This Mexican casserole with beef and rice is a super easy recipe for family dinner. Garnish with your favorite toppings. I like to top with shredded lettuce and chopped cilantro! More shredded cheese is always good, too.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Heat a large skillet over medium-high heat. Add ground beef and start to brown, then add onion, garlic, and taco seasoning. Cook until beef is no longer pink, 5 to 7 minutes. Drain and discard any excess oil. Add beans, tomatoes, spinach, chicken broth, 1 cup Mexican blend cheese, rice, and salsa. Pour into the prepared casserole dish.
- Bake in the preheated oven until rice is cooked, 45 to 50 minutes. Take out of the oven, sprinkle with remaining cheese, and bake until cheese is melted, about 10 minutes more.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat olive oil in a Dutch over over medium-high heat. Add green bell pepper, red bell pepper, onion, and garlic; cook and stir until fragrant, about 1 minute. Add green chiles and jalapenos; cook and stir until starting to soften, 3 to 4 minutes. Add rice; cook until coated in oil, about 3 minutes. Add broth, tomatoes, Southwest seasoning, salt, and pepper. Stir well and bring to a boil. Add lime juice and stir well. Cover with lid.
- Transfer to the preheated oven and bake while you prepare the meat, 10 to 15 minutes.
- Heat a skillet over medium-high heat. Add pork and beef; saute until browned and crumbly, 5 to 7 minutes. Mix in taco seasoning, chili powder, and cumin; season with salt and pepper. Add black beans and stir.
- Remove rice from the oven and mix in the meat mixture; sprinkle a few tablespoons of water on top. Continue baking until rice is tender yet firm to the bite, 20 to 25 minutes. - Preheat oven to 475 degrees. Combine breadcrumbs, Parmesan, and 1 tablespoon oil. In a large cast-iron skillet, bring meat sauce to a rapid simmer over high. Stir in rice and remove from heat. Top with onion, then carefully arrange zucchini in a single, slightly overlapping layer. Season with salt and pepper, drizzle with remaining tablespoon oil, and top with breadcrumb mixture. - In large skillet heat oil. Add both the diced onions and diced green bell peppers along with the minced garlic, and half the salt and pepper and saute until the onions and peppers are soft.
- Add both the Italian sausage and ground chuck and brown until there is no more pink. While browning the meat make the rice to package instructions.
- Drain most but not all of the excess grease. Add the rustic cut tomatoes, beef broth, Worcestershire sauce and soy sauce and the remaining salt and pepper. Bring to a boil and cook for 10-15 minutes.
- Remove half the meat mixture and place in freezer bag to save for another time.
- Pour rice into large serving bowl and pour remaining meat mixture on top. Mix well then serve.

- In a medium pot, bring the chicken broth to a boil, and mix in the wild rice, brown rice, and bay leaves. Reduce heat to low, cover, and simmer 45 minutes, until most of the broth has been absorbed.
- In a skillet, melt the butter, and saute onion until tender. Stir in the ground beef, and cook until evenly brown. Mix in the mushrooms, water chestnuts, soy sauce, and curry powder, and continue to cook and stir until heated through.
- Preheat oven to 350 degrees F (175 degrees C).
- Mix the beef mixture into the rice mixture, and remove the bay leaf. Transfer to a 9x13 inch baking dish. Top with Cheddar cheese.
- Bake 20 minutes in the preheated oven, until bubbly and lightly browned.

WILD RICE AND GROUND BEEF CASSEROLE

- Pour boiling water over wild rice. Let stand 15 minutes then drain. or cook box of Uncle Ben's rice as per directions. Add mushrooms and cans of soup as well as bouillon cubes dissolved in 1 cup boiling water. Add 1 crumbled bay leaf. Season to taste with approimately 1/4 teaspoon of each spice and salt listed. Saute celery and onion in butter until transparent and add to the rest. Brown ground beef, drain, add to mixture - put in casserole dish. Sprinkle with almonds and refrigerate until time to bake. Bake covered for 1 1/2 hours at 350 degrees. Add more bouillon if casserole becomes dry while baking.

CHEESY GROUND BEEF AND RICE CASSEROLE
This is one of those comfort food dishes I created out of necessity because we were snowed in and this is what I had on-hand. Feel free to substitute whatever you've got or what you think might taste better, since the whole thing was a desperate measure anyway. I think this one turned out pretty darn good, though, even if I do say so myself. As an added bonus it came out pretty carb-friendly. The hot sauce isn't necessary, although I'd bump up some other spices in its place or this would probably be pretty bland.

- *What I mean by "partly drained" with the mushrooms is to let the water run out but don't press down with the lid to squeeze the water out.
- Brown ground beef and onions together until beef is browned; drain most of excess liquid (don't go nuts, just get what you can with a spoon).

- Preheat oven to 375 degrees.
- Mix steak cubes and butter in a large bowl to cover steak with butter.
- Arrange steak cubes in a large baking dish.
- Mix together tomato paste, broth, wine and vinegar in mixing bowl.

- Brown the ground chuck with the minced garlic and drain.
- Crumble the ground chuck in the bottom of a 1 1/2 quart casserole dish.
- Sprinkle Minute Rice over the ground chuck.

- Mix tomato soup and water, and then pour evenly over the top.
- Sprinkle shredded cheese evenly over the top.
