BEEF AND TOMATO STEW



Beef and Tomato Stew image

This classic hearty beef and tomato stew is true comfort food at its finest! Perfect recipe for a chilly weekend at home and can easily be made in your instant pot, slow cooker or even right on the stove!

Number Of Ingredients 17

1 Tbsp olive oil (if searing the meat first)
2 lb. cubed stew beef
2 (15 oz) cans stewed tomatoes
1 (6 oz) can tomato paste
4 cups beef broth
1 Tbsp Worcestershire sauce
1 medium onion, chopped
3 large carrots, sliced
3 ribs celery, chopped
1 cup fresh or frozen peas
1 lb. baby potatoes
1 tsp. salt
1/2 tsp. pepper
2 tsp. garlic powder
1 Tbsp fresh thyme (or 1 tsp dried)
2 tsp fresh rosemary (or 1/2 tsp dried)
1 bay leaf

Steps:

  • To make in your instant pot: Drizzle olive oil in the bowl of your instant pot and turn on the sauté function. Wait until it's nice and heated then add meat, browning on all sides. Add the rest of your ingredients, seal the instant pot and select the meat/stew setting (about 35 minutes). Once cooking is complete, let the instant pot sit for about 12 minutes then release the steam by placing the valve to the venting position.
  • To make in your slow cooker: Add cubed beef (except the oil) along with the rest of ingredients, cover and cook on low for 7 to 8 hours.
  • To make on your stove top: In a large dutch oven or pot on medium high heat, drizzle oil and sear meat on all sides. Add the rest of the ingredients and bring to a boil, then cover and simmer for about 2 to 3 hours, until meat is tender. Serve and enjoy!

3 pounds lean stew beef (cut into 1-inch cubes)
2 teaspoons salt
1/2 teaspoon pepper
3 tablespoons vegetable oil
1 cup onion (chopped)
1/2 cup celery (chopped)
2 cloves garlic (minced)
1 1/2 cups water ( divided )
3/4 cup all-purpose flour
1 cup red wine
1 can tomatoes (14 1/2 ounces, chopped)
1 large bay leaf
1/4 teaspoon thyme (ground)
12 small onions
6 carrots (halved crosswise then halved lengthwise)
12 small potatoes or 6 medium potatoes (halved)

Steps:

  • Sprinkle stew beef with 2 teaspoons salt and 1/2 teaspoon pepper.
  • In hot oil in large skillet, brown stew beef quickly on all sides.
  • Add chopped onion and celery to the skillet. Cook until onion is tender and lightly browned. Add the garlic, and cook for 1 more minute.
  • In a large cup or small bowl, gradually add 1 cup of the cold water to the 3/4 cup flour, stirring until well blended and smooth. Add flour mixture to meat and vegetable mixture, stirring constantly, until smooth.
  • Transfer the meat and onion mixture to the slow cooker. Stir in 1/2 cup water, the wine, tomatoes, bay leaf , thyme, small onions, carrots, and potatoes.
  • Cover, and cook on high for 4 to 5 hours, or cook on low for 8 to 10 hours. Taste and season with salt and pepper, as desired.

1 medium onion, chopped (1/2 cup)
1/2 teaspoon salt

3/4 cup uncooked medium-grain white rice
1 cup water
1 medium zucchini, cut into 1/4-inch-thick slices (2 cups)
1 large tomato, chopped (1 cup)
1 can (19 oz) Progresso™ Vegetable Classics tomato basil soup
2 cups shredded mozzarella cheese (8 oz)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Sprinkle with salt and pepper.
  • Place rice and water in baking dish; stir to mix. Layer cooked beef, zucchini and tomato over rice. Pour soup over top. Cut 16x12-inch sheet of foil; spray with cooking spray. Cover dish with foil, sprayed side down.

