1 pound ground beef
1 yellow onion, diced
2 cloves garlic, minced
1 tablespoon taco seasoning
1 (15 ounce) can black beans, drained
1 (14 ounce) can fire-roasted diced tomatoes
1 bunch fresh spinach, trimmed and coarsely chopped
2 cups low-sodium chicken broth
2 cups shredded Mexican cheese blend, divided
1 cup long-grain rice
1 cup red salsa

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Heat a large skillet over medium-high heat. Add ground beef and start to brown, then add onion, garlic, and taco seasoning. Cook until beef is no longer pink, 5 to 7 minutes. Drain and discard any excess oil. Add beans, tomatoes, spinach, chicken broth, 1 cup Mexican blend cheese, rice, and salsa. Pour into the prepared casserole dish.
  • Bake in the preheated oven until rice is cooked, 45 to 50 minutes. Take out of the oven, sprinkle with remaining cheese, and bake until cheese is melted, about 10 minutes more.

1 green bell pepper, chopped
1 red bell pepper, chopped
1 onion, chopped
4 cloves garlic, minced
1 (4 ounce) can chopped green chilies
¼ (4 ounce) can diced jalapeno peppers, or to taste
2 ½ cups uncooked white rice
2 cups chicken broth
1 (14.5 ounce) can petite diced tomatoes
1 ½ teaspoons Southwest seasoning
salt and ground black pepper to taste
1 tablespoon fresh lime juice
1 pound ground pork
½ pound ground beef, or more to taste
½ (1 ounce) packet taco seasoning, or to taste
2 teaspoons chili powder
1 ½ teaspoons ground cumin
1 (14 ounce) can black beans, drained
1 bunch green onions, chopped
½ small bunch fresh cilantro, chopped, or to taste
½ cup shredded sharp Cheddar cheese
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a Dutch over over medium-high heat. Add green bell pepper, red bell pepper, onion, and garlic; cook and stir until fragrant, about 1 minute. Add green chiles and jalapenos; cook and stir until starting to soften, 3 to 4 minutes. Add rice; cook until coated in oil, about 3 minutes. Add broth, tomatoes, Southwest seasoning, salt, and pepper. Stir well and bring to a boil. Add lime juice and stir well. Cover with lid.
  • Transfer to the preheated oven and bake while you prepare the meat, 10 to 15 minutes.
  • Heat a skillet over medium-high heat. Add pork and beef; saute until browned and crumbly, 5 to 7 minutes. Mix in taco seasoning, chili powder, and cumin; season with salt and pepper. Add black beans and stir.
  • Remove rice from the oven and mix in the meat mixture; sprinkle a few tablespoons of water on top. Continue baking until rice is tender yet firm to the bite, 20 to 25 minutes. Mix in green onions and cilantro; top casserole with Cheddar cheese and mozzarella cheese. Return to oven and bake until cheeses melt, about 5 minutes more.

1/2 medium yellow onion, thinly sliced lengthwise
2 zucchini or summer squash, very thinly sliced

Steps:

  • Preheat oven to 475 degrees. Combine breadcrumbs, Parmesan, and 1 tablespoon oil. In a large cast-iron skillet, bring meat sauce to a rapid simmer over high. Stir in rice and remove from heat. Top with onion, then carefully arrange zucchini in a single, slightly overlapping layer. Season with salt and pepper, drizzle with remaining tablespoon oil, and top with breadcrumb mixture. Return to heat and bring to a simmer. Cover with foil and bake 10 minutes. Remove foil and bake until rice is cooked through and breadcrumbs are golden, about 10 minutes more. 1 lb mild Italian sausage (ground not links)
1 lb ground chuck
1 medium vidalia onion (diced)
1/2 green bell pepper (diced)
2 garlic cloves (diced)
1 tablespoon extra virgin olive oil
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon onion powder
26 ounces dei fratelli rustic cut tomatoes
1/2 cup beef broth
2 cups jasmine rice (cooked to package directions)
1 teaspoon fresh fresh coarse ground black pepper (divided)
1 teaspoon sea salt (divided)

Steps:

  • In large skillet heat oil. Add both the diced onions and diced green bell peppers along with the minced garlic, and half the salt and pepper and saute until the onions and peppers are soft.
  • Add both the Italian sausage and ground chuck and brown until there is no more pink. While browning the meat make the rice to package instructions.
  • Drain most but not all of the excess grease. Add the rustic cut tomatoes, beef broth, Worcestershire sauce and soy sauce and the remaining salt and pepper. Bring to a boil and cook for 10-15 minutes.
  • Remove half the meat mixture and place in freezer bag to save for another time.
  • Pour rice into large serving bowl and pour remaining meat mixture on top. Mix well then serve.

3 cups chicken broth
¾ cup uncooked wild rice
1 ¼ cups uncooked brown rice
2 bay leaves
½ cup butter
1 medium onion, chopped
1 pound ground beef
2 (4 ounce) cans sliced mushrooms, drained
1 (4 ounce) can water chestnuts, drained and chopped
2 teaspoons soy sauce
1 teaspoon curry powder
2 cups shredded Cheddar cheese

Steps:

  • In a medium pot, bring the chicken broth to a boil, and mix in the wild rice, brown rice, and bay leaves. Reduce heat to low, cover, and simmer 45 minutes, until most of the broth has been absorbed.
  • In a skillet, melt the butter, and saute onion until tender. Stir in the ground beef, and cook until evenly brown. Mix in the mushrooms, water chestnuts, soy sauce, and curry powder, and continue to cook and stir until heated through.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the beef mixture into the rice mixture, and remove the bay leaf. Transfer to a 9x13 inch baking dish. Top with Cheddar cheese.

