- Heat a large nonstick skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove ground beef to a paper towel-lined plate and drain and discard grease from the skillet.
- Return ground beef to the skillet and add black beans, salsa, water, and taco seasoning. Mix well and bring to a boil. Reduce heat slightly and add Cheddar cheese and tortilla strips. Cover and simmer until cheese is melted, about 5 minutes. Top with sour cream.

- Stir in tortilla strips; cook 1 minute. Top with cheese; cover, and remove skillet from heat. Let stand 3 to 5 minutes or until cheese is melted.

- Soak the dried kidney beans overnight. Drain and rinse the beans. Add the soaked beans to a medium saucepan with at least 2 inches of water covering them. Bring to a boil. Cover, reduce the heat to medium, and cook 1 1/2 hours, or until the beans are soft.
- While the beans finish cooking, brown the ground meat and drain the excess fat. Return the meat to skillet and add the beans, salsa, cumin, salt and pepper, and 1/2 cup of water. Bring sauce to a boil, reduce the heat, and simmer 5 to 10 minutes.
