A crockpot recipe that turns the most economical roast of beef into a tender, succulent, delicious meal. The wine really enhances the flavor of the meat, and n/a wine can also be used to great success for those who prefer it. Coming home to the aroma of this slow cooked beef will put you in mind of stepping into a nice Italian restaurant. Very comforting and inviting. Enjoy!

Number Of Ingredients 14

1 (3 -4 lb) chuck roast (okay to use from frozen state)
1 small onion, very thinly sliced
4 large garlic cloves, very thinly sliced
3 cups full-bodied red wine (Shiraz, Beaujolais, Syrah, etc. Using non-alcoholic wine is perfectly fine, but I suggest pouring 2 )
2 (14 1/2 ounce) cans diced tomatoes, in their juice
1 cup beef broth
1 tablespoon Worcestershire sauce
1 tablespoon dried rosemary
1 tablespoon dried oregano
1 tablespoon dried basil
2 teaspoons dried thyme
2 teaspoons kosher salt, divided
2 teaspoons fresh ground pepper, divided
2 tablespoons cornstarch, optional for a thickened sauce

Steps:

  • In a 5.5 quart crockpot:.
  • Place ½ the onion slices on the bottom of the dry crockpot. Season roast on all sides with 1 tsp salt and 1 tsp pepper and lay on top of the bed of onions. Lay remaining onions and sliced garlic on top of the roast.
  • In a large bowl, combine wine, tomatoes, broth, Worcestershire, all herbs and 1 tsp salt and 1 tsp pepper. Pour over the roast.
  • Cover the crockpot and let cook on low heat for 8-10 hours until tender. OR - Cook on high heat for 2 hours, then turn to low and cook 6 more hours or until tender.
  • Taste the sauce and adjust salt and pepper, if necessary.
  • Sauce can be thickened at the end by making a slurry of 2 TB cornstarch in ½ cup cold water and adding it to the crockpot. Stir the slurry in slowly and let cook an additional 10 minutes on high heat, covered.
  • Serve over rice or egg noodles.

I call this my 'famous Seamus' pot roast because my tiny Siamese cat, Seamus, sat in the kitchen the entire time this pot roast was cooking. I've been making this recipe for 40+ years and I just throw the ingredients together; it's very forgiving. My son-in-law also says it's the best thing he ever ate. When boys hang around the oven, it can't be bad.

3 pounds boneless beef chuck roast
2 tablespoons all-purpose flour
2 tablespoons canola oil
½ cup water
½ cup red wine
1 teaspoon dried basil
½ teaspoon dried marjoram
½ teaspoon dried thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 onion, sliced
6 red potatoes, washed and halved
6 carrot, peeled and cut into 2-inch lengths
8 pearl onions, peeled and halved

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Sprinkle the roast evenly with the flour and set aside. Heat the canola oil in an oven-proof Dutch oven with lid over medium-high heat. Brown the roast on all sides, about 10 minutes total; remove from the heat. Pour in the water and wine. Sprinkle with the basil, marjoram, thyme, salt, and pepper. Arrange the onion slices on the roast.
  • Replace the cover and bake in the preheated oven for 3 hours. Add the potatoes, carrots, and pearl onions. Pour in additional water if the roast looks dry. Continue baking covered until the roast pulls apart easily with a fork, about 1 hour longer.

This is a stick to your ribs recipe. Serve it with mashed potatoes or over egg noodles. Each serving is 1 1/3 cup. I found this recipe in Cooking Club magazine. I have not tried this recipe, but I'm posting it for safe keeping.

2 1/2-3 lbs beef chuck roast, cut into 2-inch pieces
1 1/2 cups red wine
20 ounces canned beef consomme (2-10.5oz cans)
1 1/2 cups frozen pearl onions
8 ounces sliced mushrooms
10 slices bacon, chopped
1/2 cup all-purpose flour
3/4 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon dried thyme

Steps:

  • Marinate beef in wine in resealable plastic bag in refrigerator up to 24 hours, turning bag occasionally.
  • Drain beef; reserve marinade. Pat beef dry. Heat slow cooker to high. Add consomme, onions and mushrooms.
  • Cook bacon in large skillet over medium heat 3-5 minutes or until browned. Drain on paper towels, reserving drippings in skillet. Add bacon to slow cooker.
  • Combine flour, pepper, onion powder and garlic powder in large bag. Add beef; shake to coat. Remove beef; reserve flour mixture.
  • Cook beef in bacon drippings in batches over medium-high heat 3-5 minutes until browned on all sides. Place in slow cooker.
  • Add reserved flour mixture to drippings in skillet; cook and stir over medium heat 1 minute. Add 1 cup of the reserved marinade; bring to a boil, stirring to scrape up any browned bits from bottom of skillet. Pour into slow cooker.
  • Add remaining marinade and thyme to slow cooker. Cook over low heat 7-9 hours or until beef is tender. Remove beef and vegetables. Pour liquid into large skillet; boil over high heat 3 minutes or until slightly thickened. Pour over beef and vegetables.

1 beef boneless sirloin tip roast (3 to 4 pounds)
1 to 2 tablespoons olive or vegetable oil
1 envelope (0.7 ounce) Italian dressing mix (dry)

Steps:

  • Heat oven to 325°. Place beef in shallow roasting pan. Brush with oil; sprinkle evenly with dressing mix (dry). Insert meat thermometer so tip is in thickest part of beef.
  • Bake uncovered 1 1/2 to 2 hours or until thermometer reads 140°. Cover beef with aluminum foil and let stand about 15 minutes or until thermometer reads 145°. (Temperature will continue to rise about 5°, and beef will be easier to carve.)
  • Serve beef with pan drippings.
