BAKED BBQ CHICKEN TENDERS
These chicken tenders have a barbecue base but are elevated with a decidedly Asian influence. I use Savory Spice® Asian Delight BBQ Rub, which is different from Chinese five-spice.

- Preheat the oven to 375 degrees F (190 degrees C). Spray an 8x8-inch casserole dish with cooking spray.
- Combine barbeque sauce, barbeque seasoning, and caramel sauce in a shallow dish. Reserve 2 tablespoons of the mixture.
- Dip each chicken tender into the barbeque sauce mixture and coat thoroughly. Place in the prepared casserole dish.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 25 minutes. Baste with reserved sauce and continue baking for 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- 1. Optional: Brine the chicken breasts for about three hours.
- 2. MAKING THE BBQ SAUCE
- 3. Chef's Note: When I talk about using ketchup in this recipe, I would really hope you choose a homemade variety. Otherwise you are making a condiment out of a condiment. - 4. Chef's Note: If you are not making the BBQ sauce, then skip down to step 11.
- 5. Gather all your ingredients
- 6. Rough chop the onion.
- 7. Heat the olive oil in a saucepan, add the onions, and cook over medium heat until softened, about 8 to 10 minutes.
- 8. Add the ketchup, vinegar, Worcestershire, and sugar, to the onions, and allow the mixture to simmer, covered, over low heat for about 30 minutes.
- 9. Remove from saucepan and place into a food processor fitted with an S-blade, or a blender.
- 10. Blend until smooth, return to saucepan, and keep warm.
- 11. MAKING THE CHICKEN TENDERS
- 12. Slice the chicken breasts into 1-inch planks.
- 13. Chef's Note: After slicing, if some of the planks are too long... cut them in half.
- 14. Coat the chicken planks with the flour, and allow them to rest for 5 minutes.
- 15. While the chicken is resting, beat the eggs and place them in a shallow pan.
- 16. Combine the breadcrumbs, sesame seeds, five-spice powder, salt, cumin, pepper, and parsley and place in a shallow pan.
- 17. Dreg one of the floured chicken planks in the egg mixture.
- 18. Place in the breadcrumbs and thoroughly coat.
- 19. Place on a wire rack, or parchment-lined baking sheet, and repeat until all the planks (tenders) are ready, and allow to rest while the oven is preheating.
- 20. Place a rack in the middle position, and preheat the oven to 450f (230c).
- 21. Place the tenders into the oven, and bake for about 15 minutes, or until they begin to turn golden brown.
- 22. Slice and serve up with the BBQ sauce, or your own favorite sauce. Enjoy.
- 23. Keep the faith, and keep cooking.
OVEN-FRIED CHICKEN TENDERS WITH FIVE-SPICE BBQ SAUCE
Tender and oven-fried, these chicken tenders are jazzed up with sesame seeds and Chinese five-spice powder, an indispensable blend of seasonings that showcases the five basic flavors of Chinese cuisine - sweet, sour, bitter, savory, and salty.

- Preheat oven to 475 degrees F. In 10-inch skillet, toast bread crumbs and sesame seeds over high heat about 5 minutes or until golden, stirring frequently. Transfer crumb mixture to plate.
- In medium bowl, with wire whisk or fork, mix egg white, 1/2 teaspoon five-spice powder, and salt until foamy. Dip tenders in egg-white mixture, then in crumb mixture to coat. - Place pork rinds in a food processor and pulse to the size of bread crumbs. Place in a shallow bowl. Mix flour and barbecue seasoning together in a shallow dish. Beat egg in a third shallow bowl.
- Coat each chicken tender first in the flour mixture, then dip in beaten egg, and finally coat in pork rind crumbs.

- 1. Preheat oven to 350 degrees. Cover baking sheet with non-stick foil and set aside. 2. Place chicken tenders in a 1 gallon large food-safe plastic bag. Using a meat mallet, the back of a small iron skillet or rolling pin, pound chicken slightly. 3. In a shallow bowl, combine barbecue sauce, chili powder and cumin. Mix well. 4. Now you can do the next step two ways. One way is to start dipping both sides of the chicken in the sauce, then dip one side into the peanuts and place on baking sheet. Or you can pour the sauce in the bag with the chicken and let the chicken marinate in the refrigerator for 1 hour. - 1.Combine barbecue sauce, mustard and honey in a large bowl. Set aside 1/2 cup of the sauce in a small bowl. Cut any large chicken tenders in half lengthwise, then add all the tenders to the large bowl with the remaining sauce; stir to coat. Marinate in the refrigerator for 30 minutes to 1 hour.
