Don't mistake this San Antonio favorite for a vegetarian burger: The beanburger is a beef patty with refried beans, Fritos, onions and Cheez Whiz. The original, invented in the 1950s at the now-closed Sills Snack Shack, was likely inspired by refried-bean-and-guacamole-topped California burgers, but Cheez Whiz was swapped in for pricey avocados.

1 tablespoon plus 2 teaspoons vegetable oil
1 cup canned refried beans
1 pound ground beef
Kosher salt and freshly ground pepper
1/2 cup cheese spread (such as Cheez Whiz)
4 hamburger buns
1 cup corn chips (such as Fritos), lightly crushed
1/2 white onion, chopped
1/4 cup sliced pickled jalapenos

Steps:

  • Heat 2 teaspoons vegetable oil in a medium skillet over medium heat. Add the refried beans and cook, stirring, until heated through, about 3 minutes; set aside.
  • Mix the beef with 1 teaspoon each salt and pepper in a large bowl. Form the beef into 4 balls, then press each into a 1/4-inch-thick patty. Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the burgers and cook until browned, about 3 minutes. Flip and cook 2 more minutes for medium to medium well.
  • Remove the burgers from the heat and top with the cheese spread. Spread the warm refried beans on the bottoms of the buns and top with the corn chips. Serve the burgers on the buns and top with onion and pickled jalapenos.

A satisfying cross between a sausage roll and a beanburger, with a creamy texture and tangy flavour

Number Of Ingredients 6

2 x cans borlotti bean , drained
½ tsp dried thyme or rosemary
2 tsp hot chilli sauce
140g gruyère , grated
375g packet ready-rolled puff pastry
beaten egg or milk, to glaze

Steps:

  • Preheat the oven to fan 180C/ conventional 200C/gas 6. In a large bowl, roughly mash the beans then stir in the herbs and chilli sauce, and most of the cheese (save a handful).
  • Open out the pastry on to a floured surface - you need a 30x40cm rectangle, so you may have to roll it out a bit further. Then cut into three strips, each 10x40cm.
  • Roll the bean mixture into long sausages and line down the centre of each piece of pastry. Dampen one long edge then roll up tightly to enclose the filling. Cut each length into four to give a total of 12 rolls.
  • Place join-side down on a nonstick baking sheet, brush with a little egg or milk and scatter over the reserved cheese. Bake for 15-20 minutes until puffed and lightly browned. The filling may ooze out a little, but if you leave them on the tray for 5 minutes while the cheese cools, any oozing will set, making the rolls easy to lift off. Eat warm, or leave to cool on a wire rack and serve later.
