1 pound beef stew meat, cut into 1/2-inch cubes
1 small meaty beef soup bone (beef shanks or short ribs)
2 tablespoons vegetable oil
4 cups water
1 can (28 ounces) diced tomatoes, undrained
1 cup chopped carrots
1 cup chopped celery
1/4 cup chopped celery leaves
1 tablespoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon dried savory
1/4 teaspoon dried thyme
1/8 teaspoon ground mace
1/8 teaspoon hot pepper sauce

Steps:

  • In a Dutch oven or soup kettle, brown the stew meat and soup bone in oil. Add the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 4-5 hours or until meat is tender. Skim fat. Remove meat from bone; cut into 1/2-in. cubes. Return to soup; heat through.

6 medium onions, chopped
3 stalks celery, chopped
1 teaspoon salt
1 teaspoon pepper
4 (28 ounce) cans tomatoes (I use diced tomatoes.)
2 (10 ounce) cans tomato soup
10 -15 cups beef broth
3 -4 cups uncooked macaroni
1/2 teaspoon Worcestershire sauce

Steps:

  • Saute ground beef, onions and celery.
  • Add salt, pepper and tomatoes, tomato soup, beef broth, macaroni and worcestershire sauce.
  • Bring to a boil then simmer for 18 minutes.
  • Divide into containers and freeze if so desired.

1 package onion soup mix
1 (19 ounce) can kidney beans

Steps:

  • Brown the ground beef in a dutch oven or heavy stock pot, season with salt and pepper.

2 cans (19 oz each) Progresso™ Vegetable Classics hearty tomato soup
2 cups water
1/2 cup uncooked quick-cooking barley
1 cup sliced celery
1 cup frozen mixed vegetables (from 1-lb bag)
6 tablespoons shredded fresh Parmesan cheese

Steps:

  • In 4-quart saucepan or Dutch oven, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • Stir in soup, water, barley and celery. Heat to boiling, stirring occasionally. Reduce heat to low; simmer uncovered about 15 minutes, stirring occasionally, until barley is tender.

1 large onion, chopped
1 large green pepper, chopped
2 tablespoons oil
3 medium potatoes, peeled and cubed
3 medium carrots, chopped
4 cups beef broth
1 cup water (or 5 cups beef broth)
2 tablespoons paprika
1 tablespoon sugar
salt and pepper
1/4 teaspoon cayenne pepper
2 bay leaves
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste

Steps:

  • In a large Dutch oven or heavy-bottomed stock pot, cook and stir the beef, onion and green pepper in the 2 tbsp oil until meat is browned on all sides; drain the oil.
  • Add in the next 10 ingredients.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 35-30 mins, or until the potatoes are tender.
  • Stir in the crushed tomatoes and the tomato paste.
  • Cover and simmer for another 25-30 mins longer, or until the meat is tender.
  • Discard the bay leaves before serving.

Steps:

  • Cook meat in large saucepan sprayed with cooking spray on medium heat until evenly browned, stirring frequently. (Meat will not be done.) Drain meat in colander; set aside.

1 medium cauliflower, ...small florets, or use frozen
3 Tbsp butter
1 lb ground beef
1 medium tomatoes,.... canned and cut up
3/4 c chopped onion
8 c hot...water....yes hot!
1/4 tsp pepper
1 tsp celery salt
1/4 c parsley flakes
1 c elbow maccaroni.......to cook in the soup
parmesan grated cheese.... to taste

Steps:

  • 1. Prepare the cauliflower head. Wash and cut off the florets. Put in cold water with 1 teaspoon of salt. Let sit at least 10-15 minutes while you continue with the recipe.
  • 2. Peel and dice the onion. Set aside.
  • 3. Melt butter in a saucepan. Brown the ground beef slightly.
  • 4. Add the tomatoes and onions and drained cauliflower to the pot with the ground beef.
  • 5. Add 4 cups hot water to the same pot. Cover tightly and simmer for thirty minutes
  • 6. Add the remainder of hot water (4 cups), uncooked dry elbow macaroni , pepper, parsley and celery salt. cook until macaroni's are tender. If freezing soup..Add the pasta when soup is thawed!

1 cup diced onion
6 cups defatted low-sodium beef broth, preferably homemade
1 can (16 ounces) whole tomatoes, chopped, juice included

1½ cups thinly sliced carrots
½ teaspoon salt
½ teaspoon fresh-ground black pepper

  • Spray the bottom of a large saucepan with vegetable oil. Over medium-high heat, cook ground beef and onion for about 5 minutes, or until the meat has lost its pink color, using the edge of a plastic spoon or spatula to break up the beef as it cooks. Pour off any accumulated fat. Add the beef broth and the remaining ingredients except for the rice, and bring to a boil. Reduce the heat to low, cover and simmer gently for 40 minutes. 1/2 lb round steak, cut into cubes
1 medium onion, chopped
1 tablespoon garlic, minced

1/2 cup chili sauce
3/4 lb new potato, cut into med cubes (can use up to 1 lb if you like)

My grandmother used to make this with left-over roast beef. We always make it when the weather is cold and wet. It smells wonderful when you come in from the cold.

