SLOW-COOKER CHINESE BEEF AND BOK CHOY

4 leeks (white and light green parts only), trimmed, halved lengthwise and cut into 1-inch pieces
6 cloves garlic, unpeeled
4 thin slices ginger, unpeeled
1 red jalapeno pepper, seeded and thinly sliced
3 tablespoons all-purpose flour
1 1/2 pounds beef chuck roast, trimmed
1/4 cup hoisin sauce
1/4 cup Shaoxing rice wine, mirin or dry sherry
3 tablespoons soy sauce
2 tablespoons packed light brown sugar
4 heads baby bok choy, cut crosswise into 2-inch pieces
2 cups cooked white rice, for serving

Steps:

  • Combine the leeks, garlic, ginger and jalapeno in a 7-quart slow cooker. Sprinkle in the flour and toss to coat. Nestle the meat in the vegetable mixture. Whisk the hoisin sauce, rice wine, soy sauce, brown sugar and 1/3 cup warm water in a bowl; pour over the meat.
  • Cover and cook on low, 7 1/2 hours. Remove the meat to a cutting board and thinly slice against the grain; remove and discard the garlic and ginger. Return the meat to the slow cooker along with the bok choy. Increase the heat to high and cook, uncovered, until the bok choy wilts, about 5 minutes. Serve with the rice.

1 pound lean ground beef
1 tablespoon hoisin sauce
1 tablespoon soy sauce
2 tablespoons chopped scallions
2 tablespoons chopped peeled ginger
3 cloves garlic, chopped
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1 1/2 cups sliced shiitake mushroom caps (about 6 ounces)
4 heads baby bok choy, quartered lengthwise
4 3-ounce packages instant ramen noodles (preferably spicy-flavored), 1 flavor packet reserved
1 Fresno chile pepper, seeded and thinly sliced lengthwise

Steps:

  • Combine the beef, hoisin sauce, soy sauce, scallions, half each of the ginger and garlic, and 1/2 teaspoon each salt and pepper in a bowl. Heat 1 tablespoon vegetable oil in a large skillet over high heat. Add the beef mixture and cook, breaking up the meat, until browned, 5 minutes.
  • Add the mushrooms to the skillet; cook, stirring, until wilted, 1 to 2 minutes. Transfer the mixture to a bowl. Wipe out the skillet, then heat the remaining 1 tablespoon oil over medium-high heat. Add the remaining ginger and garlic and cook until golden brown and crisp, 2 to 3 minutes; set aside.
  • Bring 4 cups water to a boil in a large pot over high heat. Add the bok choy and ramen noodles along with the reserved ramen flavor packet. Cover and cook, stirring halfway through, until the boy choy is wilted and the noodles are tender, about 4 minutes. Add the beef-mushroom mixture to the pot and toss to combine. Top each serving with the ginger-garlic mixture and the sliced chile.

4 spinach sandwich wraps or tortillas (8 to 10-inch diameter)
2 tablespoons reduced fat or regular mayonnaise
2 tablespoons finely chopped dry roasted peanuts
1 1/2 teaspoons minced fresh ginger
1 to 1 1/2 teaspoons chili-garlic paste
3/4 teaspoon reduced-sodium or regular soy sauce
3/4 teaspoon rice wine vinegar
1/2 teaspoon dark sesame oil

Steps:

  • Combine marinade ingredients in small bowl. Cover and refrigerate 1 tablespoon for the bok choy. Place beef steak and remaining marinade in a food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight.
  • Preheat charcoal grill to medium heat.
  • Remove steak from marinade; discard marinade. Place steak on grid over medium, ash- covered coals. Grill, uncovered, 8 to 9 minutes for medium-rare doneness, turning occasionally. Do not overcook. Brush bok choy with reserved 1 tablespoon marinade. Grill bok choy, uncovered, over medium, ash-covered coals 4 to 5 minutes or until tender and lightly browned, turning once.
  • Meanwhile combine Spicy Peanut Mayonnaise ingredients in medium bowl; mix well.
  • Carve steak into thin slices. Cut each bok choy half lengthwise in half again, forming quarters. Cut core from each quarter. Spread mayonnaise mixture evenly on spinach wraps. Divide steak slices and bok choy among wraps. Roll up tightly.

