GROUND BEEF AND PEPPERONI STROMBOLI

Yield 2 Stromboli (8 servings each).

Number Of Ingredients 13

2 loaves (1 pound each) frozen bread dough, thawed
2 large eggs, lightly beaten
1/3 cup olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground mustard
1/2 teaspoon dried oregano
1 pound ground beef, cooked and drained
1 package (3-1/2 ounces) sliced pepperoni
2 cups shredded part-skim mozzarella cheese
1 cup shredded cheddar cheese
1 small onion, chopped

Steps:

  • Place each loaf of bread dough in a large greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Preheat oven to 375°. Punch dough down. Roll each loaf into a 15x12-in. rectangle. , In a small bowl, combine eggs, oil and seasonings. Brush over each dough to within 1/2 in. of edges; set remaining egg mixture aside. Layer beef, pepperoni, cheeses and onion on each dough to within 1/2 in. of edges. Roll up each, jelly-roll style, beginning with a long side. Tuck ends underneath; seal edges well. , Place each, seam side down, on a greased baking sheet. Brush with egg mixture. Bake until lightly browned, 30-35 minutes, brushing with egg mixture midway through baking. Let stand 5-10 minutes before cutting.

This is delicious! The complete casserole (with the crust on) can be prepared up to a day in advance and refrigerated until ready to bake. I used mozzeralla slices for this in place of shredded mozzeralla... add in any of your other favorites also.

1 lb ground beef
2 tablespoons chopped garlic
1 large onion, chopped
1 green bell pepper, chopped
3 tablespoons parmesan cheese
seasoning salt (can use table salt)
pepper
2 cups favorite pizza sauce
1/4 lb pepperoni, chopped (can use more)
1/2-1 teaspoon Italian herb seasoning
1 cup canned mushroom, drained
1 cup milk
1 tablespoon oil
2 eggs
1 cup flour
1/4 teaspoon salt
1 pinch cayenne pepper
3 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
8 slices cooked bacon, chopped

Steps:

  • Set oven to 400 degrees.
  • Grease a 13 x 9-inch baking dish.
  • In a large skillet cook ground beef with onion, garlic and green pepper until meat is no longer pink; drain fat.
  • Add in 3 tablespoons (or more) grated Parmesan cheese; stir to combine.
  • Add in pizza sauce, chopped pepperoni, herb seasoning and mushrooms; mix to combine and bring to a simmer for 15 minutes, stirring occasionally.
  • Meanwhile in another bowl combine milk, oil and eggs; beat for 2 minutes with an electric mixer.
  • Stir in flour, salt and cayenne; mix to combine; set aside.
  • Spoon the ground beef mixture into the prepared baking dish.
  • Sprinkle grated mozzeralla cheese on top.
  • Sprinkle with chopped bacon.
  • Pour the batter over cheese, spreading evenly to cover completely.
  • Sprinkle with 1/2 cup Parmesan cheese.
  • Up to this point you can cover and refrigerate until ready to bake.
  • Bake for 20-25 minutes, or until golden brown.

1 package (10 oz) prebaked Italian whole wheat thin pizza crust
1/2 lb extra-lean (at least 90%) ground beef
1 package (8 oz) sliced fresh mushrooms
Olive oil cooking spray
3/4 cup marinara sauce
1/4 cup sliced turkey pepperoni (about 15 slices)
2/3 cup shredded part-skim mozzarella cheese
1/4 teaspoon crushed red pepper flakes

Steps:

  • Heat oven to 450°F. Place pizza crust on rack in oven while oven preheats; heat 5 minutes.
  • Meanwhile, spray 12-inch skillet with cooking spray; heat over medium-high heat. Add beef and mushrooms; cook 5 minutes, stirring occasionally, or until beef is thoroughly cooked. Drain.
  • Remove crust from oven; place on ungreased cookie sheet. Spray crust with cooking spray; spread marinara sauce over crust, leaving 1-inch border. Top with beef mixture, pepperoni and cheese. Sprinkle with pepper flakes.

5 pounds lean ground beef
5 heaping teaspoons of morton's "tender quick" curing salt
2 1/2 heaping teaspoons of mustard seed
1 teaspoon ground pepper
2 1/2 teaspoons garlic salt
1/2 teaspoon cayenne pepper

Steps:

  • 1. Day 1: Mix all the ingredients and knead well. Refrigerate in sealed container (or air-tight with plastic wrap). Day 2: Knead again; cover and continue refrigerating. Day 3: Form meat into four rolls. Place rolls on an oven grill pan or wire rack; place the grill/rack on/inside a cookie sheet, so excess fat can drip. Bake 7 hours at 150 degrees. Turn rolls 45 degrees every 2 hours. Store in the fridge or freezer

This is almost like a calzone...meat, cheese and a delicious blend of spices baked in a store-bought frozen and thawed bread dough, which makes this very simple to prepare, this is worth making, it is truly delicious! Prep time includes rising time.

2 (1 lb) frozen bread dough, thawed (or home made bread dough may be used if desired)
2 eggs, beaten
1/3 cup vegetable oil
1/2 teaspoon garlic powder or 4 -5 fresh minced garlic cloves, if desired to taste
salt and pepper
1/2 teaspoon ground mustard powder
1/2 teaspoon dried oregano
1 lb ground beef or 1 lb ground chuck, cooked and drained
1/4 lb sliced pepperoni, to taste
2 cups shredded mozzarella cheese, to taste
1 cup shredded cheddar cheese, to taste
1 small onion, chopped

Steps:

  • Place each loaf of thawed bread dough in a greased glass bowl (turning once to grease top).
  • Cover, and let rise in a warm place for approx 45 minutes, or until doubled; punch down dough.
  • Roll each loaf into a 15x12-inch rectangle.
  • In a small bowl, mix or whisk together the eggs, oil, garlic, salt, pepper, mustard and oregano; brush evenly over EACH dough to within 1/2-inch of edges (this mixture may be doubled if desired).

12 lasagna noodles
70 pepperoni rounds
1/2 c shredded parmesan cheese
1 lb ground beef
4 clove garlic minced
salt and pepper
1/4 c dry red wine
24 oz spaghetti sauce
2 c shredded mozzarella cheese
fresh basil

Steps:

  • 1. Cook the lasagna noodles in salted boiling water for 10 minutes. Drain and lay out on parchment paper. Place 5 pepperoni pieces on each noodle. Sprinkle with shredded Parmesan cheese.
  • 2. Place the ground beef in a large skillet. Add the minced garlic and season with salt and pepper. Cook until beef is almost done. Add the wine and let most evaporate.
  • 3. Stir in the spaghetti sauce. Spoon some sauce in bottom of a 9x15 pan. With a slotted spoon, spoon meat sauce on each lasagna noodle.
  • 4. Roll up each lasagna noodle and place in pan. Pour the remaining spaghetti sauce over top. Place in a preheated 375 degree oven. Bake 15 minutes.
  • 5. Add the shredded Mozzarella and bake another 10 minutes. Garnish with the fresh basil
