1/2 pound lean ground beef (90% lean)
3/4 cup water
2/3 cup condensed tomato soup, undiluted
2 tablespoons taco seasoning
3/4 cup uncooked instant rice
Optional toppings: shredded lettuce, shredded cheddar cheese, salsa and sour cream
Tortilla chips

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water, soup and taco seasoning. Bring to a boil. Stir in rice. Cover and remove from the heat. Let stand for 5 minutes or until rice is tender. , Spoon onto two serving plates. Top with lettuce, cheese, salsa and/or sour cream if desired. Serve with chips.

My boyfriend is from Mexico and he whipped this up one night and it turned out great. Beef, onions, garlic and peppers cooked in a delicious salsa verde sauce. Serve with rice, beans and tortillas. You may also add some sour cream to the sauce to make it creamier or add it after as a garnish.

1 tablespoon olive oil
1 onion, diced
1 pound cubed beef stew meat
1 ½ teaspoons minced garlic
½ lime, juiced
1 jalapeno pepper, seeded and chopped
3 green onions, chopped
¼ cup chopped fresh cilantro, or to taste
1 teaspoon dried oregano
1 (7 ounce) can green salsa

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add the onion, and cook for a few minutes, then stir in the beef, and garlic. Cook, stirring frequently until meat is evenly browned.
  • While the meat is cooking, stir together the lime juice, jalapeno, cilantro and green onion. When the meat is browned, stir in the cilantro mixture and oregano. Pour in the salsa, cover and cook for about 10 minutes, stirring occasionally, until the meat is cooked through.

1 kg of good quality beef steak
2 tablespoons olive oil
30 g butter
3 slices bacon, roughly chopped
2 brown onions, roughly chopped
2 cloves garlic, crushed
2 tablespoons plain flour
1 cup beef stock
1 1/2 cups red wine
1 bay leaf
1/2 teaspoon thyme
seasoning, to taste
125 g fresh mushrooms, sliced
1/4 cup of chopped parsley

Steps:

  • Trim fat from meat and cut into cubes.
  • Heat butter and oil in heavy based saucepan and brown meat.
  • Remove meat from pan and saute bacon, onion and garlic in the pan drippings.
  • Stir in flour and allow to brown.
  • Remove from heat and stir in stock, wine,bay leaf,thyme,seasoning.
  • Return the meat to pan and simmer for about 1 hour or until meat is tender.
  • Stir in mushrooms and cook for a further 15 minutes and serve sprinkled with parsley.

1 lb ground beef
1 medium onion, minced
8 ounces egg noodles
1 tablespoon butter
1 cup sour cream
1 (10 2/3 ounce) can cream of mushroom soup
salt and pepper
1/2 cup grated cheddar cheese (or more if you'd like it cheesier)
crushed potato chips

Steps:

  • Brown beef and onion together.
  • Cook noodles, drain and stir butter into hot noodles.
  • Mix together sour cream, soup and seasonings.
  • Alternate layers of noodles, beef mixture, cheese, and soup mixture(spread soup mixture as best you can, okay if it isn't evenly), in a greased 2 or 2 1/2 quart casserole.
  • Top with potato chips.
  • Bake at 350 degrees for 25-35 minutes.

1 green pepper (sliced)
1 cup celery
1 cup cut green beans
4 oz sliced mushrooms
8 t cornstarch
2 T soy sauce
1 1/2 cup water

Steps:

  • Brown beef in 2 T of oil. Add in onion, green pepper, celery, green beans and mushrooms. Cook until beans are tender. Dissolve cornstarch in soy sauce and water. Add to skillet and cook for about 10 minutes. Garnish with pimiento. Serve over rice or noodles.

1/2 teaspoon garlic powder
1 small onion, chopped
1 1/2 cups chopped tomatoes
10 ounces egg noodles, cooked
1 cup sour cream
8 ounces cream cheese
1 cup cheddar cheese

Steps:

  • Brown the ground beef, salt and pepper to taste.
  • Add onion and tomatoes. Mix till smooth.
  • In a separate bowl, Mix cream cheese and sour cream together.
  • Layer some prepared noodles on the bottom of a greased 9x13 pan.
  • Now add some of the cream cheese mixture. Last, the ground beef mixture.
  • Layer until pan is full.
  • Sprinkle the top with the cheddar cheese. Bake 30 minutes at 350 degrees.

Discovered this twist on my favorite fall/winter sandwich and made it at home. Absolutely love it! And much easier than traveling across state to have it on my plate again. :-)

1 1/2 lb shaved roast beef
2 pkg au jus gravy mix
1 can(s) sliced mushroom pieces
1 small onion, julienne sliced
8 slice finlandia swiss lace cheese
1 Tbsp butter/margarine
1 pkg frozen french fries

Steps:

  • 1. Prepare au jus gravy mix according to package directions. Pour finished gravy into slow cooker, add roast beef. Set to low or warm and allow meat to heat through. (I allow at least two hours with crock pot on low)
  • 2. Prepare french fries according to package directions, season to taste.
  • 3. Saute drained mushroom pieces and onion in frying pan, set aside.
  • 4. Layer beef, mushrooms and onion on hoagie bun sliced lengthwise. Top with two slices swiss cheese per sandwich.
  • 5. Ladle au jus gravy into small cups for dipping sandwich and/or fries.
  • 6. Plate sandwich with fries and au jus cup. Can also add a pickle spear (I prefer kosher dill spears).