400 g rump steak, thinly sliced
2 garlic cloves, crushed
salt & freshly ground black pepper
fresh ginger, grated, to taste
2 tablespoons soy sauce, low sodium
1 tablespoon medium-dry sherry
2 tablespoons peanut oil
2 medium yellow onions, sliced into quarters and then each quarter halved
2 mandarin oranges, juice of
1/2 cup chicken stock
3 cups baby bok choy, halved and sliced
2 mandarin oranges, peeled and broken into segments
20 snow peas

Steps:

  • Slice the steak into thin strips and place in a bowl. Add the crushed garlic and season to taste with salt, freshly ground black pepper and grated fresh ginger. Cover the meat with soy sauce. Add the dry cooking sherry. Stir together, cover and place in the fridge, for several hours or preferably overnight. The longer the meat marinates the better.
  • Heat a little of the oil in a non-stick wok or large non-stick sauté pan.
  • Fry the onion, until it begins to soften, remove and set aside.
  • Add the rest of the oil to the wok, and on a very high heat, keeping the beef strips moving constantly, fry the meat, so that it is browned on all sides and the juices are sealed inches.
  • Slightly lower the heat and return the onion to the pan.
  • Add the mandarin juice.
  • Cook down for a few minutes until the liquid begins to reduces.
  • Stirring constantly, slowly add the chicken stock, a little at a time, and continue to cook down to reduce the liquid.
  • Once the liquid has reduced to almost nothing (no more than say a tablespoon), add the bok choy and the mandarin segments.
  • Turn the heat down and, still stirring and tossing gently, cook until the vegetables are cooked as you like them. Remember: less is best!
  • Still tossing gently, add the snow peas to the wok for the last 30 seconds.
  • Remove from the heat.
  • Serve in four serving bowls over steamed rice.

In my search for recipes using bok choy, I ran across this recipe on Yahoo.com I am trying to introduce my family to new ingedients and they have never eaten bok choy. This sounds like a delish recipe and preparation should be simple. Cook and prep times noted are estimates as I have not yet prepared this stir fry. This would be good served over rice noodles or brown basmati rice. If you try it before I do, please share your thoughts in the review process. NOTE: Shao Hsing (or Shaoxing) is a seasoned rice wine. It is available in most Asian specialty markets and some larger supermarkets in the Asian section. If unavailable, dry sherry is an acceptable substitute.

1 1/2 tablespoons oyster sauce
2 teaspoons cornstarch
4 teaspoons canola oil, divided

1 lb beef sirloin
1 head bok choy
1/2 white onion
1 red bell pepper
3 leaves fresh basil
3 garlic cloves
1/4 cup cilantro
1/4 cup soy sauce
2 tablespoons sesame oil
1 teaspoon ginger paste
1 teaspoon red pepper flakes
1/2 teaspoon pepper
1/2 teaspoon salt
1 tablespoon szechwan seasoning (chili pepper, ginger, red pepper, garlic, brown sugar mix)
1 tablespoon rice vinegar

Steps:

  • Slice your sirloin as thin as you can. Set into mixing bowl and add spices, oil, soy sauce, ginger paste, rice vinegar, stir well. Marinate sirloin in refrigerator while you prepare your vegetables.
  • Clean bok choy and slice stalks in half leaving the leaf with substantial amount of stalk. If you don't like as much stalk cut the lower half off and slice into smaller pieces. Slice basil into long strings horizontally. I like to roll several basil leaves together (looks like a green bean) and slice horizontally. Slice red bell pepper and onions into long pieces. Chop cilantro and garlic I like my garlic in slivers but you can dice or chop add all veggies to mixing bowl. You can substitute any veggies you like.
  • Get your wok or large pan really hot a medium high heat is great. You really want to sear the meat with flavor. All the oils and seasoning should be soaked into the meat by now marinate longer if you like. Once the pan is very hot add beef until seared. Reduce heat after about 5-7 minutes and add veggies, cook for another 5 minutes or until done. You should have a very aromatic meal that has a kick.
  • Serve with rice or noodles.

