BEEF PEPPER STEAK
This makes a tasty, extremely tender pepper steak. Try serving with salad, tomatoes and French fries.

- In a small, nonporous bowl, combine the peppercorns, tamari, garlic, sugar and salt. Add the beef filet and coat well on all sides. Cover and marinate in the refrigerator for 1 hour.
- Melt butter in a medium saucepan over medium high heat. Place the beef filet in the pan and saute for 6 to 8 minutes per side, or until internal temperature reaches at least 145 degrees F (65 degrees C).

ONION 'N PEPPER BEEF STEAK SANDWICHES
This is a nice sandwich where you can also use leftover meat. You can make it as spicy as you choose by varying the amount of the jalapenos. To reduce the heat of the jalapenos remove the membranes and seeds.

Steps:
- Heat oil in large nonstick skillet over medium-high heat.
- Add onion, jalapeño pepper and garlic; stir-fry 3 to 4 minutes or until lightly browned.
- Remove from skillet; reserve.
- Add beef round tip steaks to same skillet; cook over medium-high heat 1 to 2 minutes, turning once.
- Do not over cook.
- Season with salt, if desired.
- Place equal amounts of beef on roll bottoms; top with equal amounts of reserved onion mixture and tomato.
- Cover with roll tops.
CUMIN BEEF PEPPER STEAK AND BROWN RICE

- Cook the rice using chicken stock according to the package directions. Wait to heat the pan for the stir-fry until the rice is 10 minutes from being ready to eat.
- Cut the meat lengthwise into 2 thin steaks, then wrap in plastic wrap and place in the freezer for 10 minutes to firm it up for thin slicing.
- Toast the cumin and peppercorns in small skillet then grind in a spice mill.
- Very thinly slice the meat on an angle, against the grain into bite-size pieces.
- Heat a large skillet over high heat with the stir-fry oil. When the oil ripples and smokes, add the meat and cook until browned. Remove the meat and add the garlic, chiles, peppers, cinnamon, ginger, mushrooms, onions and toasted spices. Stir-fry until tender-crisp, 2 to 3 minutes. Add the sherry. Add the scallions to the skillet with the beef, then toss with the soy sauce and cilantro. Serve with rice.

Great on Pinneapple rice ! I Use brown rice and pinneapple chunks in my rice cooker using all the juice from can and adding water to reach desired amount and sprikle in a little red pepper. OOPS, I think thats another recipe ! LOL

- 1. Mix ground beef, salt and pepper in bowl.
- 2. Shape into 8 patties.
- 3. Brown quickly on both sides in butter in skillet.
- 4. Remove patties to hold platter.

PEPPER STEAK SALAD WITH MANGO, AVOCADO AND JALAPENO VINAIGRETTE (NEW DYNAMIC BEEF DISHES)

- Preheat charcoal grill to medium heat.
- Place the jalapeno peppers on grill over medium, ash-covered coals. Grill uncovered, for about 11 to 13 minutes or until evenly blistered and blackened. Place in a food-safe plastic bag; close bag. Let stand 10 to 15 minutes until skins are loosened.
- Press black pepper evenly onto beef steaks. Place steaks on grill over medium, ash-covered coals. Grill, uncovered, 10 to 12 minutes for medium rare to medium doneness, turning occasionally. Remove from grill and let stand while preparing vinaigrette.
- Meanwhile prepare Jalapeno Vinaigrette:
- Remove and discard skins, seeds and membranes from jalapeno peppers. Place peppers, lime juice, cilantro, water and salt in food processor container. Cover and pulse on and off until combined. With motor running, slowly add oil through opening in cover, processing until well blended.
- Arrange salad greens on serving platter. Fan the mango and avocado slices over greens.
- Carve steaks into slices and season with salt, to taste. Arrange over salad. Top with shallots and drizzle with vinaigrette. Sprinkle with cheese.
PEPPER BEEF STEAK PACKETS
Simple and no mess; these pepper steak packets can be baked in the oven or on the grill. Can add other vegies as desired (slivered onion, small chunks of broccoli, snow peas, etc.). (tip: use Heavy Duty Aluminum Foil sheets).

- Preheat oven to 450 degrees F or grill to medium-high.
- Sprinkle both sides of steak with garlic powder and pepper; cut in thin strips. Combine steak strips and pepper strips with teriyaki sauce.
- Center one-fourth of the steak mixture on each sheet of foil (12x18-inches each).
- Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
- Bake 12 to 15 minutes on a cookie sheet in oven OR grill 7 to 9 minutes in covered grill.

- In a medium bowl, combine the garlic, 1 tablespoon of the sugar, sesame oil and soy sauce and stir until the sugar dissolves. Toss in the beef. Cover and let marinate for at least 30 minutes.
- Make the lime-pepper dipping sauce by combining the remaining 1/4 teaspoon sugar, black pepper, 1/2 teaspoon salt, lime juice and 2 tablespoons water in a small bowl. Taste and add more water if the sauce is too tart. Set aside.
- Prepare a serving plate by covering it with a generous layer of leaf lettuce, onions and tomatoes. Season the tomatoes with salt.
- Heat the oil in a wok on over high heat until the oil smokes slightly. Add the butter, and stir just until the butter melts. Add the beef, and stir in a circular motion. Simultaneously use the back of a metal spatula to press the meat against the sides of the wok to char. Cook until the meat is browned but still lightly pink in the middle, about 7 minutes. (Avoid having the meat simply boil in the liquid fat.) Using a slotted spoon, transfer the meat to the prepared serving plate. Serve immediately with the lime-pepper dipping sauce.

- salt and pepper the filets.
- Dust with flour.
- Heat oil in 12 in skillet on med hi.
- Add steaks and brown on both sides.
- Cook for 4 minutes.
- Remove steaks.
- Add butter.
- Add onion, garlic, parsley, and mushrooms.
- Saute for 2 minutes.
