6 ounces uncooked angel hair pasta
2 large eggs, lightly beaten
1/3 cup grated Parmesan cheese
1 pound ground beef
1/2 cup chopped onion
1/4 cup chopped green pepper
1 jar (14 ounces) meatless pasta sauce
1 teaspoon Creole seasoning
3/4 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 package (8 ounces) cream cheese, softened
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Cook pasta according to package directions; drain. Add eggs and Parmesan cheese. Press onto the bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake at 350° for 10 minutes., Meanwhile, in a skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in pasta sauce and seasonings. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Between two pieces of waxed paper, roll out cream cheese into a 7-in. circle. Place in crust. Top with spinach and meat sauce. Sprinkle with mozzarella cheese. Bake at 350° until set, 20-30 minutes.

1 cup all-purpose flour
1/3 cup old-fashioned oats
7 tablespoons cold butter
2 to 3 tablespoons cold water
1 pound ground beef
1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
1/4 cup ketchup
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried marjoram
1/4 teaspoon pepper
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 large eggs, lightly beaten
2 cups shredded cheddar cheese, divided
1 large tomato, seeded and diced

Steps:

  • In a large bowl, combine flour and oats; cut in the butter until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Roll out dough to fit a 9-in. pie plate. Transfer to plate; trim and flute edges., Preheat oven to 400°. In a large skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Stir in the ketchup and seasonings. Fold in the spinach; cool slightly. Stir in the eggs and 1 cup cheese until combined; spoon into crust., Bake until the center is set, 25-30 minutes. Sprinkle tomato and remaining cheese around edge of pie. Bake until cheese is melted, 5-10 minutes longer. Let stand for 5-10 minutes before cutting.

  • Fit one crust into a 9" glass pie plate.

Italian Beef and Spinach Pie image

This is sort of like a lasagna in a pie plate, with the addition of spinach and mushrooms. Super easy, really great flavor.

1 9" pie shell, unbaked
1/2 lb hamburger
1/4 lb italian sausage
3/4 c chopped red pepper
1/2 c sliced mushrooms
1 clove garlic
1 c water
1/2 c tomato paste
1 1/2 tsp italian seasoning
1/2 tsp salt
10 oz package frozen spinach
2/3 c ricotta cheese
4 oz shredded mozzarella
1 c tomato pieces

Steps:

  • 1. Line pastry shell with double thickness of foil. Bake 450 degrees for 8 min. Remove foil, bake 4-5 min more or until set and dry. Set aside. Cook beef, sausage, pepper, mushrooms and garlic until meat is brown and vegetables are tender. Drain. Stir in water, tomato paste, Italian seasoning and salt. Boil, reduce and simmer 10 min covered. Stir together spinach, ricotta, 1/4 c of the mozzarella and spoon into shell. Top with meat. Cover pastry edges with foil to prevent burning. Bake at 350 degrees 45 min. Remove foil. Top with tomato and remaining cheese. Bake 2 min more to heat through and melt cheese. Let stand 10 min before serving.

EASY BEEF AND SPINACH PIE

I use Bob's Red Mill buckwheat pancake mix, but it's also good with whole wheat. These make for a more savory flavor. This is so quick and easy and is a great weeknight meal.

2 cup(s) buckwheat pancake batter
1 can(s) spinach, drained well
1 pound(s) ground beef
1 cup(s) diced onions
3 tablespoon(s) turmeric
To taste - salt and pepper

Steps:

  • Brown the beef with turmeric. Salt and pepper to taste.
  • Drain the beef, using the fat to brown the onion. Add drained onion to beef and mix well.
  • Spray 13x9 inch dish with cooking spray or grease dish. Spread beef/onion mixture into dish, then seasoned spinach (salt and pepper to taste).
  • Prepare pancake batter according to directions then pour over spinach.
  • Bake at 350 degrees for 40 minutes or until done.

1/2 cp shredded mozzarella

Steps:

  • Cook pasta according to pkg directions; drain. Add eggs & parmesan cheese, press onto bottom and up sides of a greased 9" deep dish pie pan. Bake @ 350 for 10 mins. Meanwhile, in a skillet, cook the beef, onion, and grn pepper over med. heat until meat is no longer pink; drain. Stir in spaghetti sauce and seasonings. Bring to a boil reduce heat, cover and simmer 10 mins. Between 2 pieces of waxed paper, roll out cream cheese into a 7" circle. Place in the crust. Top with spinach and meat sauce. Sprinkle with mozzaella. Bake @ 350 for 20-30 mins. or until set. Yield 6-8 servings

The original recipe called for this to be made in a 9 x 13 inch pan but, I make mine in individual oven proof dishes and cut & pieced the pie crust to cover the top of each one. Tastes great and is so easy!

2 medium onions, chopped
2 (10 ounce) packages frozen mixed vegetables
3 cups water
2 (1 7/8 ounce) boxes cream of spinach soup mix
2 refrigerated pie crusts

Steps:

  • Preheat over to 450 degrees F. Cook ground beef, stirring until lightly browned.
  • Add onion; saute 2 minutes. Stir in water, vegetables and soup mixes and bring to a boil; boil 2 minutes.
  • Spoon beef mixture into a 9 x 13 baking dish or 8 individual oven proof dishes. Top with pie crusts. Cut vents in top and flute edges.
