This pie features a homemade chocolate custard, and is topped with meringue.

¾ cup white sugar
5 tablespoons unsweetened cocoa powder
3 tablespoons cornstarch
¼ teaspoon salt
2 cups milk
3 egg yolks, beaten
1 teaspoon vanilla extract
1 (9 inch) pie crust, baked
3 egg whites
¼ teaspoon cream of tartar
6 tablespoons white sugar

Steps:

  • Mix together sugar, cocoa, corn starch and salt in a medium saucepan. Gradually mix in milk. Cook and stir over medium high heat until thickened and bubbly. Reduce heat to medium low; cook and stir 2 minutes more. Remove pan from heat. Stir about one cup of the hot filling into the egg yolks; mix back into the custard. Return saucepan to heat, and bring to a gentle boil. Cook and stir for 2 minutes. Remove from the heat, and stir in vanilla. Pour hot filing into crust.
  • In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually beat in sugar, and continue to beat until stiff and glossy. Spread evenly over hot filling, sealing meringue to crust.
  • Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes, or until golden.

This recipe was given to me by a dear friend at a church dinner. This pie never is runny. If you opt to use a frozen prepared pie crust, use the deep dish kind.

2 cups white sugar
5 tablespoons unsweetened cocoa powder
¼ cup all-purpose flour
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract
4 egg yolks
¼ cup butter
1 recipe pastry for a 9 inch single crust pie
4 egg whites
¼ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a saucepan, whisk together 2 cups sugar, cocoa and flour. Blend in evaporated milk and vanilla. Beat egg yolks, and stir into pan. Add the butter or margarine. Heat, stirring constantly just until butter is melted. Pour filling into unbaked pie shell.
  • Bake in preheated oven for 35 to 40 minutes, or until pie is not "wobbly" when shaken.
  • Beat egg whites until soft peaks form. Gradually add 1/4 cup sugar, beating constantly, until stiff peaks form. Spread meringue on pie.
  • Return pie to oven, and bake until meringue is golden.

1 9 inch pie shell, baked
1/3 stick butter or margarine
1 1/2 c milk, mix with 1 tsp vanilla
3 egg yolks
2/3 c sugar
2 Tbsp self rising four
2 Tbsp cocoa powder
MERINGUE:
3 egg whites
6 Tbsp granulated sugar
1/8 tsp cream of tartar
1/2 tsp vanilla extract
dash of salt

Steps:

  • 1. Bake pie crust and cool completely. Sometimes I use a graham cracker crust instead. Try that sometime because it is equally good in the graham crust. Melt butter in medium-size saucepan. Add milk/vanilla & egg yolks. Mix together the dry ingredients then add to mixture in saucepan and slowly boil until it thickens, stirring constantly. You know it's ready when it starts to form the thick bubbles like frog eyes. (I remove from heat and add 1/2 tsp of vanilla at this point but this is optional). Pour into baked crust & cover custard with plastic wrap while making meringue. This keeps custard warm & prevents film between custard & meringue.
  • 2. Make meringue. Remove plastic and spread meringue onto pie. Return to oven to brown meringue. Cool before serving. TIP: I always make my meringue while the custard is cooking. This way I can go ahead and put it on the hot custard.
  • 3. NOTE: For coconut pie--- omit cocoa & add 2/3 to 3/4 cups of coconut.

1/2 cup unsweetened cocoa powder
1/3 cup all-purpose flour
1 1/4 cups sugar
2 1/2 cups whole milk
4 egg yolks, lightly beaten

1 (9-inch) prepared pie crust, baked
5 egg whites, room temperature

1 teaspoon clear or regular vanilla extract

Steps:

