GREEN CHILE CASSEROLE

1 can (10.5 oz) cream of chicken soup
1 pound grated cheese (I used a mix of monterey jack and cheddar)
1 cup milk
2 (4-oz) cans diced green chiles
1 pound ground beef
1 medium onion, chopped
1 tablespoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon salt
1 (10-oz) package corn tortillas, each tortilla cut into eighths

Steps:

  • Preheat oven to 350ºF.
  • In a saucepan, combine the soup, milk, and the 3/4 of the cheese, reserving the remaining 1/4 for topping the casserole. Once the cheese is melted, stir in the green chiles.
  • In a skillet, brown the beef with the onions. Add in the oregano, garlic powder and salt.
  • In a well greased 9×13 casserole dish, layer half of the tortilla strips. Spread 1/2 of the beef mixture on top, followed by 1/2 of the cheese mixture. Repeat layers. Sprinkle reserved cheese on top.
  • Bake in preheated oven until heated through and cheese is melted, about 30 minutes. Let the casserole sit for 10-15 minutes before serving if you want the slices to hold together.

1 pound ground beef
8 (6 inch) corn tortillas
1 small onion, diced
1 pound processed cheese food, shredded
1 (4 ounce) can green chile peppers, chopped
1 (10.75 ounce) can condensed cream of chicken soup
½ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a medium sized casserole dish.
  • In a medium skillet over medium heat, cook the ground beef until evenly browned; drain fat.
  • Place half of the tortillas on the bottom of the prepared casserole dish and spread with half of the onion, cheese, ground beef and chiles. Layer with the remaining tortillas, onion, half of the remaining cheese, ground beef and chiles.
  • In a medium bowl, dilute the soup with milk and pour over the top of the casserole. Bake in the preheated oven for 30 minutes. Sprinkle with the remaining cheese and bake for another 5 to 10 minutes, or until the cheese has melted.

2 beef sirloin tip roasts (3 pounds each)
4 cans (4 ounces each) chopped green chiles
1 medium onion, chopped
3 medium jalapeno peppers, seeded and chopped
3 garlic cloves, sliced
3 teaspoons chili powder
1-1/2 teaspoons ground cumin
1 teaspoon salt-free seasoning blend, optional
1 cup reduced-sodium beef broth
24 fat-free flour tortillas (8 inches), warmed
Optional: Chopped tomatoes, shredded lettuce and shredded reduced-fat cheddar cheese

Steps:

  • Trim fat from roasts; cut meat into large chunks. Place in a 5- to 6-qt. slow cooker. Top with the chiles, onion, jalapenos, garlic, chili powder, cumin and, if desired, seasoning blend. Pour broth over all. Cover and cook on low for 8-9 hours or until meat is tender., Remove beef; cool slightly. Shred with 2 forks. Cool cooking liquid slightly; skim fat. In a blender, cover and process cooking liquid in small batches until smooth. , Return liquid and beef to slow cooker; heat through. Place 1/3 cup beef mixture on each tortilla. Top with tomatoes, lettuce and cheese as desired. Fold in ends and sides of tortilla.

When I want to get dinner on the table in a hurry, I pull this out of my arsenal. A cut above for a quick meal. For those fans of Mexican food, this quickie will not disappoint.

1 (12 ounce) can roast beef in gravy
1 (7 ounce) can diced green chilies
1/4 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 cup beef broth
2 teaspoons Wondra Flour
1 (15 ounce) can refried beans
1 cup shredded monterey jack pepper cheese
4 flour tortillas
4 tablespoons sour cream

Steps:

  • Place roast beef in saucepan and mash with fork.
  • Mix in green chiles, garlic powder, chili powder, ground cumin,, beef broth and Wondra Flour.
  • Bring to boil and simmer 2 minutes.
  • Place refried beans in a microwave safe bowl, cover with plastic wrap and heat in microwave about 2 - 3 minutes or until heated through.
  • Heat tortillas separately over open flame on stove, turning frequently until heated through or heat on griddle or frying pan, turning once.
  • Place warmed tortilla on plate and spread with refried beans. Remove a serving of beef from saucepan with slotted spoon and place over refried beans. Top with shredded cheese.
  • Fold sides of tortillas in about 2 inches. Roll the burrito, starting with the side closest to you and roll away from you.
  • Ladle some beef & green chile sauce over burrito and top with cheese. Garnish with a dollup of sour cream.
  • Note: If there is a Costco near you, the Kirkland brand canned roast beef is very good.

