Steps:
- For the best basic beans: Cover the beans with cold water to cover by 1 inch, and soak at least 3 hours or up to overnight.
- Rinse the beans and place them in a large heavy-bottomed pot. Top with the garlic, bacon, bay leaves, onion, salt and pepper. Add enough water to cover by 1 inch, then mix and bring to a boil. Reduce to a simmer, then cover the pot halfway (meaning, don't place the lid tightly on the pot) and cook until the liquid is thick and the beans are tender, 3 to 3 1/2 hours. (Continue to simmer if it needs more time.)
- Serve topped with grated Cheddar and diced red onion.
- For the Tex-Mex beans: Follow the basic beans recipe above, adding the jalapenos, chili powder and hot sauce with the bacon and other ingredients. Simmer the beans according to the directions above. Serve topped with a dollop each of guacamole, salsa and sour cream.
- For the Cajun beans: Follow the basic beans recipe above, adding the andouille sausage, paprika, chile flakes and thyme with the bacon and other ingredients. Simmer the beans according to the directions above. Serve topped with sliced green onions.
DIP TRIO: GUACAMOLE, BLACK BEAN SALSA AND DRUNKEN PICO DE GALLO

Steps:
- For the Guacamole: Halve avocados, remove pits and scoop each half out of the skin with a metal soup spoon. Set up a wire rack over a mixing bowl. Press each avocado half down through the wire rack into the bowl, dicing it.Add remaining ingredients to avocado and gently mix it all together. Try not to make the avocado smooth from the mixing.
- For the salsa: Heat oil in a saute pan. Add onions and saute for 2 minutes. Add garlic and bell peppers and saute until soft and fragrant. Add tomatoes and cumin and cook for 1 minute. Turn off heat and stir in black beans and cilantro. Season to taste with salt and pepper.
- For the Pico de Gallo: Combine all ingredients in a medium mixing bowl. Cover and set aside to let flavors meld together.
SWEET AND SOUR BEAN TRIO
Here's a yummy crock pot recipe from the kitchen of Tamara Vandegrift Easley, Rolla MO. This is on my "to try" list, but I think I'll also add some chunks of smoked sausage to the crock pot and serve with baked potatoes or pasta.

Steps:
- Cook bacon in skillet and crumble.
- Combine cooked bacon and 2 T bacon drippings with onion, brown sugar, mustard, garlic, salt and vinegar.
- Mix with 3 kinds of beans in crock pot. Cover and cook on low for 6-8 hours.

We love this with a good cornbread! My hubband is extremely ANTI foods that he thinks should not be sweet, which he considers beans to be inedible if they're sweet; he saw me putting Brown sugar in these the first time I made them and made up his mind he'd hate them. Instead he ate them in huge bowlfuls and is now a believer....

Steps:
- 1. Fry bacon until crisp, then drain, crumble or chop
- 2. Preheat oven to 350 degrees.
- 3. Add beef to pan and cook until beef is browned.
- 4. Drain the beef then combine with other ingredients and pour into a 9x13 casserole dish.
- 5. Bake at 350 for 40 minutes. Allow to rest briefly before serving.
SPROUTED BEAN TRIO SALAD
Steps:
- Cook Bean Sprout Trio according to the instructions. Drain and cool to room temp. Combine all ingredients in lg bowl. Toss well.
