BONELESS KALBI SHORT RIBS

3 tablespoons honey
3 tablespoons sesame oil
3 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon hoisin sauce
1 tablespoon minced onions
1 tablespoon white vinegar
1/2 teaspoon chile pepper flakes
1/2 teaspoon garlic
1/2 teaspoon chopped ginger
1/4 teaspoon salt
1/4 cup canola oil
1 cup mayonnaise, preferably Best Foods
2 cups soy sauce
1 cup brown sugar
1 cup granulated sugar
3 tablespoons minced garlic
2 tablespoons chopped ginger
1 tablespoon sesame oil
1/2 teaspoon black pepper
3 pounds boneless short ribs
20 ounces shredded cabbage
8 scoops cooked sticky rice
12 ounces spring mix lettuce
Sliced green onions, for garnish

Steps:

  • For the Alley's house dressing: Blend together the honey, sesame oil, soy sauce, rice vinegar, hoisin, onions, white vinegar, chile flakes, garlic, ginger and salt in a blender. Continuing to blend, add oil slowly. Mix in mayonnaise.
  • For the short ribs: Whisk together soy sauce, sugars, garlic, ginger, sesame oil and pepper in a bowl until sugar is dissolved Transfer to a vacuum-seal or resealable plastic bag and add the ribs. Marinate, refrigerated, overnight.
  • Preheat a grill to medium-high heat.
  • Grill ribs until medium to well-done, 3 minutes a side. Slice for service.
  • Divide shredded cabbage among 4 plates. Add 2 scoops sticky rice to each. Top with kalbi.
  • Toss lettuce with The Alley's house dressing. Plate with kalbi. Garnish with sliced green onions.

Inspired by galbi, or Korean barbecued short ribs, this recipe takes a sharp turn away from the traditional sweet, fruity treatment and instead skews savory, with warm spices like cumin, coriander and turmeric. Meaty short ribs generally require a lengthy cook time, but slice them thinly off the bone and they'll tenderize quickly when seared on the stovetop-or you could use slivers of skirt steak or hanger steak instead. The skinny strips also have a higher surface area, which means they'll quickly soak up the flavors of the marinade. Rice is the perfect canvas for the meat, and celery and lettuce balance out the bold flavors with lightness and crunch.

1 pound boneless beef short ribs, sliced 1/4-inch thick
2 tablespoons soy sauce
1 tablespoon grated fresh ginger

Steps:

  • Combine short ribs, soy sauce, ginger, sugar, garlic, coriander, cumin, turmeric, red-pepper flakes and 1 teaspoon kosher salt in a medium bowl and toss to coat. Cover, transfer to the fridge and let marinate for 5 minutes or up to 8 hours, if desired.
  • Heat oil in a large skillet over medium. Working in batches, cook meat until browned all over, about 3 minutes per side.
  • Divide rice and short ribs among bowls. Top with lettuce, celery and cilantro. Serve with lime wedges for squeezing on top.

5 pounds Korean style beef short ribs*
1 cup brown sugar, packed
1 cup soy sauce
1/2 cup water
1/4 cup mirin (rice wine)
1 small onion, peeled and finely grated
1 small Asian pear, peeled and finely grated
4 tablespoons minced garlic
2 tablespoons dark sesame oil
1/4 teaspoon black pepper
2 green onions, thinly sliced (optional)

Steps:

  • Preparation: Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight.
  • Heat gas or charcoal grill to medium-hot. Drain excess marinade off beef. Grill short ribs, turning once, to desired doneness, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired. Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble.

Traditionally, should be served sliced, rolled in romaine lettuce leaves, along with white rice, lightly browned garlic slices, and gochujang (Korean red pepper paste).

¾ cup soy sauce
¾ cup brown sugar
¾ cup water
1 garlic clove, minced
2 green onions, chopped
1 tablespoon Asian (toasted) sesame oil
2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • In a bowl, stir together the soy sauce, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
  • Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.