25g butter
2 large onions, sliced into rings
6 garlic cloves, halved
3 tbsp plain flour
600g piece beef skirt or slices of shin, cut into large chunks
2 tbsp olive or rapeseed oil
3 bay leaves
400ml red wine
1 tbsp tomato purée
300ml strong beef stock
250g mushrooms, halved (we used small Portobello mushrooms)
chopped parsley, to serve (optional)

Steps:

  • Heat oven to 150C/130C fan/gas 2. In a large, heavy-based flameproof casserole dish with a lid, melt the butter over a medium heat. Add the onions and garlic, cook for 10 mins until starting to brown, then transfer to a small plate.
  • Put the flour in a large plastic food bag with plenty of black pepper. Add half the beef, shake to coat, then remove, leaving some flour in the bag. Add the rest of the beef and shake to coat in the remaining flour.
  • Heat the oil in the same casserole dish you cooked the onions in (there's no need to clean it first). Add the beef and bay leaves, and fry until the meat is browned all over. Pour in the wine and return the onions to the dish. Add the tomato purée and stock, stir and return to a simmer. Cover with the lid and put in the oven to stew for 1 hr.
  • After 1 hr, add the mushrooms and return to the oven for another hour. Taste the meat - if it's tender, remove from the oven. If it's still a little firm, cook for 30 mins more and test again. Serve scattered with parsley, if you like.

1 tablespoons extra-virgin olive oil
6 ounces (170g) bacon, (roughly chopped)
3 pounds (1 1/2 kg) beef brisket, trimmed of fat ((chuck steak or stewing beef) cut into 2-inch chunks)
1 large carrot (sliced 1/2-inch thick)
1 large white onion, (diced)
6 cloves garlic, (minced (divided))
1 pinch coarse salt and freshly ground pepper
2 tablespoons flour
12 small pearl onions ((optional))
3 cups red wine (like Merlot, Pinot Noir, or a Chianti -- for a milder sauce, use only 2 cups of wine)
2-3 cups beef stock ((if using 2 cups of wine, use 3 cups beef stock))
2 tablespoons tomato paste
1 beef bullion cube, (crushed)
1 teaspoon fresh thyme, (finely chopped)
2 tablespoons fresh parsley, (finely chopped (divided))
2 bay leaves
1 pound fresh small white or brown mushrooms, (quartered)
2 tablespoons butter

Steps:

  • Preheat oven to 350°F (175°C).
  • Heat the oil in a large dutch oven or heavy based pot. Sauté the bacon over medium heat for about 3 minutes, until crisp and browned. Transfer with a slotted spoon to a large dish and set aside.
  • Pat dry beef with paper towel; sear in batches in the hot oil/bacon fat until browned on all sides. Remove to the dish with the bacon.
  • In the remaining oil/bacon fat, sauté the carrots and diced onions until softened, (about 3 minutes), then add 4 cloves minced garlic and cook for 1 minute. Drain excess fat (leave about 1 tablespoon in the pan) and return the bacon and beef back into the pot; season with 1/2 teaspoon coarse salt and 1/4 teaspoon ground pepper. Sprinkle with flour, toss well and cook for 4-5 minutes to brown.
  • Add the pearl onions, wine and enough stock so that the meat is barely covered. Then add the tomato paste, bullion and herbs. Bring to a simmer on the stove.
  • Cover, transfer to lower part of the oven and simmer for 2 to 3 hours, or until the meat is fall apart tender (adjust the heat so that the liquid simmers very slowly).
  • In the last 5 minutes of cooking time, prepare your mushrooms:Heat the butter in a medium-sized skillet/pan over heat. When the foam subsides, add the remaining 2 cloves garlic and cook until fragrant (about 30 seconds), then add in the mushrooms. Cook for about 5 minutes, while shaking the pan occasionally to coat with the butter. Season with salt and pepper, if desired. Once they are browned, set aside.
  • Place a colander over a large pot (I do this in my clean kitchen sink). Remove the casserole from the oven and carefully empty its contents into the colander (you want to collect the sauce only). Discard the herbs
  • Return the beef mixture back into the dutch oven or pot. Add the mushrooms over the meat.
  • Remove any fat off the sauce( if any) and simmer for a minute or two, skimming off any additional fat which rises to the surface.
  • You should be left with about 2 1/2 cups of sauce thick enough to coat the back of a spoon lightly. If the sauce is too thick, add a few tablespoons of stock. If the sauce is too thin, boil it over medium heat for about 10 minutes, or until reduced to the right consistency.
  • Taste for seasoning and adjust salt and pepper, if desired. Pour the sauce over the meat and vegetables.
  • If you are serving immediately, simmer the beef bourguignon for 2 to 3 minutes to heat through.Garnish with parsley and serve with mashed potatoes, rice or noodles.
  • To serve the following day, allow the casserole to cool completely, cover and refrigerate.The day of serving, remove from refrigerator for at least an hour before reheating. Place over medium-low heat and let simmer gently for about 10 minutes, basting the meat and vegetables with the sauce.

