BARBECUE BEEF CUPS

This is a quick and easy recipe given to me by a friend. My family loves it.

¾ pound lean ground beef
½ cup barbeque sauce
1 tablespoon dried minced onion
1 (12 ounce) package refrigerated biscuit dough
⅓ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
  • In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
  • Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
  • Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

These have reached comfort food status in my house. Very easy to make, spices can be added to personal taste, same with types of cheese, sauce, etc. This can easily be adjusted to a lower fat version by adjusting the ground beef fat content, biscuits and cheese. I am sure there are lots of these recipes or similar variations floating around the Zaar.

1 lb ground beef
1 (14 ounce) jar spaghetti sauce
2 (8 ounce) cans large refrigerated biscuits (8 oz each, I prefer Pillsbury Grands)
1 cup shredded cheddar cheese
1 teaspoon italian seasoning

Steps:

  • Preheat oven to 375 degrees.
  • Brown ground beef, drain, add spaghetti sauce and seasoning.
  • Cook over medium heat about 5-10 minutes or until heated through.
  • Press biscuits into the bottom and up the sides of greased muffin cups.
  • Spoon 2 tablespoons (+) meat mixture into the center of each cup.
  • Bake for 15 to 17 minutes or until golden brown.
  • Sprinkle with cheese, bake 3 minutes longer or until cheese melts.

1 lb lean ground beef
1/2 cup barbecue sauce
1/4 cup chopped fresh onions or 1 package onion soup mix (single-serving)
1 can refrigerated biscuit (large sized biscuits)

Steps:

  • Preheat oven to 350 degrees.
  • Spray or grease the cups of a muffin tin.
  • In a skillet over medium heat, cook beef until browned; drain off drippings.
  • Stir in the barbeque sauce and onion; simmer on low for 10 minutes.
  • Flatten each biscuit with your hand or a rolling pin and press into the cups of the muffin tin; the dough needs to come to the top of each cup.
  • Place a portion of the beef mixture into each dough cup.
  • Bake at 350 degrees for 12 minutes.
  • Remove from oven, sprinkle each cup with grated cheese, and bake for an additional 3 minutes or until cheese is melted.

350g trimmed sirloin steak
2 tbsp teriyaki sauce marinade, (we used Kikkoman teriyaki marinade)
1⁄2 cucumber
2 tbsp coriander , roughly chopped
juice 1⁄2 lime
6 Little Gem lettuces leaves
1 red chilli , deseeded and thinly sliced
1⁄2 red onion , thinly sliced

Steps:

  • Put the steak between two sheets of cling film and beat with a rolling pin until half its original thickness. Thinly slice the steak, then mix with the teriyaki marinade in a bowl. Leave to marinate for 5-10 mins.
  • Roughly dice the cucumber and mix with the chopped coriander and lime juice. Season with a little salt.
  • Heat a frying pan until very hot, then fry the steak slices for 1½-2½ mins for rare to medium, turning the slices halfway through.
  • Pile the cucumber mixture into the lettuce leaves, then top with the seared teriyaki beef, chilli and red onion.

1 large egg, beaten
4 tablespoons cornstarch
1/2 lb deli corned beef, cut in strips

Steps:

  • Preheat oven to 375 degrees.
  • Place the hash browns in a large bowl and sprinkle half of the cornstarch on top. Toss until well-coated. Repeat with the remaining cornstarch. Mix in the beaten egg.
  • Divide the mixture evenly among 9 standard muffin tin cups that have been greased. Press the mixture to the bottom and sides of the cup. Bake 20-23 minutes or until golden brown.
  • Fill the baked hash brown cups with equally divided amounts of the corned beef strips. Top with equal amounts of the shredded cheese. Bake an additional 7-9 minutes.
  • Let cool 5 minutes. Carefully loosen the edges of cups using a knife. Use a fork to remove each tater cup.

1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 lb beef top sirloin, flank or skirt steak, thinly sliced
Dash salt and pepper
1 package (8 oz) sliced fresh mushrooms (about 3 cups)
1/2 cup chopped onion
1/2 cup chopped carrot
1 cup frozen sweet peas, thawed
2 tablespoons vermouth, if desired, or Progresso™ beef-flavored broth
1 cup (8 oz) full-fat sour cream
1 egg
1 tablespoon milk

Steps:

  • Heat oven to 400°F. Spray 8 regular-size muffin cups with cooking spray.
  • Unroll pie crusts; cut out 8 (4 1/2-inch) rounds. Place round in each muffin cup; lightly press into cup with small glass. Gather dough scraps; re-roll to about 1/8-inch thickness. Cut out 8 (3-inch) rounds (these will be lids). Place lids on plate; place plate and muffin pan in refrigerator.
  • In 10- to 12-inch skillet over medium-high heat, stir-fry beef with salt and pepper just until no longer pink. Remove from skillet to plate; cool.
  • In same skillet, cook mushrooms until tender and water has released from mushrooms and mostly evaporated. Add onion and carrot; sprinkle with dash of salt. Cook until onion is tender and translucent. Add vermouth; scrape up browned bits from bottom of skillet. Continue to cook until liquid is mostly evaporated. Remove mixture from skillet to cool.
  • In large bowl, mix beef, cooked vegetables and thawed peas. Stir in sour cream to coat. Taste for seasoning; add more salt or pepper to taste. Scoop heaping spoonsful of beef mixture into pie crust-lined cups. Top with lids; use fork to seal edges.
  • In small bowl, beat egg and milk with whisk until blended. Brush over tops of pies. Cut vent holes in tops; sprinkle each with a little salt and pepper.
  • Bake 25 to 30 minutes or until pies are golden brown. Cool about 5 minutes before removing from muffin cups. Serve warm.

