2 1/2 lbs beef stew meat, cut into bite sized cubes
1 cup chopped onion
4 medium potatoes, peeled and diced small
3 large carrots, peeled and thinly sliced
2 (14 ounce) cans sauerkraut, undrained
2 (14 ounce) cans diced tomatoes, undrained
6 cups beef broth
1 bay leaf
2 tablespoons chopped parsley
1 teaspoon thyme
1 tablespoon brown sugar
1/2 teaspoon pepper
1/2 teaspoon paprika

Steps:

  • Place beef cubes, onion, diced potatoes, sliced carrots, sauerkraut and diced tomatoes in the slowcooker; mix around.
  • Pour all remaining ingredients over top.
  • Cover slowcooker and cook on low for about 7 hours.
  • Remove bay leaf, stir well and then serve.

Treat yourself to a taste of Bavaria with this slow-cooker beef roast, which calls for just 15 minutes prep time. Sauerkraut, caraway seed and stone-ground mustard play into the tasty theme.

1 tablespoon vegetable oil
3-pound beef boneless tip roast, trimmed of fat
2 teaspoons caraway seed
1/2 teaspoon salt
1 bag (16 ounces) frozen small whole onions
1 can (16 ounces) Bavarian-style sauerkraut, undrained
1/2 cup dark beer or Progresso™ beef flavored broth
1/4 cup Gold Medal™ all-purpose flour
1 tablespoon stone-ground mustard

Steps:

  • Heat oil in 12-inch skillet over medium-high heat. Cook beef in oil about 5 minutes or until brown on all sides. Sprinkle with caraway seed and salt.
  • Place beef in 5- to 6-quart slow cooker. Place onions, sauerkraut and 1/4 cup of the beer around beef.
  • Cover and cook on Low heat setting 6 to 8 hours.
  • Remove beef from cooker; cover to keep warm. Mix flour, remaining 1/4 cup beer and the mustard in small bowl; gradually stir into juices in cooker. Increase heat setting to High. Cover and cook 15 to 30 minutes or until slightly thickened. Serve beef with juices.

This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

1 small onion, halved and sliced
1 pound smoked sausage, cut into 1/4-inch pieces

  • In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned. Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut and pepper. Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.

1-1/2 pounds ground beef
1 egg, lightly beaten
1-1/2 cups soft rye bread crumbs
1/3 cup milk
1/4 cup chopped onion
1 tablespoon cider vinegar
1-1/2 teaspoons caraway seeds

1 tablespoon canola oil
2 cans (15 ounces each) sliced potatoes, drained
2 cans (14 ounces each) sauerkraut, undrained
2 tablespoons minced fresh parsley
1/4 cup each mayonnaise and horseradish, optional

Steps:

  • In a bowl, combine beef, egg, crumbs, milk, onion, vinegar, caraway and salt; mix well. Shape into 1-1/2-in. balls. , In a Dutch oven over medium heat, brown meatballs in oil; drain. 5 slice bacon
2 lb lean stew beef cut into 1in. cubes
2 onions finely chopped
5 cloves of garlic minced
1 Tbsp caraway seeds
1 tsp salt
1/2 tsp cracked black pepper
2 Tbsp gin
1 Tbsp all purpose flour
1 c dry white wine
1/2 c undiluted condensed beef broth
4 c drained and rinsed sauerkraut
1 lb kielbasa sausage cut into 1/4in. slices
sour cream

Steps:

  • 1. in skillet cook bacon over med-high heat until crisp. lay on paper towel. crumble and set aside. drain all but 2 tbls. from pan.
  • 2. add beef in batches to brown, transfer to slow cooker with a slotted spoon.
  • 3. reduce heat to medium. add onions and cook and stir until soft. Add garlic, caraway seeds, salt, pepper,and bacon. cook stirring for 1 minute.sprinkle flour over mixture and cook, stirring another minute. add gin, wine and beef broth cook, stirring until mixture thickens. stir in sauerkraut.
  • 4. add mixtur to slow cooker, stir until all combined. cook on low 8-10 hours or high 4-5 hours or beef is tender. stir in sausage and cook on high 15 minuted or sausage is heated through. top servings with a dollip of sour cream.

3 pounds spicy, Hungarian sausage, sliced
1 1/2 pounds stewing beef, trimmed and cut in 3/4-inch cubes
1 1/2 pounds boneless fresh ham or lean pork, trimmed and cut in 3/4-inch cubes
1/3 cup bacon fat or vegetable oil
4 medium-size onions, finely chopped
1/3 cup Hungarian paprika
1/2 pound sauerkraut, drained
4 cups chicken broth
4 bay leaves
1/2 teaspoon thyme
Salt and freshly ground pepper to taste
2 cups sour cream (optional)

Steps:

  • In a large skillet, saute the sausage slices over medium-high heat, tossing, until lightly browned on both sides, about 5 minutes. Remove, drain on paper towels and set aside. In the same skillet, brown the beef and ham cubes in the sausage fat over high heat and set aside.
  • In a large casserole, heat the bacon fat. Add the onions and cook over medium heat, until transparent, 10 to 15 minutes. Stir in the paprika and cook, stirring, until the paprika and onions form a thick paste and the scent of raw paprika disappears, about 5 minutes. Stir in the beef and ham cubes. Rinse the sauerkraut and add it, along with the broth, bay leaves and thyme. Stir well to combine all the ingredients.
  • Bring the stew to a boil. Reduce the heat to simmer and cook, covered, for about 45 minutes. Add the sausage slices and continue cooking until the meats are very tender, about 45 minutes longer. Season with salt and pepper. Let cool, then refrigerate overnight to allow the flavors to develop.
  • The following day, reheat the stew and adjust seasoning with additional salt and pepper. Remove bay leaves. Serve with sour cream on the side, if desired.