1 lb beef stew meat, trimmed well
1 (14 ounce) can beef broth
2 (14 ounce) cans diced tomatoes (see NOTE)
1 -2 garlic clove, minced
1/2 tablespoon oregano
1/2 tablespoon thyme
1 teaspoon dried basil
1 bay leaf
salt and pepper
egg noodles

Steps:

  • Brown the meat in small batches.
  • Add the beef broth, tomatoes, and 1 can of water.
  • Add the spices.
  • Bring to a boil, then let simmer. If you're in a hurry - 30 minutes. If you have time, 1 to 1 1/2 hours. It just tastes better the longer it cooks.
  • Add salt and pepper to taste.
  • Bring back to a boil and noodles (as many as you like in your soup.).
  • *NOTE - you can use almost any tomato - crushed, petit diced, whole. Sometimes I add some tomato paste to thicken it a bit, sometimes some tomato sauce. It just depends on what you like.
  • This also freezes well - the meat becomes VERY tender. I freeze it without the noodles, then cook them in it after it's thawed. I always have at least one container of this in the freezer.

1 lb beef stew meat-cubed
2 Tbsp oil
4 c beef stock
28 oz tomatoes, canned and cut up-undrained
1 c sliced carrot
1 c chopped celery
1/4 c snipped celery leaves
1 tsp salt
1/2 tsp marjoram, dried-crushed
1/2 tsp basil, dried-crushed
1/4 tsp savory dried-crushed
1/4 tsp thyme, dried-crushed
1/8 tsp mace
several dash(es) hot pepper sauce

Steps:

  • 1. Trim fat from meat. Place oil and meat in skillet; brown meat and drain.
  • 2. Place browned meat in slow cooker. Stir in remaining ingredients.
  • 3. Cover and cook on low setting for 8 - 10 hours.
  • 4. Skim fat off of soup and stir soup well.

1 pound ground beef
1 small onion, chopped (1/4 cup)
1/2 cup frozen green peas
2 cups tomato juice
1 1/4 cups water
3/4 rib chopped fresh or 1/4 teaspoon dried marjoram leaves
1/8 teaspoon pepper
1 bay leaf
1 (10 3/4-ounce) can condesed cream of celery soup
1 cup uncooked egg noodles (2 ounces)

Steps:

  • 1. Cook beef and onion in Dutch oven over medium heat about 10 minutes, stirring occasionally, until beef is brown drain.2. Stir in remaining ingredients except noodles. Heat to boiling. Stir in noodles reduce heat. Simmer uncovered about 10 minutes, stirring occasionally, until noodles are tender. Hearty Tomato-Beef Soup image

This soup tastes even better the next day, adjust the chili flakes to suit heat level or you may omit, for best flavor make certain to lightly brown the ground beef --- this soup freezes excellent without the addition of cooked pasta.

1 lb lean ground beef
1 medium onion, chopped
6 large garlic cloves, peeled and chopped (do not mince)
2 teaspoons dried basil (rubbed between fingers to release the flavor)
2 teaspoons dried oregano (rubbed between fingers to release the flavors)
1/2 teaspoon crushed red pepper flakes (adjust to suit heat level) (optional)
1 tablespoon chili powder
1 (10 3/4 ounce) can tomato soup, undiluted
1 (14 ounce) can whole tomatoes, undrained
4 cups water
1 carrot, peeled and diced
1 (16 ounce) can red kidney beans
1 (10 ounce) can green beans, drained (use whole or cut green beans)
1 1/2 teaspoons seasoning salt (to taste) or 1 1/2 teaspoons white salt (to taste)
fresh ground black pepper (to taste)
cooked pasta (use your choice of pasta and any amount desired)
freshly grated parmesan cheese

Steps:

  • Cook the ground beef in a pot with onion until no longer pink; drain fat.
  • Add in garlic, basil, oregano and chili flakes; cook stirring over medium-high heat until lightly browned (about 8 minutes).
  • Add in chili powder and stir for 1 minute.
  • Stir in tomato soup, whole tomatoes with juice, water, and diced carrot; bring to a boil over medium-high heat breaking up the tomatoes slightly with a fork.
  • Reduce heat to low, partially cover and simmer for about 30 minutes stirring occasionally.
  • After 30 minutes of simmering add in the kidney beans, whole or cut green beans and seasoned salt; simmer for another 15-20 minutes seasoning with black pepper about halfway through cooking.
  • Mix in the cooked pasta until heated through.
  • Ladle into bowls and sprinkle freshly grated Parmesan cheese on top.
