Right after I got married, an aunt gave me her recipe for skillet spaghetti and told me it was ideal for a quick weeknight meal. Over the years I've tinkered with the ingredients and played with the seasonings to make it a healthier dish that my family truly loves. -Kristen Killian, Depew, New York

1 pound lean ground beef (90% lean)
2 tablespoons dried minced onion
2 teaspoons dried oregano
2 teaspoons chili powder
1/2 teaspoon garlic powder
1/8 teaspoon salt
3 cups tomato juice
2 cups water
1 can (6 ounces) tomato paste
1 teaspoon sugar
8 ounces uncooked whole wheat small pasta shell- or spiral-shaped pasta
Chopped tomato and sliced jalapeno pepper, optional

Steps:

  • In a Dutch oven, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in seasonings., Add tomato juice, water, tomato paste and sugar to pan; bring to a boil. Stir in pasta. Reduce heat; simmer, covered, 20-22 minutes or until pasta is tender, stirring occasionally. If desired, top with chopped tomato and jalapeno slices.

This One Pot BBQ Chicken Chili Mac is the perfect meal in one! It's loaded with protein, fiber, veggies and made in one skillet in 30 minutes! An easy, healthy weeknight meal.

1 teaspoon canola oil
3 small boneless skinless chicken breasts (cut into 1/2" pieces)
1/2 teaspoon seasoning salt
1 red pepper (diced)
1/2 small onion (diced)
1 cup finely chopped fresh spinach
540 ml can black or kidney beans, drained and rinsed (19oz )
1 teaspoon minced garlic
1 tbsp chili powder
28 oz canned diced tomatoes with juice
1/2 cup barbecue sauce
2 cups chicken broth
1/2 teaspoon salt
2 1/2 cups dry macaroni (I used high fiber white)
2 cups shredded cheddar cheese

Steps:

  • In a large skillet over high heat, cook chicken breasts in canola oil until browned, about 2-3 minutes. Sprinkle with seasoning salt.
  • Meanwhile, chop your red pepper, onion and spinach and add to the pan. Cook over high heat, stirring often, until softened, about 3-4 minutes.
  • Add beans, garlic and chili powder and cook 1 minute.
  • Add tomatoes, barbecue sauce, broth, salt and macaroni and bring to a boil over high heat. Reduce heat to medium and cook until pasta is al dente and liquid is mostly absorbed, about 9-10 minutes, stirring often. Stir in cheese (will continue to thicken as it sits and the cheese melts). Serve.

1 pound fusilli pasta
2 tablespoons apple cider vinegar
1 teaspoon hot sauce
1/2 teaspoon chili powder
1/8 teaspoon garlic powder
Pinch cayenne pepper
1 cup mayonnaise
1/2 cup Neely's BBQ Sauce, recipe follows
1 red bell pepper, seeded and chopped fine
2 ribs celery, chopped fine
2 whole scallions, sliced thin
8 ounces pulled pork
Kosher salt and freshly ground black pepper
Chopped parsley leaves, for garnish
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • Bring 4 quarts water to boil, in large pot, over high heat. Salt the water, add the pasta and cook until tender, about 10 minutes. Drain in a colander and allow to cool, then transfer to large bowl.
  • In another large bowl, mix together vinegar, hot sauce, chili powder, garlic powder, cayenne pepper, mayonnaise and BBQ sauce. Add chopped vegetables and toss to coat. Pour BBQ dressing over pasta and mix well. Place the pork on top and season with salt and pepper, to taste. Cover and refrigerate until ready to serve, then garnish with parsley.
  • In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
