Steamed Cabbage Beef Rolls With Sauce image

These rolls are incredible! The dish had a hint of an Asian flair to it despite the absence of any traditionally Asian ingredients. Very tasty. (The tomato sauce would also be good on its own with other dishes as well.)

1 - cabbage
2 tablespoon(s) flour
1/2 teaspoon(s) salt
1/2 teaspoon(s) chili powder
4 tablespoon(s) butter
- SAUCE INGREDIENTS
1 dash(es) ground nutmeg
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/4 teaspoon(s) sage, ground
1/2 cup(s) soft bread crumbs
3 tablespoon(s) butter, melted
1 1/2 cup(s) cooked rice
1/2 cup(s) chopped onion
1 pound(s) lean ground beef
2 cup(s) tomato juice

Steps:

  • Cut the core from cabbage.
  • Under running water, carefully remove about 15 leaves to use for the recipe.
  • Have about 2 quarts water boiling; add 1 teaspoon of salt.
  • Dip the cabbage leaves in boiling water, 3 at a time, for about 3 minutes.
  • Remove with tongs, drain and set aside.
  • Mix the meat, onion, cooked rice, butter, bread crumbs, sage, pepper, nutmeg and salt.
  • Lay a cabbage leaf on a flat surface.
  • Put 2-4 tablespoons of the mixture on each leaf, depending on the leaf size.
  • Put the meat near the base of the leaf, fold leaf up and over the meat, turning under the sides.
  • This will make about 15 rolls.
  • Place the rolls, seam side down, in a greased 2-quart casserole dish.
  • Make two layers of the rolls.
  • Place this dish on rack over 2 inches of simmering water in wok or large heavy pan with rack.
  • Cover pan or wok and steam for 35-40 minutes.
  • TOMATO SAUCE: Melt 4 tablespoons butter in a skillet.
  • Add the salt, chili powder and the flour.
  • Mix to a smooth paste.
  • Cook over high heat, stirring constantly, until mixture comes to a boil.
  • Remove from heat and slowly stir in the tomato juice.
  • Return to heat and cook until it boils and thickens.

1 medium head cabbage (3 pounds)
1/2 pound uncooked ground beef
1/2 pound uncooked ground pork
1 can (15 ounces) tomato sauce, divided
1 small onion, chopped
1/2 cup uncooked long grain rice
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon snipped fresh dill or dill weed
1/8 teaspoon cayenne pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon sugar

Steps:

  • Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/4 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat., Slice the remaining cabbage; place in a Dutch oven. Arrange the cabbage rolls seam side down over sliced cabbage. Combine the tomatoes, sugar and remaining tomato sauce; pour over the rolls. One of my favorite side dishes, as it's very easy to make! I personally love garlic so I go crazy with it, but put as much as is good for you. This is a very simple recipe and you can put as much or as little of the seasonings you want.

1 head cabbage
2 tablespoons light olive oil
2 tablespoons minced garlic
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the bottom off of the cabbage and set it so that the flat end is on the cutting board; cut into 1-inch thick slices. Arrange slices in a single layer in a large casserole dish.

HOW TO MAKE CABBAGE BUNS (AKA BIEROCKS OR RUNZAS)



How to Make Cabbage Buns (aka Bierocks or Runzas) image

For the Filling:
4 cups finely shredded green cabbage
1/2 pound ground beef (or venison or antelope or ??)
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
4 cloves minced garlic
sea salt & pepper to taste (I use this salt)
3-4 Tablespoons coconut oil, bacon grease, or tallow
For the Dough:
4 1/3 cups flour (you can use whole wheat, unbleached all-purpose, or a mixture of the two-but the more whole wheat flour you use, the drier the finished product will be)
2 1/4 t. dry active yeast
1 cup milk or whey
1/4 cup sucanat (like this) (or granulated sweetener of choice)
1/3 cup butter or coconut oil
1 teaspoon sea salt
2 eggs

Steps:

  • To make the filling: Brown the ground beef and onions in a large skillet
  • Add in the additional oil, peppers and garlic and sauté until tender
  • Add cabbage and allow to soften and turn golden brown
  • Season to taste with salt and pepper, then set the filling aside to cool- you can even prepare it ahead of time and refrigerate until dough is ready
  • To make dough: In mixing bowl, combine the yeast and 2 cups flour
  • In medium saucepan, heat milk, sucanat, butter, and salt to about 110-115 degrees until butter is just melted (too hot will kill yeast)
  • Add warm liquid mixture to flour and yeast, add eggs
  • Beat on low speed 30 seconds, beat on high 3 minutes
  • Stir in rest of flour and knead 6-8 minutes until smooth and elastic
  • Allow dough to rise for an hour in a warm place
  • Punch down and roll out on a clean counter top to create a rectangle shape that's about 1/4 inch thick
  • Cut dough into 4″x4″ squares
  • Add large spoonful of filling to each square (I flatten the individual squares a bit more before adding filling)
  • Bring up the four corners of wrapper and pinch together
  • Place balls seam-side down on a baking stone or tray and allow to rise 30 minutes
  • Bake at 375 F degrees 30 minutes or until golden brown
  • Serve warm with a generous dollop of sour cream on the side

1 lb frozen white bread dough, thawed (equals 2 loaves)
1 lb ground beef
2 cups shredded cabbage
1 cup chopped onion

1 teaspoon minced garlic
1 cup cheddar cheese
1/4 cup ketchup
1 egg, slightly beaten
1 tablespoon milk
kosher salt (optional)
cracked pepper (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In 10 inch skillet, brown beef over medium heat.
  • Drain fat and add cabbage, onions, parsley, garlic, salt and pepper.
  • Cook until cabbage is crisp/tender (5 minutes).
  • Add cheese and ketchup.
  • Remove from heat and set aside to cool.
  • Divide each bread loaf into 4 equal pieces.
  • Roll dough out on lightly floured surface into a 6 inch circle.
  • Place 1/2 C of beef mixture into center of each circle.
  • Pinch the edges of the dough together to enclose beef and form into bun shape.
  • Seam side down, place filled bun on greased cookie sheet.
  • In small bowl, mix egg and milk.
  • Brush top of bun with egg mixture.
  • Sprinkle top with a bit of kosher salt and cracked pepper if desired.
  • Bake for 25-30 minutes or until browned.
  • Serve with ketchup, mustard, barbecue sauce and relish if desired.
  • TIP-buns can be frozen after cooking.
  • To prepare frozen buns, remove from freezer-wrap in foil and place on cookie sheet and bake at 350 degrees for 55-60 minutes or until heated through.