1 can cream of mushroom soup
1 can cream of chicken soup
1 4 ounch can mushrooms (drained)
2 beef bouillon cubes
1 crumbled bay leaf
Celery salt
garlic salt
pepper onion salt
paprika
3/4 cup chopped celery
6 tablespoons choppen onion
butter
1 1/2 pound ground beef
1/2 cup slivered almonds

Steps:

  • Pour boiling water over wild rice. Let stand 15 minutes then drain. or cook box of Uncle Ben's rice as per directions. Add mushrooms and cans of soup as well as bouillon cubes dissolved in 1 cup boiling water. Add 1 crumbled bay leaf. Season to taste with approimately 1/4 teaspoon of each spice and salt listed. Saute celery and onion in butter until transparent and add to the rest. Brown ground beef, drain, add to mixture - put in casserole dish. Sprinkle with almonds and refrigerate until time to bake. Bake covered for 1 1/2 hours at 350 degrees. Add more bouillon if casserole becomes dry while baking.

This is one of those comfort food dishes I created out of necessity because we were snowed in and this is what I had on-hand. Feel free to substitute whatever you've got or what you think might taste better, since the whole thing was a desperate measure anyway. I think this one turned out pretty darn good, though, even if I do say so myself. As an added bonus it came out pretty carb-friendly. The hot sauce isn't necessary, although I'd bump up some other spices in its place or this would probably be pretty bland.

1/2 teaspoon garlic powder

Steps:

  • *What I mean by "partly drained" with the mushrooms is to let the water run out but don't press down with the lid to squeeze the water out.
  • Brown ground beef and onions together until beef is browned; drain most of excess liquid (don't go nuts, just get what you can with a spoon).
  • Prepare instant rice according to package directions: bring water to a boil, then add rice. Stir, reduce heat to low, cover and simmer 5 minutes. Remove from heat, stir, cover, and let sit an additional 5 minutes.
  • Reserve about 1/2 cup grated cheese; combine all the rest of the ingredients in a 2-quart casserole dish.
  • Bake at 350F for 30 minutes; sprinkle reserved cheese on top and bake an additional 5 minutes or until melted.
  • Let stand 5-10 minutes before serving.

I have yet to try this one, but it is another one given to me on a recipe card. Sounds pretty good to me, so if someone else gets a chance to make this before I do, please let me know what you thought!

2 lbs round steaks, cut into 1 inch cubes (buy tenderized)
2 tablespoons butter, melted
1 (12 ounce) can tomato paste
1/3 cup beef broth
1/3 cup red wine
1/4 cup red wine vinegar
1/2 cup black olives (sliced)
1 tablespoon light brown sugar
2 garlic cloves, minced
2 bay leaves (whole)
1/4 cup raisins
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
3 cups cooked rice

Steps:

  • Preheat oven to 375 degrees.
  • Mix steak cubes and butter in a large bowl to cover steak with butter.
  • Arrange steak cubes in a large baking dish.
  • Mix together tomato paste, broth, wine and vinegar in mixing bowl.
  • Stir in olives, brown sugar and garlic.
  • Pour over steak cubes to coat.
  • Arrange bay leaves over beef mixture.
  • Sprinkle over with the raisins.
  • Then sprinkle over all with the cinnamon and ground cloves.
  • Cover tightly with foil.
  • Bake for 45 minutes.
  • Remove the bay leaves, and discard them.
  • Arrange the hot cooked rice on a large serving platter and spoon the meat and sauce over.

This is one of our favorite, easy, after-work comfort food casseroles....Very quick and simple to make, and my kids love it! Hope you like it too...

Number Of Ingredients 7

1 lb ground chuck
1 teaspoon garlic, minced
1 cup Minute Rice (uncooked)
1 (1 ounce) package dry vegetable soup mix (Lipton's)
1 (11 3/4 ounce) can campbell's tomato soup
1 1/2 cups water
1 1/2 cups colby-monterey jack cheese, shredded

Steps:

  • Brown the ground chuck with the minced garlic and drain.
  • Crumble the ground chuck in the bottom of a 1 1/2 quart casserole dish.
  • Sprinkle Minute Rice over the ground chuck.
  • Sprinkle Vegetable Soup Mix evenly on top.
  • Mix tomato soup and water, and then pour evenly over the top.
  • Sprinkle shredded cheese evenly over the top.
  • Bake, covered, in a pre-heated 350 degree oven for 30 minutes. Then uncover and bake for an additional 15 minutes.

This is one of my family's favorite casserole. **Note: This recipe makes 13*9, you can reduce to 1 lb of meat, 1 cup of rice, 1 can of soup, and 1/2 cup 0f cheese if you want to do a 8*8 size pan. Enjoy! The leftovers are great for lunch the next day.

1 1/2 lb ground beef or ground turkey
3 c minute rice
1 can(s) cream of mushroom soup, fat-free
2 can(s) cream of celery soup
1 1/2 c grated mild cheddar cheese

Steps:

  • 1. Preheat oven to 350 to 375 degrees depending on your oven.
  • 2. Brown meat with salt and pepper. Cook rice according to box.
  • 3. In a large bowl combine cooked rice, meat, soup and 1 cup of the cheese. Pour into a greased glass 13 x 9 glass pan. Then top with remaining cheese.
  • 4. Cover and bake for approimately 30-35 minutes.