KOREAN BEEF BOK CHOY, FAST AND EASY

My nephew married a beautiful Korean woman a couple of years ago. And she is an amazing cook, too. Here is a simple and delicious dish from Mijeong Ross.

3/4 lb flank steak
1/2 c korean teriyaki sauce, divided
1 1/4 lb fresh bok choy, smaller leaves are best
3 Tbsp water
4 tsp oil for stir frying, divided (heart healthy oil can be used)
4 servings rice, prepared and hot (for heart healthy eating use brown rice)
crushed red pepper flakes to taste

Steps:

  • 1. Slice steak diagonaly across the grain, into 1/4 inch thick strips. Heat 1 tsp oil in large skillet until oil is hot and seems to be rippling. Add half of meat and stir while cooking for 30-40 seconds until meat is no longer pink. Remove meat from pan to a serving bowl. Add another 1 tsp oil to skillet and cook the second half of the meat the same way. Remove it from pan to the bowl also. Add 2 T teriyaki sauce to meat and stir.
  • 2. Return skillet to heat and place 2 tsp oil in it. When ready to stir fry add bok choy. Stir fry about 30 seconds, then add 3 T water, cover skillet and steam for about 1 minute. Uncover, add remaining teriyaki sauce and stir fry for about 1 minute until bok choy is tender crisp. Return meat and juices to the skillet and stir fry 30-60 seconds until hot.
  • 3. Place 1 serving of hot rice in a bowl, scoop 1/4 of meat and bok choy over rice. Sprinkle with a few red pepper flakes, to taste. Repeat with the other 3 servings. Traditionally this is a spicy hot dish.

MONGOLIAN BEEF AND BOK CHOY

Let me describe Bok Choy; it's a Chinese plant that really resembles a leek but it's related to a cabbage. You could use cabbage for this if you can't find it and it's still fabulous.

1 cup shiitake mushroom, thinly sliced
1 cup bok choy

1/4 cup light soy sauce
1/3 cup chicken broth

Steps:

BEEF "STEW-FRY" WITH SHIITAKE MUSHROOMS AND BOK CHOY

This is called a "stew-fry" because both cooking techniques are employed. There's a little bit of stir-frying, and the flavor profile is decidedly Asian, but enough liquid is added in the form of low-fat chicken broth that not a lot of oil is required, keeping things nice and light.

1 tablespoon toasted sesame oil
3 tablespoons chopped fresh ginger
1 bunch scallions (white and green parts), sliced thin on the diagonal
3 1/2 cups low-fat, low-sodium chicken broth

6 ounces fresh shiitake mushrooms, stems removed, caps sliced thin
1/2 head bok choy, sliced thin
2 tablespoons rice vinegar
1/4 cup low-sugar ketchup, such as Heinz
Salt and freshly ground black pepper
8 ounces lean beef tenderloin, very thinly sliced

Steps:

  • Heat a Dutch oven over high heat, and when the pot is hot, add the sesame oil. Add the ginger and scallions and cook until they are fragrant, about 1 minute.
  • Add the chicken broth and soy sauce, and bring the liquid to a boil. Add the shiitake mushrooms and bok choy, cover, and bring to a boil. Then reduce the heat to medium and simmer until the vegetables are tender, about 5 minutes.
  • Stir in the rice vinegar and ketchup, and season with salt and pepper if desired.
  • Remove the pot from the heat. Stir the sliced beef into the stew, allowing it to cook in the the residual heat of the liquid. Serve immediately.

