Great way to get kale into your diet without the bitter taste. For a healthier option, omit bacon and/or use olive oil instead of butter. You can also use honey for the agave.

1 cup 1-inch pieces fresh-cut green bean
1 cup sliced carrots
1 ½ tablespoons butter
4 green onions, minced
1 (1 inch) piece fresh ginger, minced
1 cup thinly sliced kale without rib
2 slices cooked bacon, crumbled
2 tablespoons ground almonds
1 tablespoon light agave syrup
salt to taste

Steps:

  • Put green beans and carrots in a saucepan with enough water to cover. Bring water to a boil and cook until tender, about 15 minutes; drain and transfer to a large bowl.
  • Melt butter in a skillet over medium heat. Cook and stir green onions and ginger in hot butter until tender, about 10 minutes.
  • Stir kale, bacon, almonds, and agave into the onion mixture and remove skillet from heat; add to green beans and carrots. Season green bean mixture with salt and stir.

1 ½ cups dried black beans, rinsed
1 ½ cups dried pinto beans, rinsed
1 ½ cups dried kidney beans, rinsed
1 pound andouille sausage, chopped
1 pound lean ground beef
1 large onion, chopped
1 bell pepper, chopped
2 cloves cloves garlic, minced
1 cup corn
¾ cup salsa
¾ cup tomato-based chili sauce
2 tablespoons white vinegar
1 cup water
salt and ground black pepper to taste

Steps:

  • Place black beans, pinto beans, and kidney beans in a large container and cover with several inches of cool water; let stand for at least 12 hours. Bring beans and water to a boil in a large pot; cook until beans are tender and heated through, 30 minutes. Remove pot from heat to cool and drain beans.
  • Cook and stir sausage, beef, onion, bell pepper, and garlic in a large skillet over medium-high heat until meat is browned, 5 to 10 minutes. Drain and discard fat.
  • Stir beans, sausage mixture, corn, salsa, chili sauce, vinegar, and water together in a slow cooker.
  • Cook on High for at least 4 hours, stirring occasionally. Season with salt and ground black pepper.

1 can black-eyed peas, drained
1 can pinto beans, drained
1 can kidney bean, drained
1 can great northern bean, drained
1 can vegetable broth
1 can sliced mushrooms, drained
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
garlic powder, salt,and pepper to taste

Steps:

  • Combine all ingredients in a large pot and bring to a boil over high heat.
  • Reduce heat to medium and cook, stirring occasionally, for about 10 minutes.

1/2 c red bell pepper (diced)
1/2 c green bell peppers( diced)
1 c frozen corn
1 can(s) cannelini beans( drained and rinsed)
1 can(s) black beans (drained and rinsed)
1 c diced baron ( fried crisp)
serve with your favorite italian dressing

Steps:

  • 1. Mix all ingredients together except the Italian dressing and refrigerate for at least an hour. Serve with your favorite Italian dressing
  • 2. I find this recipe can be 2 fold, you can also use the ham bone broth and make a soup.

I've been "tweaking" this recipe for about 10 years now. This version is my absolute favorite, and I've had many requests for the recipe. I've never found a bean I didn't enjoy in this dish yet. (Well, maybe not green or yellow wax!) Originally got the first recipe from a friend I worked with.

2 lbs hamburger
1 (16 ounce) can Manwich sloppy joe mix (BOLD)
2 (15 ounce) cans petite diced tomatoes
1 (1 ounce) envelope onion soup mix (Lipton, Mrs.Grass, Knorr, type)
1 (28 ounce) can bushes baked beans (I use the Boston flavor, but use whatever flavor you like)
2 (16 ounce) cans large butter beans
2 (16 ounce) cans baby butter beans
1 (14 1/2 ounce) can light red kidney beans
1 (14 1/2 ounce) can dark red kidney beans
1 (15 ounce) can great northern beans
1 (15 ounce) can black beans (not the Spicy Ones)
1 (14 1/2 ounce) can baby lima beans
3/4 cup ketchup
1/3 cup Heinz 57 steak sauce
1/4 cup brown sugar
2 tablespoons sour cream, per serving (optional)
3 -6 saltine crackers, per serving (optional)
1/4 cup grated cheddar cheese, per serving (optional)

Steps:

  • In large skillet or Dutch oven brown hamburger; as you are doing this add the envelope of onion soup mix.
  • When hamburger/soup mix is browned, add can of Manwich BOLD.
  • Next lightly rinse all beans except the Bushes baked beans.
  • Add petite diced tomatoes and all types of beans to hamburger/soup/Manwich mixture.
  • Stir together over medium heat.
  • Add ketchup, Heinz 57, and brown sugar.
  • Heat thoroughly.
  • Dish into large bowls.
  • Garnish with grated cheese, crackers & a dollop of sour cream.
  • Sometimes this dish will become very thick, if this happens you can thin with water or beef broth.
  • Special Note: You can pretty much add or delete any bean you like or maybe dislike?!
  • Just have fun! and ENJOY!
  • This recipe makes quite a bit. So if you're not feeding 8-12 you can freeze the extra or half the recipe.

14 ounces frozen green beans or 1 lb fresh green beans
1 tablespoon olive oil
1 tablespoon lemon juice, bottled is fine
1 teaspoon garlic powder
fresh ground black pepper, to taste
parmesan cheese (optional)

Steps:

  • Clean green beans if using fresh. Steam green beans in the microwave or preferred method.
  • Mix lemon juice, garlic powder, pepper and olive oil together in the bowl you will be serving the veggies. (If you are using fresh lemon I like to add some of the zest to this as well).
  • Add cooked green beans and fold to distribute the 'sauce' at the bottom.
  • Sprinkle with parmesan if desired- kids like that part.
  • Serve!

Ham and bean soup can be a little bland and requires a lot of salt to be palatable, but not so with this version. It is bursting with flavor.

1 pound dried Great Northern beans, sorted and rinsed
4 cups water
¼ cup celery, chopped
1 small onion, chopped
2 bay leaves
¼ teaspoon ground cumin
½ teaspoon garlic powder
1 teaspoon dried parsley
1 tablespoon butter
1 tablespoon olive oil
2 leeks (bulb only), cut in half lengthwise
1 pound cooked ham, cut into bite-size pieces
5 slices bacon
4 cups chicken stock
1 pinch sea salt to taste
1 pinch fresh ground black pepper to taste

Steps:

  • Place the beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse before using.
  • Combine the soaked beans, 4 cups of water, celery, onion, bay leaves, cumin, garlic powder, and parsley into a slow cooker.
  • Melt the butter with the olive oil in a skillet over medium heat; cook and stir the leeks in the butter mixture until tender and the smaller pieces start to brown, 8 to 10 minutes. Transfer the leeks to the slow cooker. In the same pan, cook and stir the ham until the edges start to brown; stir into the soup. Place the bacon into the hot skillet, and pan-fry until the bacon is crisp, about 10 minutes. Cut the bacon into bite-size pieces and stir into the soup. Pour the chicken stock into the hot skillet, and stir to dissolve any brown flavor bits from the skillet; pour the chicken stock into the soup. Season with sea salt and pepper.
  • Set the cooker to Low cook the soup until the beans are very tender, 6 to 8 hours. Roughly mash about half the beans with a potato masher to thicken the soup.
