SWEET, SPICY, AND STICKY BBQ SAUCE
I use this sauce on ribs and then slow-cook 'em on the smoker. A guaranteed hit for any gathering; this sauce is my absolute favorite! May use immediately or keep in an air-tight container in a refrigerator up to several weeks. Brush sauce on ribs as ribs are finishing.

- Combine cider vinegar, brown sugar, hot sauce, and molasses in a non-stick saucepan; bring to a boil. Reduce heat to medium-low and cook at a simmer until the sauce is thick and shiny, about 1 hour.

SWEET AND SPICY BBQ SAUCE (TEXAS STYLE)

- In a medium pot, cook the bacon over medium-low heat until crispy, 8 to 10 minutes. Remove to a plate lined with a paper towel to drain, then eat the bacon as a snack.
- Add the onions to the pot with the bacon grease and cook over medium-low heat until the onions start to caramelize, 6 to 8 minutes. Add the garlic and cook another 2 minutes. Add the tomato paste and cook, stirring occasionally, another 3 minutes. Whisk in the stock, sugar, vinegar, cumin, cayenne, salt and pepper and bring to a simmer. Cook until thickened, 15 to 20 minutes.
- Let cool to room temperature before using. This sauce is great on brisket or beef ribs.
BBQ SAUCE: SWEET AND SPICY
If I have the time to make homemade BBQ sauce, this is one of several recipes that I use when I grill or oven bake. This is super quick and easy to make. Hubby really loves this on my Recipe #516009, but it is just as good when used on poultry. If you like a sweet BBQ sauce with a bit of a spicy after taste, this could be the one you want (I actually prefer the more mustard based BBQ sauces, but this makes hubby happy). I'm hoping that you enjoy this recipe, and that maybe you will try one of my other BBQ sauces in the future. *Note: I've stopped "tinkering" around with this recipe because hubby said "It's great as is, leave it alone". (I considered maybe sweating some minced onion to add along with some garlic powder, but it is just so simple and tasty now that I would hate to mess it up. Besides, those flavors are not missed). Enjoy! (*Note added: It is an extremely thin sauce, but can probably be altered to make it thicker... maybe less water or longer simmer time).

- Combine all ingredients except red pepper flakes in a small size sauce pan. Whisk while heating over a medium-low flame. Once sugar is dissolved, add in red pepper flakes. Simmer 5 minutes, whisking often.
- Once everything is incorporated, and you've adjusted the taste to your liking, let cool completely and store in an air tight jar for up to 3 weeks in the refrigerator (that's the longest it ever lasted in our house, it may stay fresh longer). If not using right away, mix sauce well, before using. (Nicely fills a recycled and cleaned, 16oz olive jar for storing in the fridge).
- *Note: While the ingredients have time to meld together in the fridge, the flavor will change a bit. Keep this in mind while tasting during the preparation. A little bit hot will get hotter -- a little bit sweet will get sweeter.

SPICY AND SWEET STRAWBERRY BBQ SAUCE
strawberries, strawberries. What a wonderful thing to do with them. This is absolutely delicious! I found it several places online, so it isn't my own recipe. We used it with grilled chicken, but I see a future of experimenting going on at my house. What a delicious BBQ sauce!! I did add a lot more hot sauce then called for, and added a dab of chipolte hot sauce with it also. I found this on Razzledazzle, but the other place is probably the original creator. Evidently its a creation that Clark Kenny of Bubba's BBQ entered in a contest so I give him full credit with my highest appreciation.(servings are a guess, but it made around a pint, give or take.

CAM'S SWEET AND SPICY SPECIAL BBQ SAUCE
I've been making this BBQ sauce for years and I finally wrote down the recipe at my oldest instance. This sauce is thin, somewhat sweet with a little kick at the end. I use this to marinade our ribs as well as for basting, dipping etc.

Steps:
- in a medium sauce pan over medium heat mix butter, brown sugar and water. Bring to a boil stirring frequently. Boil to 250* not quite hard ball stage.
- reduce heat to a simmer and add tomato sauce. The sugar mixture may seize depending on the temperature of the tomato sauce. That's fine, just stir until the sugar mixture dissolves.
- add the rest of the ingredients and let simmer 10-20min stirring occasionally. Flavors will develop as it sits.
- If you want a thicker sauce cook the butter and sugar longer, but keep a close eye on it so it doesn't burn. It'll thicken up in the fridge.
- Refrigerate till ready to use, will keep several weeks in the fridge.
- I usually make large batches of this and can it.
- Serving size is 2 tbls and this makes approximately 2 pints. or 4 cups.

SWEET AND SPICY BBQ SAUCE
Recently purchased some barley malt for a dish and was delighted with its wonderful flavor. A great sweetner with a lovely smokey taste. Then went in search of other recipes using the malt and found this one on chanadet.com. I've tweaked it a bit for my owm taste.

- Sauté the onion in olive oil in a saucepan until soft, about 3-4 minutes on medium/low heat.
- Add the garlic and sauté 2 minutes more.
- Add the chopped tomatoes, tomato paste, tomato sauce, ketchup and stir well. Then add the Barley Malt, vinegar, Worcestershire sauce and dry mustard. Combine well.
- Simmer for 25 minutes on low heat, stirring occasionally until thickened. Let cool.

TA'S BBQ SAUCE (SWEET AND SPICY)
Well there are hundreds of different BBQ sauces out there, this is mine. I came up with it while I was playing around with making a sauce to go on some baby backs. Over time friends and family have enjoyed this sauce I hope you will too. With 4 different types of Peppers this BBQ Sauce is definitely spicy and a little sweet from the honey and molasses. - Place bacon fat in saucepan over medium high heat till hot, add onions and jalapeno, saute till onions are golden brown. Add Garlic and continue sauting till garlic is fragrant (30 seconds).
- Add Ketchup, vinegar, molasses, Worcestershire sauce, liquid smoke and honey, mix and bring to a simmer.
- Add remaining ingredients, stir to mix well, and simmer mixture, uncovered, for about 10-20 minutes to thicken sauce a bit. Sometimes I simmer mine in the crock pot for a couple hours to get a real thick BBQ sauce.
- Sauce should be thick enough to cling to ribs, yet pourable. Cool sauce and store in air-tight glass or plastic container.
- Store in the Refrigerator.
