1 lb lean (at least 80%) ground beef
1 can (16 oz) pork and beans
1 can (8 oz) tomato sauce
3 tablespoons packed brown sugar
2 teaspoons dried minced onion
1 cup Original Bisquick™ mix
3 tablespoons boiling water
1 tablespoon ketchup

Steps:

  • Heat oven to 375°F. Grease bottom and side of 1 1/2-quart round casserole with shortening. In 10-inch skillet, cook beef over medium heat, stirring occasionally, until brown; drain. Stir in beans, tomato sauce, brown sugar and onion. Pour into casserole; set aside.
  • In medium bowl, stir remaining ingredients until soft dough forms; beat vigorously 20 strokes. On surface dusted with Bisquick mix, gently roll dough in Bisquick to coat. Shape dough into ball; knead about 10 times or until smooth. Pat ball into 7 1/2-inch round or round the size of top of casserole. Place on beef mixture in casserole.
  • Bake uncovered 15 to 20 minutes or until crust is light brown.

2 cups beef broth
5 tablespoons chili powder, divided
salt and ground black pepper to taste
2 tablespoons vegetable oil
2 small onions, diced
1 medium yellow bell pepper, diced
1 tablespoon ground cumin
½ teaspoon cayenne pepper
1 teaspoon salt, divided
6 cloves garlic, minced
2 pounds ground beef
1 (28 ounce) can diced tomatoes
1 (28 ounce) can tomato puree

Steps:

  • Rinse beans and discard any bad ones.
  • Combine beans, broth, 1 tablespoon chili powder, salt, and pepper in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
  • While the pressure is releasing, heat oil in a large skillet over medium heat. Add onions, bell pepper, cumin, cayenne, and 1/2 teaspoon salt; saute until soft, about 5 minutes. Add garlic and saute until fragrant, about 30 seconds. Add beef and cook and stir until browned and crumbly, 5 to 7 minutes.
  • Unlock and remove the lid of the pressure cooker. Add beef mixture to the beans, along with diced tomatoes, tomato puree, and remaining 1/2 teaspoon salt. Close and lock the lid. Select high pressure again and set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

2 lbs short rib of beef

6 slices bacon, diced
1 tablespoon distilled white vinegar
1 tablespoon prepared mustard
½ cup ketchup
½ cup brown sugar
1 green bell pepper, chopped
1 (15 ounce) can kidney beans
1 (16 ounce) can chili beans
1 (15 ounce) can pork and beans
6 slices American cheese
1 cup crushed tortilla chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet over medium high heat, saute the ground beef, onion and bacon for 5 to 10 minutes, or until the meat is browned and the onion is translucent; drain excess fat.
  • In a 3 quart casserole dish, combine the vinegar, mustard, ketchup, brown sugar, green bell pepper, kidney beans, chili beans, pork and beans and the meat mixture. Stir together until well blended.
