Beef and Spicy Sausage Foldovers image

Make these baked foldovers a new taco night tradition. They're great reheated, too!

1/2 lb lean (at least 80%) ground beef
1/2 lb bulk spicy Italian pork sausage
1 package (1 oz) Old El Paso™ taco seasoning mix
1 can (14.5 oz) diced tomatoes with green chiles, undrained
4 1/2 cups Original Bisquick™ mix
1 cup boiling water
1 cup shredded Mexican cheese blend (4 oz)
3/4 cup sour cream
3/4 cup Old El Paso™ Thick 'n Chunky salsa
Fresh cilantro sprigs, if desired

Steps:

  • Heat oven to 400°F. Grease large cookie sheet with shortening or cooking spray.
  • In 10-inch skillet, cook beef and sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix and tomatoes. Reduce heat to medium; cook 5 minutes, stirring occasionally.
  • Meanwhile, in large bowl, stir Bisquick mix and boiling water with fork until dough forms. On surface sprinkled with Bisquick mix, roll dough in Bisquick mix to coat; knead 20 times. Divide dough into 6 balls, about 1/2 cup each. Roll or pat each ball into 7-inch round.
  • Stir cheese into beef mixture. Spoon about 1/2 cup beef mixture onto half of each round. Moisten edge of round with water. Fold round over beef mixture; press edge with fork to seal. Cut 3 small slits in top of each crust to allow steam to escape. Carefully move to cookie sheet with spatula.
  • Bake 20 to 22 minutes or until light golden brown. Serve each foldover with 2 tablespoons each sour cream and salsa. Garnish with cilantro.

great recipe I found on an app on my iphone. My husband and boys LOVE these... Other than the work you have to put into mixing the dough it is a pretty simple recipe.. :) we have also tried topping it with lettice and tomatos for more of a "taco" meal. so we can get all the veggies in with the meal itself. 1 pound lean ground beef (90% lean)
1 pound bulk Italian sausage
1 medium green pepper, chopped
1 medium onion, chopped
8 garlic cloves, minced
3 cans (14-1/2 ounces each) Italian diced tomatoes, drained
2 cans (15 ounces each) tomato sauce
2 cans (6 ounces each) tomato paste
1/3 cup sugar
2 tablespoons Italian seasoning
1 tablespoon dried basil
2 teaspoons dried marjoram
1 teaspoon salt
1/2 teaspoon pepper
Hot cooked spaghetti
Shredded Parmesan cheese, optional

Steps:

  • In a large skillet over medium heat, cook beef and sausage until no longer pink, 10-12 minutes, breaking into crumbles; drain. Transfer to a 5-qt. slow cooker. Stir in the green pepper, onion, garlic, tomatoes, tomato sauce, paste, sugar and seasonings., Cover and cook on low for 8 hours or until bubbly. Serve with spaghetti. I got the idea of using sausage in this from my hubby, and I built it from there. This makes an excelent, juicy, and very tasty meat loaf. Note: I mince my onions because I like the flavor, I just don't want to know they are there, but obviously you can chop them to your liking.

1 lb ground beef
1 (1 lb) package jimmy dean maple sausage
1 egg
1/4 cup plain breadcrumbs
1/2 sweet onion, minced
1/8 cup water
1/2 teaspoon garlic powder
1 teaspoon seasoning salt
ketchup

Steps:

  • Preheat oven to 350*.
  • In a large bowl, combine beef, sausage, egg, crumbs, onion, water, garlic powder and seasoned salt.
  • Mix together until all the ingredients are incorporated.
  • Lightly spray baking dish (I use a glass, 8X10).
  • Move meat mixture to baking dish, and press to the sides.
  • Squirt ketchup across the top, or spread with a brush.
  • Transfer to oven, and bake for 1.25 hours.
  • Let stand for 5-10 minutes.