2 garlic cloves, pressed
1 (4 ounce) can diced green chilies
1 tablespoon taco seasoning
1 teaspoon oregano
1 (908 g) bag tortilla chips
1/2 cup red pepper
1 (2 1/4 ounce) can sliced black olives
2 cups cheddar cheese, grated
2 cups monterey jack cheese, grated
30 pickled jalapeno peppers
1 tomatoes, seeded and diced
2 green onions, sliced

Steps:

  • In a large skillet over medium heat, add ground beef and season with salt and freshly ground black pepper. Break down the meat while cooking until half way done. Add red onions and sauté until soft and translucent, about 4 minutes. Transfer to a colander to drain then return meat mixture back to skillet.
  • Add chipotle purée, garlic, green chilies, taco seasoning and oregano. Stir ingredients very well before removing from the heat. Preheat oven to 400ºF.

freshly ground black pepper, to taste (i always use mixed peppercorns)
1/2 c red onions, diced
1 Tbsp chipotle purée
2 large cloves garlic, pressed
1 can(s) (4 oz.) diced green chiles
1 Tbsp old el paso taco seasoning
1 tsp mexican oregano
1 bag(s) (908g) tortilla chips, or as needed
1/2 c red peppers, diced and divided
1 can(s) (2.25 oz.) sliced black olives, drained and divided
2 c sharp cheddar cheese, grated and divided
2 c monterey jack cheese, grated and divided
30 large pickled jalapeño peppers, or to taste (optional)
1 large oma tomato, seeded and diced
2 large green onions, sliced

Steps:

1 (14 ounce) can whole tomatoes
1 (8 ounce) can tomato sauce
2 teaspoons salt
2 teaspoons sugar
1 lb uncooked elbow macaroni
1 (3 ounce) package cream cheese
1 cup grated cheese

Steps:

  • cook beef until no longer pink. drain off fat; add tomatoes (squishing when you do), tomato sauce, salt, and sugar. simmer for about 10 minuets. Cook noodles according to package and drain. Blend sour cream, cream cheese, into beef mixture. Pour small amount of beef mixture into greased casserole; cover with layer of noodles and the grated cheese. Repeat layers; top with layer of cheese. Bake in 350 degree oven for 35 minuets.

1/2 cup water
1 garlic clove, minced (I like garlic and used more)
1 (6 ounce) can tomato paste
1 cup catsup
3/4 cup packed brown sugar
1/2 cup cider vinegar
2 tablespoons prepared mustard

Steps:

  • Brown ribs in a large skillet.
  • Cover and cook over low heat for one hour.
  • Drain off pan drippings.
  • Combine remaining ingredients, and pour over ribs.
  • Cover tightly and cook over low heat 1-1/2 hours or until tender.

1/3 cup mayonnaise
6 slices bacon, cooked and crumbled
1 tablespoon olive oil
8 mushrooms
1/3 cup onion

1/2 teaspoon adobo seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon red pepper flakes
1/8 teaspoon Tabasco sauce
1 lb lean ground beef

Steps:

  • Shred cheese.
  • Mix cheese, mayo, and crumbled bacon in bowl and set aside.
  • Slice mushrooms.
  • In a large frying pan heat up olive oil and add garlic and mushrooms. Saute until mushrooms are cooked (5-10 minutes).
  • Add cooked mushrooms and garlic to mayo, cheese, bacon mixture and stir in lightly. Set this aside again.
  • Put ground beef, onions, adobo, salt and pepper in frying pan and cook, crumbling beef, until meat is completely cooked. Turn off the heat and add mayo mixture, stirring until thoroughly mixed in with the ground beef mixture.
  • Serve immediately!

1/4 cup flour
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon salt

1/2 cup water
flat bread (pita will work or make and use Ojibwa bread)
oil (for deep frying)
sour cream, to taste
shredded lettuce, to taste
shredded Cheddar/jack cheese, to taste
diced tomatoes, to taste

Steps:

  • 1. Mix dried onion with water in a small bowl and let stand for five minutes. 2. Combine ground beef, flour, chili powder, paprika and salt. Mix well. Add onions and water. Mix again. In a skillet, cook beef mixture until browned. Stir often while cooking so no large chunks form; it should be more like a paste. 3. Remove from heat and keep warm. In a deep-fryer (or you can use a skillet) deep fry the bread for 30 seconds. Let drain on absorbent towels. Build Chalupas starting with meat, then sour cream, lettuce cheese, and tomatoes in that order. Top with hot sauce or salsa if desired.