8 ounces lean beef, cut into thin strips approximately 3 to 4 inches long
1 pound pappadelle
1 bunch peashoots or snowpeas
2 tablespoons fresh grated ginger
1 tablespoon chopped garlic
1/2 tablespoon red pepper flakes
White pepper and salt to taste
1 to 2 heads bok choy, rinsed and chiffonade 1/2-inch
1 tablespoon sesame oil
1/4 cup chopped peanuts
2 tablespoons butter

Steps:

  • Place beef strips into bowl and combine with garlic, ginger, red pepper flakes and white cracked pepper (no salt). Marinate for 30 minutes.
  • Cook pappadelle until al dente. Remove and toss with oil to avoid sticking.
  • In a hot wok add 1 tablespoon sesame oil and beef, reserving marinade. Quickly saute for 45 seconds. Remove with slotted spoon and reserve.
  • Add bok choy to wok and toss for 30 seconds, adding a touch of salt. Remove with slotted spoon and add marinade to wok with pappadelle. Toss this mixture together, then add beef, 1/2 teaspoon red pepper flakes, bok choy and chopped peanuts. Finish with 1 to 2 tablespoons butter for richness. Arrange fresh peashoots on plate and top with pappadelle mixture, twisting for height.

1/4 cup Shao Hsing rice wine (see Ingredient note)
1 1/2 tablespoons oyster-flavored sauce
2 teaspoons cornstarch
4 teaspoons canola oil, divided
3/4 pound sirloin steak, trimmed of fat, cut in half lengthwise and thinly sliced
1/4 teaspoon crushed red pepper
10 raw shrimp (21-25 per pound), peeled, deveined and chopped
1 pound bok choy, preferably baby bok choy, trimmed and sliced into 1-inch pieces

Steps:

  • Whisk rice wine, oyster sauce and cornstarch in a small bowl until the cornstarch is dissolved. Heat 2 teaspoons oil in a large nonstick skillet or wok over medium-high heat. Add beef and crushed red pepper to taste; cook, stirring, until the beef begins to brown, 1 to 2 minutes. Add shrimp and continue to cook, stirring, until the shrimp is opaque and pink, 1 to 2 minutes. Transfer the beef, shrimp and any juices to a plate. Heat the remaining 2 teaspoons oil over medium-high heat in the same pan. Add bok choy and cook, stirring, until it begins to wilt, 2 to 4 minutes. Stir in the cornstarch mixture. Return the beef-shrimp mixture to the pan and cook, stirring, until heated through and the sauce has thickened slightly, about 1 minute.

Five spice powder is a cocoa colored blend of five ground spices, usually anise seed, fennel, clove, cinnamon, and ginger or pepper. It has a slightly sweet, pungent flavor and should be used sparingly.

1 Boneless beef sirloin steak (about 1 pound)
1/4 C Soy sauce
2 Tbs Dry sherry
2 tsp Minced fresh ginger
2 Cloves garlic (minced)
1 tsp Sugar
1/2 tsp Chinese five spice powder
1/4 tsp Crushed red pepper (optional)
1 Large head bok choy
2 tsp Cornstarch
2 Tbs peanut oil or vegetable oil (divided)
Hot cooked Chinese egg noodles
Thai red chili peppers for garnish

Steps:

  • Cut beef across prominent grain into 1/8 inch thick slices; cut each slice into 2 inch pieces. Combine soy sauce, sherry, ginger, garlic, sugar, five spice powder, and red pepper in a large bowl. Toss the beef with soy sauce mixture. Set aside.Separate bok choy leaves from stems; rinse and pat dry. Stack leaves and cut into 1 inch slices. Cut stems diagonally into 1/2 inch slices.Drain beef; reserve marinade. Combine reserved marinade and cornstarch in a small bowl; stir until smooth. Set aside.Heat the wok over medium high heat until hot. Drizzle 1 tablespoon oil into the wok and heat for 30 seconds. Add beef; stir fry 2 minutes or until beef is barely pink in center. Remove beef to large bowl.Add remaining 1 tablespoon oil. Add bok choy stems; stir fry 3 minutes. Add bok choy leaves; stir fry 2 minutes.Stir marinade mixture until smooth; add to the wok. Stir fry 1 minute or until sauce boils and thickens.Return beef and any accumulated juices to the wok; heat through.Serve over noodles. Garnish is desired.
