BBQ Chicken Loaded Fries are easy to make and topped with melted cheese, sour cream, bacon, and drizzled with barbecue sauce. They make the perfect appetizer, mid-night snack, or treat to enjoy while watching your favorite game.

1 package McCain® Seasoned Waffle Fries
1 cup shredded chicken
1/2 cup shredded cheese
1/4 cup real bacon bits or crispy bacon pieces
sour cream (for topping)
green onion, sliced thin (for topping)
3 tablespoons barbecue sauce
Ranch dressing (for dipping)

Steps:

  • Place the frozen fries on a half sheet pan. Bake the fries in the preheated 425 degree F oven for 25-30 minutes, or until crisp. Turn the fries half way through with a metal spatula.
  • Remove the cooked fries from the oven and place in a 6-inch cast iron skillet
  • Top with shredded chicken and drizzle with barbecue sauce. Top with shredded cheese. Place the skillet in the oven and cook for 15 minutes, or until the cheese is melted.
  • Remove from the oven and top with real bacon bits, sour cream, and thin sliced green onions. Or any other toppings you desire. Serve with Ranch dressing (if desired) for dipping. Enjoy immediately.

6 cups peanut oil, for frying
4 russet potatoes, washed and dried
fine salt

Steps:

  • Attach a deep-frying thermometer to the side of large heavy-bottomed pot or dutch oven, heat 2-inches of oil, over medium-high, to 320 degree F.
  • Fill a large bowl with cold water. While oil heats, cut potatoes. Using a mandoline fitted with the "waffle" or "crinkle" attachment slice each potato 1/2 inch thick; rotating the potato 90 degrees after each slice to form the waffle pattern. Place slices in water as they're cut. Rinse potato slices with cold water to remove excess starch. Use paper towels dry potatoes thoroughly. Line two baking sheets with dry paper towels. Working in batches, fry potatoes until they are still pale in color and beginning to soften, about 5 minutes a batch, transfer fried potatoes to towel-lined baking sheets.
  • Over high, heat oil up to 375 degree F Working in batches, Re-fry potatoes until they are crisp and golden brown, about 2 to 3 minutes. Transfer to towel-lined baking sheets, season with salt. Serve hot.

4 cups frozen waffle-cut fries
1/2 to 1-1/2 teaspoons steak seasoning
1 cup shredded cheddar cheese
2 tablespoons chopped green onions
2 tablespoons real bacon bits

Steps:

  • Arrange waffle fries in a greased 15x10x1-in. baking pan. Bake at 450° for 20-25 minutes or until lightly browned. , Sprinkle with steak seasoning; toss to combine. Top with remaining ingredients. Bake 2-3 minutes longer or until cheese is melted.