  • Preheat oven to 325°F. In a large heavy saucepan, combine flour, cocoa, and sugar. Stir in milk and egg yolks. Cook over medium heat, stirring constantly with a wire whisk, until mixture comes to a boil. Boil for 3 minutes, stirring constantly. Remove from heat; stir in butter and vanilla. Pour mixture into prepared piecrust. Using the back of a spoon, spread meringue (recipe below) over hot filling, sealing to edge of pie crust. Bake for 23 minutes. Cool completely on a wire rack. Sift cocoa over the top of the pie if desired. Store in refrigerator. MILE-HIGH MERINGUE: Separate a cold egg by transferring the yolk between the broken halves and letting the white drip into a small bowl. Transfer the white into a metal or glass mixing bowl. Separate the next egg over the small bowl as well-not over the mixing bowl. This way, if some of the yolk gets in the white, then you have lost only one egg. Let egg whites come to room temperature. Beat the egg whites at the mixer's top speed until the mixture looks like sea form on a beach. Add cream of tartar to the foam to help stabilize the meringue. Keep beating egg whites at high speed until they reach soft peaks. When you lift the beaters from the beaten egg whites, the peaks will stand up straight and then fall over. Add the sugar gradually, about a tablespoon at a time, all while beating at a high speed. When you lift the beaters, the meringue pulls into pointy peaks that stay that way. At this stage, add the vanilla, and beat just long enough to mix it in.

3/4 cup sugar
5 tablespoons baking cocoa
3 tablespoons cornstarch

1 1/2 cups all-purpose flour
2 teaspoons sugar
1/2 teaspoon salt
1/2 cup solid vegetable shortening
3 to 4 tablespoons ice water
3 egg yolks
1 cup sugar
6 tablespoons all-purpose flour
1/4 teaspoon salt
3 cups milk, scalded
2 square (1-ounce each) unsweetened chocolate, chopped
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1 tablespoon cornstarch
8 tablespoons sugar
1/3 cup water
Pinch salt
3 egg whites

Steps:

  • Make the crust:
  • In a large bowl, stir together the flour, sugar and salt. Cut in the shortening with a pastry blender or 2 knives used like a scissor, or mix with your fingertips until the mixture resembles coarse crumbs. Sprinkle 2 tablespoons of the ice water over the flour mixture, tossing with a fork; adjust enough of the remaining water, by the tablespoon, tossing, so that the dough holds together. Flatten into a disk and wrap in plastic wrap. Refrigerate for 1 hour.
  • Preheat the oven to 425 degrees F. On a lightly floured surface, with a lightly floured rolling pin, roll out the dough into an 11-inch circle. Fit into a 9-inch pie plate. Fold the edge under to make a stand-up edge; crimp. Prick the bottom all over with a fork. Bake until golden brown, 12 to 14 minutes. Remove the pie plate to a wire rack to cool.
  • Make the filling:
  • In a heatproof bowl, lightly beat the egg yolks to break up, and then set aside. In a small, heavy saucepan, stir together the sugar, flour and salt. Gradually stir in the scalded milk. Cook over medium-low heat, whisking, until thickened and bubbly, 6 to 8 minutes. Stir a little of the hot mixture into the yolks. Stir the yolk mixture back into the saucepan. Heat over very low heat, stirring, for 2 minutes, and do not let boil. Remove the saucepan from the heat. Whisk in the chocolate, butter, and vanilla until melted and smooth. Scrape into a clean bowl. Press a piece of plastic wrap directly on the surface of the filling and let cool for 10 minutes. Remove the plastic wrap and scrape the filling into the piecrust. Cool on a wire rack.
  • Make the meringue:
  • Preheat the oven to 350 degrees F.
  • In a small saucepan, stir together the cornstarch, 2 tablespoons of the sugar, and the water. Cook over medium heat, stirring occasionally, until the mixture comes to a simmer and thickens, 2 to 3 minutes. Remove the saucepan from the heat. In a large bowl, add the salt to the egg whites. With an electric mixer at medium speed, beat just until soft peaks form. Add the cornstarch mixture and beat until creamy. Gradually beat in the remaining sugar and continue to beat until soft peaks form, 6 to 8 minutes. Spread the meringue mixture over the cooled chocolate filling, make sure the meringue touches the piecrust edge all the way around. Bake until the meringue is golden and its internal temperature registers 150 degrees F on an instant-read thermometer, 25 to 30 minutes. Serve soon after. Cover and refrigerate any leftovers.

We've tried a bunch of chocolate pie recipes from here, but none can hold a candle to this one that I grew up with from the Foods a la Louisiane book (from the Louisiana Women's Farm Bureau). It's easy, not too sweet and inexpensive. Also, using a high quality vanilla makes a huge difference.
