1 tablespoon bay leaf powder
2 tablespoons white pepper
2 tablespoons black pepper
1 teaspoon nutmeg
1 teaspoon cinnamon
1 tablespoon allspice
1 tablespoon mace
1 tablespoon clove
1 tablespoon clove
1 1/4 teaspoons cinnamon
1 tablespoon salt
1 tablespoon bay leaf powder
1 tablespoon allspice
2 tablespoons ground black pepper
1 teaspoon nutmeg
1 teaspoon mace
1 teaspoon celery seed
2 tablespoons white pepper

Steps:

  • Directions for two recipe mixes: In a small bowl mix together all spices from either recipe 1 or recipe 2.
  • Store in a glass container, covered tightly in a cool place.
  • (I store all my spices in the fridge, as the flavor seems to last longer).

1 1/4 teaspoons ground cinnamon
1 tablespoon salt
1 tablespoon bay leaf powder
1 tablespoon ground allspice
2 tablespoons ground black pepper
1 teaspoon ground nutmeg
1 teaspoon ground mace
1 teaspoon celery seed
2 tablespoons white pepper

Steps:

  • Grind the bay leaf and celery seed in a coffee grinder .
  • Sieve the bay leaf and celery seed in to a bowl.
  • Place all ingredients in to a jar with lid and shake to mix.
  • Will keep for some time especially if not exposed to air.

I had never heard of Beau Monde spice blend until I got the recipe for recipe#123626 which I have posted. I found this chicken which utilizes Beau Monde so I thought I'd post it too. It was submitted in a garden club cookbook by the President of the Evening Garden Club in Hamden, CT.

6 boneless chicken breasts
1/4 cup flour
1/2 teaspoon beau monde seasoning
butter
2 tablespoons water
1 pint sour cream
paprika

Steps:

  • Coat chicken breasts in flour and seasoning.
  • Brown on both sides lightly in butter in a skillet.
  • Place browned chicken in a baking dish; add pan drippings and 2 tablespoons water.
  • Cover each breast with sour cream and sprinkle paprika on top.
  • Cover baking dish tightly with foil.
  • Bake at 350 degrees for an hour or until chicken is done.

This recipe calls for Beau Monde seasoning. Beau Monde is a mellow beefy flavor with broad tones of celery, onion and garlic. Widely sought for use in party dips and Bloody Marys. Marvelous on salads, green vegetables, or pot roast. It can be hard to find. Spice Island is one brand. There seems to be a lot of recipe for making Beau Monde seasoning with a lot of ingredients in them, I'm sure they're all good so if you can't find the seasoning in the grocery store make your own or just omit altogether.

1 -2 pheasant
salt
pepper
beau monde spice
celery salt
1/2 cup onion, chopped
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup cream
1/2-1 cup sour cream
1 (4 ounce) can button mushrooms
1/3 cup Burgundy wine or 1/3 cup chicken broth

Steps:

  • Disjoint bird, split breast, brown sections in butter using hot skillet. Season breast with salt, pepper, beau monde spice and celery salt.
  • Turn meat often. Place in buttered casserole.
  • Using same skillet, combine onion, mushroom soup, cream and sour cream. Stir constantly over low heat.
  • Add wine or broth.
  • As soon as mixture approaches boiling, pour over bird in casserole.
  • Add button mushrooms.
  • Bake covered in oven at 300-325 degrees for about 2 hours.

The Beau Monde Seasoning that I've used has a very basic yet tasty flavor. The substitution recipes I've seen so far online and here have called for cinnamon, cloves and other things that I know I don't taste from the Spice Islands jar. As I kept looking I came upon this one that sounded like it might be the one. I haven't tried it yet but thought someone else might get some use out of it. It calls for sea salt AND seasoned salt. I probably would adjust those so it wouldn't turn out too salty. Also I might try using celery salt instead of the combination of seeds and salt. This recipe only makes 1 tsp. worth of mix but it's a good starting point.
