  • Add chili powder, cumin and salt, and 1 cup salsa, stir and heat through.
  • In a medium bowl, mash drained and rinsed kidney beans coarsely. Add 1 cup salsa and stir together.

2 tablespoons vegetable oil
2 red bell peppers, chopped medium
1 onion, minced
3 garlic cloves, minced
2 teaspoons chili powder

2 lbs ground beef (90% lean)
2 cups low sodium chicken broth
2 chipotle chiles in adobo, minced
2 (15 1/2 ounce) cans pinto beans, rinsed
1 (14 1/2 ounce) can diced tomatoes, drained
6 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice

18 (6 inch) corn tortillas
8 ounces cheddar cheese, shredded (2 cups)
8 ounces monterey jack cheese, shredded (2 cups)

Steps:

  • Adjust an oven rack to the middle position and preheat oven to 300° (not a typo).
  • Heat the oil in a large Dutch oven over medium heat until shimmering.
  • ADd the bell peppers and onion and cook until softened, about 5 minutes.
  • Stir in the garlic, chili powder, and 1 teaspoon salt and cook until fragrant, about 30 seconds.
  • Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink, about 5 minutes.
  • Stir in the broth, chipotles, beans, and tomatoes and simmer until slightly thickened, about 10 minutes.
  • Stir in 1/4 cup of the cilantro and the lime juice.
  • Season with salt and pepper to taste.
  • Meanwhile, spray both sides of the tortillas with vegetable oil spray and spread out over two baking sheets (some overlap is fine).
  • Bake until the tortillas are soft and pliable, about 5 minutes.
  • Remove the tortillas from the oven and increase oven temperature to 450°.
  • Spread 1/3 of the beef mixture in a 9 x 13 inch baking dish.
  • Layer 6 of the tortillas on top of the filling, overlapping as needed, then sprinkle with 3/4 cup of each cheese.
  • Repeat to form a second layer.
  • Spread the remaining filling in the baking dish.
  • Cut the remaining 6 tortillas into quarters, then spread over the top.
  • Sprinkle with the remaining 1/2 cup of each cheese.
  • Bake until the cheese is golden brown and the casserole is bubbling, about 15 minutes.
  • Let cool for 10 minutes.

1/2 cup chopped onion
1 box (14.2 oz) Old El Paso™ enchilada dinner kit
1/2 cup water
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 cup sour cream
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook beef and onion, stirring occasionally, until beef is thoroughly cooked; drain. Stir in both pouches enchilada sauce (from dinner kit), the seasoning mix (from dinner kit), water and chiles; heat until hot.
  • In ungreased 11x7-inch baking dish, spread 1 cup of the beef mixture. Cut tortillas (from dinner kit) in half. Place 6 tortilla halves on beef; spread with 1/2 cup of the sour cream. 2 cans (10 oz each) Old El Paso™ enchilada sauce
1 lb extra-lean (at least 95%) ground beef
1 1/4 cups chopped onion
2 medium poblano chiles, seeded, chopped
2 cloves garlic, finely chopped
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup Green Giant™ Niblets™ frozen whole kernel corn, thawed
1 package (1 oz) Old El Paso™ 40% less sodium taco seasoning mix
10 corn tortillas (6 inch)
2 cups shredded reduced-fat four-cheese Mexican cheese blend (8 oz)
1/4 cup chopped fresh cilantro
Light sour cream
Chopped fresh tomato
Lime wedges

Steps:

  • Spray 5-quart oval slow cooker with cooking spray. Spoon 1/2 cup enchilada sauce into bottom of slow cooker; spread evenly. In small bowl, reserve 1/2 cup enchilada sauce; set aside.
  • In 12-inch skillet, cook beef, onion, poblano chiles and garlic over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked. Drain if necessary. Stir in remaining enchilada sauce (not the 1/2 cup reserved), the black beans, corn and taco seasoning mix. Cook and stir about 3 minutes or until heated through. Remove from heat.
