BBQ Pork-Stuffed Corn Muffins image

This new American classic-part Chinese pork bun, part corn dog-looked good, tasted great, and felt oh-so-right in my hand. Not only did the warm muffin feel good, but also I was eating cornbread with barbecue pork and my fingers were absolutely spotless!

cooking spray
1 (8.5 ounce) package dry corn muffin mix (such as Jiffy®)
1 egg
⅓ cup milk
¼ cup shredded pepperjack cheese
1 cup pulled pork in barbeque sauce
¼ cup shredded pepperjack cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Line muffin tin with paper baking cups. Spray each cup with cooking spray.
  • Stir together muffin mix, egg, milk, and 1/4 cup of shredded cheese in a bowl until combined.
  • Fill muffin cups halfway with batter.
  • Add 1 to 2 tablespoons of pulled pork to each cup.
  • Top with remaining batter.
  • Use the remaining 1/4 of shredded cheese to top each muffin.
  • Bake in the preheated oven until a toothpick inserted into the batter comes out clean, about 20 minutes.

These meatloaf muffins--a cross between a meatball and a mini meatloaf--are easy to freeze in individual portions. Make a double batch now and freeze half for dinner next week.

2/3 cup milk
1/2 cup plain dry breadcrumbs
2 pounds meatloaf mix (ground beef, pork and veal)
1 1/4 cups shredded Cheddar (about 5 ounces)
1/2 cup barbecue sauce
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
4 small green onions, finely chopped (about 1/3 cup)
2 cloves garlic, minced
1 large egg
Serving suggestions: mashed potatoes and a green salad

Steps:

  • Preheat the oven to 375 degrees F. Pour the milk over the breadcrumbs in a large bowl and stir to combine. Add the meatloaf mix, 1 cup of the cheese, 1/4 cup of the barbecue sauce, the salt, pepper, green onions, garlic and egg and mix with your hands until just combined.
  • Divide and shape the mixture into 6 balls and arrange the balls in a 6-cup nonstick muffin pan. Place the muffin pan on a rimmed baking sheet and brush the remaining 1/4 cup barbecue sauce on top of the meat.
  • Bake for 40 minutes, rotating the pan halfway through cooking. Sprinkle with the remaining 1/4 cup cheese. Continue to bake until the meatloaf muffins are cooked through to an internal temperature of 165 degrees F, about 5 minutes more; the interior muffins may take a little longer to cook. Cool 5 minutes in the pan.
  • Arrange on a serving platter and serve with mashed potatoes and a green salad.

BBQ CHEDDAR MINI MEATLOAF "MUFFINS"



BBQ Cheddar Mini Meatloaf

I've always loved meatloaf- but never could find the right recipe. I especially hate all the fat left in the pan after a regular loaf is baked. This recipe is easy, absolutely delicious, and since you have 12 small "muffins" instead of 1 large loaf, there is not a lot of fat left in the bottom of the tin. If you don't want to stray from traditional meatloaf- go ahead and use ketchup instead- but I recommend trying the BBQ at least once- my family loves it! Also great for potlucks since everyone can have their own individual muffin!

1 lb ground beef
0.5 (3 ounce) package Stove Top stuffing mix (i use chicken)
1/2 cup water
1 egg
3/4 cup barbecue sauce (divided)
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees. Place all ingredients in gallon zip-loc bag (except 1/4 cup of cheese & BBQ sauce). Squeeze until just mixed. (This keeps the mess out of preparing meatloaf!) Spoon mixture into a 12 cup muffin tin and press down firmly with back of spoon. Top with remaining BBQ sauce and place in oven for 25-35 minutes. Sprinkle remaining cheese on each muffin and bake additional 5 minutes. Allow to cool 5 minutes before removing from tins.

1 2/3-1 3/4 lbs ground sirloin
1 medium onion, cut into chunks
2 stalks celery, from the heart of the stalk, cut into 2 inch pieces
1 green bell pepper
1 large egg, plus
1 teaspoon milk, beaten
1 cup plain breadcrumbs
2 tablespoons grill seasoning (recommend Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup salsa
1 tablespoon Worcestershire sauce
vegetable oil or extra virgin olive oil

Steps:

  • Preheat oven to 450 degrees F.
  • Put ground beef into a big bowl.
  • Put onion and celery into a food processor.
  • Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl.
  • Cut the pepper into a few pieces and add to the food processor.
  • Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl.
  • Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl.
  • Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce.
  • Pour half the sauce mixture into the bowl with the meatloaf mix.
  • Mix the meatloaf together with your hands.
  • Wash up.
  • Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil.
  • Use an ice cream scoop to help you fill meat into a each tin.
  • Top each meat loaf with a spoonful of extra sauce.
  • Bake about 20 minutes.
  • Cut open 1 muffin to test that the middle is cooked through.