1 1/4 kg casserole beef
1/4 cup plain flour
1 teaspoon paprika
1/4 cup olive oil
1 brown onion, roughly chopped
2 (450 g) cans diced tomatoes
1/2 cup red wine
1 kg potato, peeled, cut into pieces
40 g butter
3/4 cup milk
4 green shallots, finely chopped (optional)
2 tablespoons roughly chopped flat leaf parsley (optional)

Steps:

  • Trim excess fat from beef and cut into 3cm pieces. Combine flour and paprika. Season with salt and pepper. Toss beef in flour to coat lightly. Heat 1 tbs oil in a large heatproof casserole dish. Cook beef in batches, until well browned, adding more oil as required. Remove beef from pan and set aside.
  • Add onion to pan and cook, stirring occasionally for 4 mins or until tender. Stir in tomatoes and wine. Bring to the boil. Return beef to pan. Reduce heat to a gentle simmer, cover and cook for 1 1/2 - 2 hours, until meat is very tender.
  • Meanwhile, place potatoes into a saucepan and cover with cold water. Bring to boil over a high heat. Reduce heat and simmer for 20-25 mins or until tender. Drain. Add butter, milk and shallots then mash until smooth. Season with salt and pepper. Serve with casserole and sprinkle with parsley.

1 kg chuck steaks or 1 kg round steak, cut into 2cm cubes
1/2 cup flour
2 tablespoons olive oil
1 onion, sliced
2 small carrots, diced
2 celery ribs, sliced
1/4 cup tomato paste
1/4 cup red wine
1/2 cup semi sun-dried tomato
2 tablespoons fresh thyme, chopped
2 bay leaves
salt and pepper

Steps:

  • Dust beef in flour, shaking off excess flour.
  • Heat oil in a large frying pan and cook beef in batches until brown. Transfer to slow cooker.
  • To the same frying pan, add onion and garlic, cook stirring for 1-2 minutes or until onion is softened.
  • Add carrots and celery and cook for a further 3 minutes.
  • Stir tomato paste into the vegetables, cook 1 minute.
  • Add wine and allow alcohol to evaporate and liquid to reduce slightly. About 2 minutes.
  • Place vegetables and remaining ingredients in slow cooker. (Go easy on the thyme if you don't like it too herby.)Cover and cook on HIGH 3-4 hours or LOW 5-6 hours.
  • Season to taste and serve hot with mashed potatoes.

1 lb boneless round steak, sliced in thin strips 2-inch x 1/2-inch
3 -4 tomatoes, quartered
3 -4 green peppers, cut into 1-inch squares
1 green onion, cut in 1-inch lengths
1 round onion, cut in 1-inch wedges
2 stalks celery, diced diagonally 1-inch wide
2 tablespoons soy sauce
1 teaspoon cornstarch
1 teaspoon wine
2 tablespoons sugar
2 tablespoons oil
1 teaspoon cornstarch
2 teaspoons sugar
1 teaspoon soy sauce
1 tablespoon catsup
1/2 teaspoon Worcestershire sauce

Steps:

  • Put meat in marinade for 30 minutes.
  • Brown meat in 2 T hot oil and turn into bowl.
  • Add 1 T oil to pan and when hot put in vegetables and stir=fry until veges are just tender. Do not Overcook.
  • Put beef back in pan and add gravy ingredients. Cook for 1 minute.
