Serve this simple-to-prepare beef roast with crusty rolls and iced tea to complete the meal.

2 medium onions, cut into eighths
2 tablespoons Land O Lakes® Butter
1 teaspoon finely chopped fresh garlic
1 (4- to 5-pound) beef chuck roast
1 (15- to 16-ounce) can Mexican-style stewed tomatoes
1 (16-ounce) jar salsa
2 medium green, red or yellow bell peppers, cut into 1/2-inch pieces

Steps:

  • Heat oven to 350°F.
  • Melt butter in oven proof 4-quart casserole dish or Dutch oven until sizzling; stir in garlic. Add beef roast. Cook over medium high heat, turning once, 7-9 minutes or until browned.
  • Stir in all remaining ingredients. Cover; bake 1 1/2 -2 hours or until roast is fork tender.
  • Slice meat. Serve with vegetable mixture.

2 tablespoons vegetable oil
1-1/4 pounds beef top round steak or top sirloin steak, cut into 1-inch cubes
1 garlic clove, minced
1 medium onion, cut into wedges
1 medium red bell pepper, seeded and cut into strips
1 medium green bell pepper, seeded and cut into strips
1 can (10-1/2 ounces) beef broth
1/4 cup water
3 tablespoons cornstarch
Salt and pepper to taste
Hot cooked rice

Steps:

  • Heat oil in skillet, brown beef on all sides. Add the garlic and continue to cook for 2 minutes. Add onion, peppers and broth; cover and simmer 20 minutes. , Combine water and cornstarch; stir into broth. Cook and stir until gravy is thick and shiny. Add seasonings. Serve over hot cooked rice.

1 ½ tbsp ghee or avocado oil
1 pound sirloin steak, cut into small bite sized pieces
2 tsp salt
½ tsp black pepper
1 tbsp apple cider vinegar
3 cloves garlic, minced
1 red bell pepper, diced into large chunks
1 orange bell pepper, diced into large chunks
½ yellow onion, sliced
1 ½ cups sliced baby bella mushrooms
¼ cup sliced green onion, for garnish

Steps:

  • Add the steak to a mixing bowl and season with salt and pepper. Stir until well combined.
  • Heat a large skillet over medium-high heat. Once the skillet is hot, you can add in the ghee. Next, add the steak bites to the skillet cook for 3-5 minutes until browned on all sides. Remove the meat from the pan and set aside.
  • Add the apple cider vinegar to the skillet to deglaze the pan. Then, add the minced garlic, onion, mushrooms, and diced peppers. Cook the veggies for 10-12 more minutes until the sliced onion is translucent and the bell peppers are tender yet crisp.
  • Add the steak and its juices back to the skillet. When the beef is back in the pan, give everything a good stir until well combined and cook for 2-3 more minutes until the steak is hot.
  • Remove the skillet from the heat and garnish with fresh sliced green onion before serving.

1 lb beef sirloin, cut into thin strips
3 green onions, chopped
2 tablespoons low sodium soy sauce
1 tablespoon honey
1 teaspoon sesame oil
2 tablespoons minced fresh garlic (or to taste)
2 teaspoons dried red pepper flakes (or to taste)
2 -3 tablespoons vegetable oil
cooked rice

Steps:

  • In a bowl whisk together green onions, soy sauce, honey, sesame oil; place the mixture into a large zip-lock freezer bag.
  • Add in beef strips, seal bag and toss to coat; refrigerate for 1 hour.
  • In a large skillet heat oil; add in the garlic and dried pepper flakes; cook for about 1 minute.

1 1/2 pounds boneless lean beef, such as beef sirloin, tri-tip, or top round
3 teaspoons olive oil or vegetable oil
1 teaspoon Maggi seasoning extract or Worcestershire sauce
1 clove garlic (medium), minced
1 large white onion, coarsely chopped
4 medium tomatoes, peeled and coarsely chopped, or 1 (14-ounce) can diced tomatoes, drained
3 , Anaheim or poblano chile kimmy, , roasted and peeled

  • 1. Prepare the chiles. Then, cut out the stem and cut open the chiles to remove the seeds and ribs. Cut the chiles into strips, then into 3/4-inch pieces. Reserve. Pan-Seared Filet Mignon with Red Bell Pepper, Tomato, and Basil Sauce image

Olive oil
1 1/4 pounds plum tomatoes, halved lengthwise
2 large red bell peppers, halved lengthwise, seeded
5 tablespoons butter
4 large shallots, minced
1 14 1/2-ounce can low-salt chicken broth
1/2 cup dry white wine
3/4 cup chopped fresh basil
1/2 teaspoon dried crushed red pepper
8 8-ounce filet mignon steaks (each about 1 inch thick)
1/4 cup water

Steps:

  • Preheat broiler. Brush large baking sheet with oil. Place tomatoes and bell peppers, cut side down, on prepared sheet. Broil until tomatoes and peppers begin to char and blister, about 5 minutes. Cool. Peel skins from 1 pepper half, then cut into thin strips; set aside. Chop tomatoes and remaining peppers (do not peel).
  • Melt 1 tablespoon butter in large nonstick skillet over medium heat. Add shallots and sauté until tender, about 4 minutes. Add broth and wine; bring to boil. Add chopped tomatoes, chopped bell peppers, 1/2 cup basil, and crushed red pepper. Boil mixture gently until reduced to 2 cups, stirring occasionally, about 15 minutes. Cool slightly. Puree mixture in blender until smooth. Pour into strainer set over bowl, pressing on solids to extract as much liquid as possible; set aside. (Sauce can be made 1 day ahead. Cover and chill.)
  • Heat heavy large skillet (preferably cast iron) over high heat. Sprinkle steaks with salt and pepper. Working in batches, add steaks to hot dry skillet and cook about 4 minutes per side for medium-rare. Transfer to platter; cover to keep warm. Add 1/4 cup water to skillet; stir to scrape up browned bits. Add sauce to skillet; reduce heat and simmer until heated through, about 4 minutes. Remove from heat. Whisk in remaining 4 tablespoons butter, then remaining 1/4 cup basil. Season sauce with salt and pepper.
  • Place 1 steak on each of 8 plates. Drizzle sauce over. Garnish steaks with reserved pepper strips and serve.

1-1/2 pounds beef top sirloin steak, cut into thin strips
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil, divided
2 medium onions, thinly sliced
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup reduced-sodium beef broth
1/3 cup dry red wine or additional reduced-sodium beef broth
1 bay leaf
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
3 cups hot cooked brown rice

Steps:

  • Sprinkle beef strips with salt and pepper. In a large nonstick skillet, brown beef in 1 teaspoon oil. Remove and keep warm. , In the same skillet, saute onions in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, wine, bay leaf, basil and thyme. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Return beef to the pan; cook for 2-4 minutes or until tender. Discard bay leaf. Serve with rice. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.
