GROUND BEEF AND PEPPERONI STROMBOLI

Steps:
- Place each loaf of bread dough in a large greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Preheat oven to 375°. Punch dough down. Roll each loaf into a 15x12-in. rectangle. , In a small bowl, combine eggs, oil and seasonings. Brush over each dough to within 1/2 in. of edges; set remaining egg mixture aside. Layer beef, pepperoni, cheeses and onion on each dough to within 1/2 in. of edges. Roll up each, jelly-roll style, beginning with a long side. Tuck ends underneath; seal edges well. , Place each, seam side down, on a greased baking sheet. Brush with egg mixture. Bake until lightly browned, 30-35 minutes, brushing with egg mixture midway through baking. Let stand 5-10 minutes before cutting.

This is delicious! The complete casserole (with the crust on) can be prepared up to a day in advance and refrigerated until ready to bake. I used mozzeralla slices for this in place of shredded mozzeralla... add in any of your other favorites also.

Steps:
- Set oven to 400 degrees.
- Grease a 13 x 9-inch baking dish.
- In a large skillet cook ground beef with onion, garlic and green pepper until meat is no longer pink; drain fat.
- Add in 3 tablespoons (or more) grated Parmesan cheese; stir to combine.
- Add in pizza sauce, chopped pepperoni, herb seasoning and mushrooms; mix to combine and bring to a simmer for 15 minutes, stirring occasionally.
- Meanwhile in another bowl combine milk, oil and eggs; beat for 2 minutes with an electric mixer.
- Stir in flour, salt and cayenne; mix to combine; set aside.
- Spoon the ground beef mixture into the prepared baking dish.
- Sprinkle grated mozzeralla cheese on top.
- Sprinkle with chopped bacon.
- Pour the batter over cheese, spreading evenly to cover completely.
- Sprinkle with 1/2 cup Parmesan cheese.
- Up to this point you can cover and refrigerate until ready to bake.
- Bake for 20-25 minutes, or until golden brown.
- Delicious!

- Heat oven to 450°F. Place pizza crust on rack in oven while oven preheats; heat 5 minutes.
- Meanwhile, spray 12-inch skillet with cooking spray; heat over medium-high heat. Add beef and mushrooms; cook 5 minutes, stirring occasionally, or until beef is thoroughly cooked. Drain.

- 1. Day 1: Mix all the ingredients and knead well. Refrigerate in sealed container (or air-tight with plastic wrap). Day 2: Knead again; cover and continue refrigerating. Day 3: Form meat into four rolls. Place rolls on an oven grill pan or wire rack; place the grill/rack on/inside a cookie sheet, so excess fat can drip. Bake 7 hours at 150 degrees. Turn rolls 45 degrees every 2 hours. Store in the fridge or freezer

- Place each loaf of thawed bread dough in a greased glass bowl (turning once to grease top).
- Cover, and let rise in a warm place for approx 45 minutes, or until doubled; punch down dough.
- Roll each loaf into a 15x12-inch rectangle.
- In a small bowl, mix or whisk together the eggs, oil, garlic, salt, pepper, mustard and oregano; brush evenly over EACH dough to within 1/2-inch of edges (this mixture may be doubled if desired).

PEPPERONI BEEF LASAGNA ROLL UPS.
Super fast and easy lasagna dish. Super good too.

- 1. Cook the lasagna noodles in salted boiling water for 10 minutes. Drain and lay out on parchment paper. Place 5 pepperoni pieces on each noodle. Sprinkle with shredded Parmesan cheese.
- 2. Place the ground beef in a large skillet. Add the minced garlic and season with salt and pepper. Cook until beef is almost done. Add the wine and let most evaporate.
- 3. Stir in the spaghetti sauce. Spoon some sauce in bottom of a 9x15 pan. With a slotted spoon, spoon meat sauce on each lasagna noodle.
- 4. Roll up each lasagna noodle and place in pan. Pour the remaining spaghetti sauce over top. Place in a preheated 375 degree oven. Bake 15 minutes.
- 5. Add the shredded Mozzarella and bake another 10 minutes. Garnish with the fresh basil