1 package refrigerated buttermilk biscuit
1 lb ground beef
1/2 cup ketchup
3 tablespoons brown sugar
1 tablespoon cider vinegar
1/2 teaspoon chili powder (I add a little more for flavoring)
1 cup shredded cheddar cheese

Steps:

  • Separate dough bisquits.
  • Flatten into 5in.
  • circles.
  • Press each into the bottom and up the sides of a greased muffin cup, set aside.
  • In a skillet, brown ground beef; drain.
  • In a small bowl mix ketchup, brown sugar, vinegar and chili powder.
  • Stir until smooth.
  • Add to meat and mix well.
  • Divide the meat mixture among bisquit lined muffin cups using about 1/4 cup for each.
  • Sprinkle with cheese.
  • Bake at 375* for 18-20 minutes or until golden brown.
  • Cool for 5 minutes before removing from pan and serving.

1 can(s) 10 count refrigerated biscuits( i have tried several and found grands jr's work the best)
1 lb ground beef
1/2 c ketchup
3 Tbsp brown sugar, firmly packed
1 Tbsp apple cider vinegar
1/2 tsp chili powder
1 c shredded cheddar

Steps:

  • 1. Preheat oven to 375. Separate biscuits and flatten into 5 inch circles. Press into greased muffin tin. Set aside.
  • 2. In a skillet, brown ground beef;drain. In a small bowl, mix ketchup, brown sugar, cider vinegar, and chili powder until smooth. Add to meat and mix well.
  • 3. Divide meat among biscuit cups using about a 1/4 cup each.( Tip: I use an ice cream scoop for easy filling.) Bake for 15 minutes. Remove from oven;sprinkle with cheese and bake 3-5 minutes longer until golden brown and cheese is melted.
  • 4. Cool in pan 5 minutes before removing. Enjoy!

2 green onions, sliced
1-1/4 cups shredded rotisserie chicken
1/2 cup KRAFT Original Barbecue Sauce

Steps:

  • Heat oven to 400ºF.
  • Mix egg and sour cream in medium bowl until blended. Add muffin mix, cheese and onions; mix just until blended.
  • Spoon into 20 mini muffin pan cups sprayed with cooking spray.
  • Bake 10 to 12 min. or until toothpick inserted in centers comes out clean. Cool 5 min. Remove muffins from pans to wire racks; cool completely.
  • Use paring knife to cut into tops of muffins to scoop out centers; discard removed centers or reserve for another use. (See tip.)
  • Toss chicken with barbecue sauce in microwaveable bowl. Microwave on HIGH 1 to 2 min. or until heated through; stir. Spoon into muffins.

1 cup bread crumbs
1/2 cup salsa
1 cup BBQ sauce
2 tbsp grill seasoning

  • 1. Preheat oven to 450 degrees. Boil water for potatoes. 2. In food processor, chop celery, peppers and onion. Combine with beef in bowl. 3. In small bowl, whisk 1 egg with splash of milk and add to meat. Add bread crumbs and grill seasoning. 4. In separate bowl, combine salsa, BBQ sauce and Worcestershire sauce. Pour half onto meat. 5. Scoop meat into muffin tins. 6. Brush remaining sauce over muffins and bake in oven 18-20 minutes.

1/2 cup(s) shredded cheddar cheese
2 package(s) jiffy corn muffin mix

Steps:

  • I made sloppy joes for my family for dinner. I took 2 cups (if needed) of the mix. In a muffin pan, place muffin papers in them and put a tablespoon of corn muffin mix (prepared) in the cup. Put a tablespoon of sloppy joe and a pinch of cheddar cheese. Cover it with another tablespoon of corn muffin mix. Bake at 350 or the corn muffin mix directions till done. Let cool a little before eating, they will be very hot from the sloppy joe!!! Enjoy!!!