2 cans (8 ounces each) no-salt-added tomato sauce
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn
1 can (4 ounces) chopped green chilies
2 tablespoons dried minced onion
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
6 whole wheat tortillas (8 inches)
1 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink. Stir in the tomato sauce, beans, corn, green chilies, onion, chili powder, cumin, garlic powder and oregano; heat through., In an 11x7-in. baking dish coated with cooking spray, layer half of the tortillas, beef mixture and cheese. Repeat layers. Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

I was looking for a quick and different way to use the leftover shredded beef cooked in a crock pot the day before. I came up with this recipe which is quick and easy without having to roll each tortilla individually . My husband doesn't like corn tortillas or red sauce so I used green sauce and flour tortillas and layered them in a 8 1/2 inch casserole dish that fit the torrillas perfectly. I knew it was a hit when he went back for a second and third helping! It also tastes great left over the next day. You could also make it with shredded chicken. (Cooking the beef is not included in prep time)

2 cups shredded beef
1 (4 ounce) can diced green chilies
1 (19 ounce) can green enchilada sauce
1 (10 1/2 ounce) can cream of mushroom soup
2 cups shredded Mexican blend cheese (or other cheese of your choice)
5 (8 1/2 inch) flour tortillas
sour cream (optional)

Steps:

  • In large frying pan or sauce pan, combine shredded beef, diced green chiles, half of the green enchilada sauce and full can of mushroom soup.
  • Cook over medium heat until heated through
  • Pour about 2 Tablespoons of remaining enchilada sauce in bottom of the casserole dish.
  • Place 1 tortilla in casserole and cover with prepared sauce from pan.
  • Sprinkle small layer of cheese over sauce.
  • Place another tortilla over sauce and continue layering until last tortilla is on top.
  • Pour remaining sauce over complete casserole and cover the top with remaining cheese.
  • Cover and bake in 350 degree for about 30 minutes or until nice an bubbly .
  • Let sit about 10 minutes to allow to set before serving.
  • Top with sour cream if desired.

My husband doen't like Mexican food so when he works out of town I love to make this one. It makes a lot for leftovers too.

2 lbs beef stew meat (I use already cut it's easier)
1 (7 ounce) can diced green chilies
1 tablespoon canned diced jalapeno (more if you want it hotter)
1 teaspoon ground black pepper
1 tablespoon garlic powder
4 tablespoons chopped dried onion (or real onion if you have it on hand)
1/4 cup beef broth (you can use chicken broth or water also)
1 tablespoon flour (or more for thickening after it's cooked)
serve on tortilla

Steps:

  • Put all ingredients except the flour in a 3 quart pot and bring to boil.
  • After it boils reduce heat cover and simmer for 2 hrs stirring occasionally making sure you don't run out of liquid.
  • Remove from heat add the flour and mix well add more if you want it thicker.

1 lb. lean (at least 80%) ground beef
1/2 cup chopped onion (1 medium)
1 cup frozen corn
1/2 cup sour cream
1 (4.5-oz.) can Old El Paso™ Chopped Green Chiles
8 oz. (2 cups) shredded colby-Monterey Jack cheese
1 (10-oz.) can Old El Paso™ Enchilada Sauce
6 (8-inch) flour tortillas
Shredded lettuce, chopped tomatoes and additional sour cream, if desired

Steps:

  • Heat oven to 350°F. In 10-inch nonstick skillet, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain. Add corn; cook and stir about 3 minutes or until corn is thawed. Stir in sour cream, green chiles and 1 cup of the cheese.
  • Spread about 1/4 cup of the enchilada sauce in 13x9-inch (3-quart) glass baking dish. Spread about 2 teaspoons enchilada sauce on each tortilla. Top each with 2/3 cup beef mixture. Roll up tortillas; place seam side down over enchilada sauce in baking dish.
  • Drizzle remaining enchilada sauce evenly over filled tortillas. Sprinkle with remaining 1 cup cheese. Spray sheet of foil with cooking spray; place sprayed side down on baking dish and seal tightly.
  • Bake at 350°F. for 45 to 50 minutes or until thoroughly heated. Serve garnished with lettuce, tomato and additional sour cream.