3/4 cup barbecue sauce
1 tbsp dry minced onion
1 12 oz tube refrigerated biscuits
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400F degrees.
  • Spray muffin tin with nonstick cooking spray.
  • In a large pan, brown and crumble ground beef.
  • Turn off heat and drain excess grease from ground beef.
  • Put ground beef back in pan and add in BBQ sauce and dried minced onion.
  • Stir well.
  • Separate biscuits and place into greased muffin tins.
  • Press dough up and along the sides.
  • Divide meat mixture between muffins (you may have just a small amount leftover).
  • Sprinkle each one with shredded cheddar cheese.

2 tablespoons dry sherry (or white wine or Shaoxing wine)
2 teaspoons cornstarch
1/2 teaspoon sugar

1 tablespoon chopped fresh garlic

Steps:

  • In a small bowl,combine soy sauce,sherry,cornstarch, sugar and salt; stir well and set aside.
  • In a medium bowl, use a spoon to break up the ground beef; gently mix in soy-sauce mixture. Set aside 10 to 15 minutes.
  • Heat wok or large, deep skillet over medium-high heat until very hot.
  • Add oil and swirl to coat pan; add ginger and garlic.
  • Cook for about 1 minute, stirring, until fragrant but not browned.
  • Crumble in beef, and use spatula or large slotted spoon to break it up and spread meat over pan to help it cook evenly.
  • Cook until it changes color on one side, 1 to 2 minutes.

  • Add sesame oil and remove from heat, tossing until sesame oil is well blended.

1 1/2 teaspoons toasted sesame oil
3 tablespoons low-sodium soy sauce
1/4 cup hoisin sauce
2 tablespoons rice vinegar
2 tablespoons sherry or Chinese cooking wine
8 ounces extra-firm tofu
2 teaspoons canola oil
2 tablespoons fresh minced ginger
4 scallions, greens trimmed and reserved, thinly sliced (about 1/3 cup each greens and whites - 3/4-ounce each)
1/2 pound lean ground beef (90 percent or leaner)
1/2 cup finely diced water chestnuts
1 large head Bibb lettuce, outer leaves discarded, leaves separated
1 red bell pepper, finely diced
1/4 cup chopped peanuts

Steps:

  • In a bowl, whisk together chili-garlic sauce, sesame oil, soy sauce, hoisin sauce, vinegar and sherry.
  • Slice the tofu into 1/2-inch thick slabs and lay the slices on top of paper towels. Use more paper towels to firmly pat the tofu in order to remove as much water as possible. This should take about 2 minutes and use about 3 paper towels. Finely mince dried tofu and set aside.
  • Heat the oil in a wok or extra-large skillet over medium heat. Add the ginger and scallion whites and cook until scallion whites are translucent and ginger is fragrant, about 2 to 3 minutes. Add ground beef and tofu and cook, stirring, until beef is opaque and just cooked through, about 4 to 5 minutes. Add reserved sauce. Reduce heat to a simmer and cook, stirring, an additional 3 to 4 minutes. Add water chestnuts and stir to incorporate.

3 medium carrots, chopped
2 medium sweet red peppers, chopped
1 medium onion, chopped
1 boneless beef chuck roast (2 pounds)
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/2 cup reduced-sodium soy sauce
2 tablespoons brown sugar
2 tablespoons white vinegar
1 garlic clove, minced
1/2 teaspoon pepper
3 tablespoons cornstarch
3 tablespoons water
24 Bibb or Boston lettuce leaves
Sliced green onions, optional

Steps:

  • Combine carrots, red peppers and onion in a 6-qt. pressure cooker. Top with roast. In a small bowl combine pineapple, soy sauce, brown sugar, vinegar, garlic and pepper; pour over roast. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 40 minutes. Let pressure release naturally. Press cancel. Remove roast from pressure cooker. Cool slightly; shred roast with 2 forks., Skim fat from cooking juices; return juices and vegetables to pressure cooker. In a small bowl, mix cornstarch and water until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until thickened, 1-2 minutes. Return beef to pressure cooker; heat through., Serve in lettuce leaves. If desired, sprinkle with green onions. Freeze option: Freeze cooled meat mixture and sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

1 sweet red pepper
1 carrot
2 green onions
8 leaves Boston or leaf lettuce
Lime wedges
1 lb. Lean Ground Beef
3 cloves garlic, minced
1 teaspoon minced gingerroot
1 teaspoon Chinese five-spice powder
¼ cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon Asian chili sauce or hot pepper sauce

Steps:

  • 1. Cut cucumber in half lengthwise; thinly slice crosswise. Seed, core and slice red pepper thinly; Grate carrot. Thinly slice green onions. Arrange vegetables, lettuce and lime wedges on serving platter. 2. (Make ahead, cover and refrigerate for up to 2 hours). 3. In large nonstick skillet, sauté beef over medium-high heat; breaking up with spoon until no longer pink, about 5 minutes. Drain off any fat. 4. Ad garlic, ginger and five-spice powder, cook over medium heat, stirring until aromatic, about 2 minutes. Add hoisin sauce, soy sauce and chili sauce. Cook stirring until hot, about 4 minutes. (Make ahead, let cool for 30 minutes, refrigerate uncovered until cold. Refrigerate in air tight container for up to 24 hours, reheat to serve. 5. Transfer to bowl. Let each person spoon ½ cup beef mixture into each lettuce leaf. Top with some cucumber, red pepper, carrot and green onions. Wrap lettuce around filling.
